Covering 32,000 square feet, this glistening example of “ice engineering” is just too much fun to pass up. If you’re feeling adventurous, make a reservation and spend the night, all of the rooms are themed differently with unique ice carvings in each room. The hotel will provide you with arctic-style sleeping bags designed to keep you warm well below zero. If perhaps you would like a libation, there is a bar that serves signature drinks. I sampled a Hotel De Glace cocktail that consisted of vodka and ice cider served in a shot glass carved from ice. After dark, the hotel comes to life with beautiful colored lighting that really highlights the structure. For a bit more fun for you adrenaline junkies, you will find a climbing wall made of ice, the gauntlet is now thrown down.     One of Norway’s most iconic images is of a traveler dangling his legs over a cliff, a glistening fjord below his boots. Preikestolen, known in English as Pulpit Rock, is that cliff, and it can be reached only by a two-hour hike from the nearest car park. That doesn’t stop thousands of people from undertaking the journey from April to October, however. If you decide to join them, bring sturdy shoes, plenty of snacks and water, and warm clothing no matter what the weather. For a less strenuous day, take a ferry from Lysefjord to Stavanger—you’ll get to see the cliff from below and taste the water from the Hengjande waterfall.

    First opened in 1893 as Grunewald Hotel, this historic building stretches an entire city block and has a storied past that’s equally expansive. The Roosevelt has played host to presidents and senators, duchesses and dignitaries, actors and actresses. Huey Long kept a suite here in the 1930s and could often be found propped up at the Sazerac Bar (where his go-to cocktail was the Ramos Gin Fizz).     A $145 million rehab, completed in 2009, restored the hotel to its former glory. Now part of the Waldorf Astoria Collection, the property combines the grandeur of yesteryear with all the trappings of a modern luxury hotel—including a lavish Waldorf Astoria Spa and a hip Italian eatery.

    Stephanie Izard puts together a great restaurant. The Girl and the Goat has been hard to get into since it opened and Little Goat had a 90 minute wait when we went last month. 90 minutes for diner food! That’s impressive. Other things that were impressive? The Fat Elvis Waffles with crunchy bacon bits, sliced bananas and peanut butter sauce. Big enough for 2 people, but who wants to give up any of that deliciousness?? Little Goat is worth a visit but let the newness wear off a bit before you go.

    Stepping into the enormous main concourse of this landmarked architectural jewel—with its sweeping granite staircases, hulking columns and 38-meter (125-foot) ceilings painted with night-sky constellations—can be a jaw-dropping experience. What’s even more incredible, though, is the sheer number of people who use it as a commuter hub day in and day out (more than 750,000 train and subway passengers every weekday). Wander around the shops, head down to the basement food court for a bite and to marvel at the crowds hurrying by—and if you get jostled, don’t take it personally.

    Uluru, or Ayer’s Rock as many know it, is one of the most recognized landmarks anywhere in the world. This strange giant rock in the middle of the Australian Outback has long kindled imaginations, going back millennia. It may be an important tourist site today, but it also holds immense cultural value for the original inhabitants of the area, something I learned all about on the very unique Anangu Tour of Uluru.
    In the Pitjantjatjara language, anangu means person or human being, and the tours are designed to teach newcomers about the native peoples. The tours are given in the Pitjantjatjara language, with interpreters translating for the guides. It’s not that the guide didn’t know English, he certainly did, it’s that they want visitors to hear the nuances of a language most of us have never before encountered.
    The walk around the rock was an enlightening experience, learning all about traditional culture and the extreme importance Uluru holds in the Tjukurpa or Dream Time. Tjukurpa is Aboriginal law, culture, history, and their worldview all bundled into one. It is expansive, impossibly ancient and much of it is shrouded in mystery, transmitted only to certain people at particular times in their lives. To be a part of that was a humbling experience.

    This beach is remote, but worth the trip—especially at low tide when the tide pools are full of sea stars, sea urchins, and green anemones. It’s about a mile on foot from the Coastal Trail trailhead, past Nickel Creek campground, to the sandy and empty beach. Where you go from there or how long you spend walking around the tide pools is up to you. Winter landslides can temporarily close trail access to the Nickel Creek campsite and to the beach from the campsite. The park’s visitor center has the most updated information as well as tide schedules. There are also occasional ranger-led tide-pool walks.

    Tucked away on an eight-acre estate at the top of St. Helena’s main street, Harvest Inn could easily be mistaken for a private country manse somewhere in England, or even northern France. Its lush gardens are traversed by winding pathways, and its brick-accented, Tudor-inspired architecture suggests somewhere far more Old World than upstart Napa. Even its sinuous pools and cozy rooms (many with fireplaces and private outdoor hot tubs, mind you) are reminiscent of a style somewhat less rustic-chic than tends to be in vogue here in wine country. Indeed, by Napa Valley standards, the intimate inn is part of the old guard, its original 25 rooms dating back to 1975, just after the famed Judgment of Paris tasting brought the region’s New World wines into the international spotlight.

    But the Harvest Inn is no less luxurious than the new resorts popping up all over Napa Valley. It has one of the most desirable locations in one of the most desirable parts of the world, surrounded by celebrated vineyards and presiding over arguably the most picturesque town in wine country. It also features a popular restaurant, Harvest Table, which serves dishes full of ingredients from the hotel’s on-site vegetable and herb garden.

    Sun Moon Lake is Taiwan‘s largest fresh water lake. When I lived in Nantou County, central Taiwan, I would often ride my scooter to Sun Moon Lake for a bit of fresh air and reflection. One day I drove to the lake and traveled up a hill to the Ci-en Pagoda. Parking my bike, I climbed to the top of the pagoda and gazed out at the misty lake, which seemed magical in that moment. Many legends surround Sun Moon Lake, including the one which says the lake was once inhabited by two dragons. These dragons used the sun and moon as toys, causing the world to fall into darkness. Eventually a young couple came and defeated the dragons, brining light back into the world. Sun Moon Lake is one of the most peaceful places I’ve ever visited.

    After years at Ladera’s Dasheene Restaurant, where he won awards and was recognized as a leader of the island’s sustainable food movement, chef Orlando Satchell opened his own smaller restaurant on the coast. Presentation and flavor inform Satchell’s culinary creations, including his versions of island pepper pot and creole kingfish. Innovative salads like saltfish with christophene and papaya provide lighter options. Dinners are fixed four- to five-course menus, and lunches are available as well. Orlando’s is a welcome addition to the ever-evolving St. Lucian gourmet dining scene.

    Château de Montaigne is worth a detour, especially if you need a little break from the wine tastings, that Bordeaux is so known for. The 14th century castle is nestled deep in the countryside near Bergerac and Saint-Émilion and was once the residence of Michel de Montaigne, one of France’s most important, early philosophers. If you haven’t heard of him, he is the one you may (or may not) thank for making essays popular as a literary genre.

    One of Guadeloupe’s top rhum distilleries is set on beautiful former sugar cane plantation grounds in Basse-Terre. There’s a trolley tour through the grounds that also provides information about Guadeloupe’s rhum and history. Take a walk through the Domaine de Séverin grounds afterwards and see the sugar cane processing if you are there during the February to June harvest season. A half-hour of free tastings of the multiple flavored rhums is, of course, a high point. Shop in the store for your favorites before you leave.
