    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.
  • There aren’t too many opportunities in the Caribbean to ride on horseback to a cave. In Los Haitises National Park, located three hours west of the resorts of Punta Cana, Fun Fun (pronounced “Foon Foon”) Cave is officially known as the largest cave in the Caribbean. Though the cave itself is in the National Park, access to the land goes across a private ranch and requires a guided tour. While the nearly three-hour drive from the resorts of Punta Cana is a lengthy, bumpy, journey into the interior, the scenes from the window provide an authentic glimpse into rural Dominican life. Sugar cane sways, schoolchildren wave, and mangoes drip from the trees. Upon reaching the ranch where you begin the tour you are shimmied into a jumpsuit and saddled onto your horse. A 45-minute ride through the shaded forest brings you to the edge of the National Park. From here it’s another 30 minute walk through sun-swallowing trees until you reach the entrance of Fun Fun Cave. Sliding into a harness and climbing gear, entering the cave requires a 50 ft. repel into a tiny hole which can barely fit your shoulders. Once at the bottom, it’s a one hour slog through the depths of the darkness before reaching the other exit. Inside the cave, stalactites and stalagmites pepper the areas which fall in the beam of your flashlight, and at some areas you are forced to swim through the soothing, subterranean waters. Here, a lone rope helps guide visitors through the hidden recesses of the cave.

    World-famous pastry chef Sal De Riso is from the small Amalfi Coast town of Minori, which makes a stop in the quiet village for something sweet a great idea. His flagship pastry shop, across from the seaside promenade, was recently renovated and expanded to include a bistro and pizzeria. Glass display cases are filled with classic offering such as torta ricotta e pere and sfogliatelle. Don’t miss the baba au rhum–flavored gelato. A jar of Cilento figs preserved with walnuts and wild fennel would make a sweet remembrance of your trip.

    For a satisfying mid-afternoon snack, seek out one of the city’s ubiquitous walk-up counters. Nni Franco U’ Vastiddaru is typical, serving classic street food like arancini (stuffed rice balls) and panelle. The latter is a Palermo specialty: These chunky, chiplike fritters made of chickpea flour are simple yet addictively delicious, with a spritz of Sicilian lemon.

Not all of it will make it through customs, but you can savor any perishables on a picnic to the Tuscan countryside.

    If you are based in Florence and want to escape the city for a day of wine tasting and good food, Castello di Sonnino, home of the aristocratic Barone de Renzis Sonnino family, is only a twenty-minute drive away, and you can get there on the public bus. The oldest part of this fairytale castle and its rambling outbuildings dates from the 1200s, but it has been added to over the centuries. Part of the Chianti-Montespertoli DOCG, 48 hectares are planted with vines and the wines have won many awards including a gold medal from Decanter magazine for the 2015 Vin Santo. A visit here can include a tour of the cellars, a tasting of the superb wines and lunch in the restaurant: you may even meet Caterina, the present Baroness. And if was you are too tired to make the journey back to Florence, there are several apartments for rent on the property.

    Netta Bottone, the force behind this rustic eatery, is everyone’s favorite Italian nonna. The cuisine at Cumpa’ Cosimo—enjoyed by celebrities from Gore Vidal to Mariah Carey, as well as locals and travelers—is straightforward and made with heart (and fresh ingredients). The day’s selections will be rattled off to you in place of a written menu and likely will include fresh soups, pasta, and grilled fish. An enormous platter of several different pastas, perfect for sharing, is a perennial favorite. The pizza oven turns out pies with both traditional and special toppings, such as shavings of white truffles.

    You can smell the enticing aroma from this shop as you leave La Piazzetta to walk down Capri’s main drag. This historic gelateria and pastry shop makes its own crisp sugar cones to serve ice cream to the crowds throughout the day and late into the night. Come here after your evening passeggiata for a gelato. If you can’t make a decision, don’t fret: You can order up to three flavors in one cone. Wonderful pastries and ready-made meals are available here, too. (There is another location down at the Marina Grande.)

    The Grand Hotel Tremezzo has been the summer home for Europe’s jet set since opening in 1910. Over the past five years, the Como-based De Santis family, which has owned the lakefront hotel since 1975, has ushered the grande dame into the modern era by building eight rooftop suites, expanding the spa, and adding a hammam. Marble bathrooms and champagne-stocked minibars make the rooms feel fit for aristocrats, but the hotel is far from buttoned up.     You can’t miss the Stawamus Chief Mountain when you travel to Whistler via the Sea to Sky Highway. The granite edifice, the tallest monolith north of Yosemite, provides a fine introduction to how stone shapes and defines this landscape. Fathom Stone Art is a gallery dedicated to artists’ work in the local granite as well as marble, jade, quartz, and many other minerals. The grizzlies on display here, carved by founding sculptor Jon Geoffrey Fathom, are particularly popular. Examples of iconic inuksuit, the tall stone markers used by peoples of the Arctic region, are displayed alongside contemporary sculptures from leading stone artists across the region. Many of these sculptors began their careers as Fathom apprentices. You can, too, by signing up for a soapstone art carving class.

    Da Gemma manages to meld fine dining with a relaxed atmosphere, making use of crisp white-linen tablecloths, artfully plated dishes, and a friendly, warm staff. The restaurant, one of Amalfi’s oldest outposts, has innovated without losing touch of the traditions that are fiercely held in this part of Italy. Seafood is the star of the menu, featured in appetizers, pastas, and entrées. Don’t miss the kitchen’s modern version of insalata caprese, with not just vine-fresh tomatoes but fried and liquefied ones, too. The impressive wine cellar holds a range of bottles from mostly Italian regions and vintages.

    Pizza is always a good idea. And pizza fresh from a wood-fired oven served at a table as close to the sea without actually being in the water is an even better idea. Downstairs at the Hotel Covo dei Saraceni, this casual brasserie serves inexpensive pizzas for lunch and dinner. The chewy Neapolitan-style crust is slathered with San Marzano–tomato sauce and fresh, creamy mozzarella, decorated with a basil leaf or two. The simplicity is delicious. You can also order your pies for takeout.

    Hotel de Russie’s fabulous courtyard bar is the place to live Rome‘s 21st-century dolce vita. The hotel itself is the preferred address for VIPs and celebrities, so it makes sense that the garden bar is a posh and private Eden. At any time of year, the city’s best-dressed hold court at the outdoor tables, while a seat at the indoor bar is akin to winning the Iron Throne. It’s important to note that, since the Stravinskij Bar single-handedly resurrected Rome’s cocktail scene, drinks will cost you royally. Try the signature martini, The Gibson.
