    Opened in 2003, Carlisle Bay is set on a lush, isolated section of Antigua’s south coast and has a 21st-century design that feels more contemporary than Caribbean. With muted shades of grays, whites, and greens, the hotel projects an uncluttered, understated luxury. Its most remarked-on feature, though, is the way it appeals to both couples and families by keeping the two separate. Each group has its own cluster of rooms at its own end of the beach, and never the twain have to meet, except perhaps for lunch at Ottimo, the poolside Italian restaurant. The crescent of beach is tucked into a sheltered bay, so the waves seldom do more than whisper up onto the white sand, against a backdrop of forested hills. It’s all very restful, but the long list of free non-motorized watersports and the extensive kids’ club ensures everyone has plenty to do.

    I hadn’t been awake for longer than a minute. I peeled back the tarp door to my room, walked out onto my deck, and leapt. It was an abrupt but purifying way to start the day. The cool, brackish water instantly defogged my mind, and my eyes opened to see the surrounding Tatai River and dense Cambodian rain forest. A lone sampan, anchored along an islet, was the only man-made object to interrupt the natural scenery. My chic bungalow lightly swayed on the calm water behind me, an incongruous encampment against the wild jungle backdrop.

    Located on the southern tip of the Cardamom Mountains, near the Gulf of Thailand, the 4 Rivers Floating Lodge lives up to its name. The retreat’s 12 landless suites all float on their own buoyant platforms, moored to the riverbank. Outfitted with a ceiling fan, armoire, and wood-paneled shower, each of the towering, safari-style tented rooms also provides a nearly 360-degree view of the tropical landscape. A boardwalk connects the rooms to a central lounge and dining area decorated in a muted variety of Miami Beach sleek.

    At first blush, getting to this secluded outpost might seem daunting. Guests can arrive by boat, drive, come by cab or take a bus from Phnom Penh: I took a five-hour bus trip from Phnom Penh, followed by a half-hour longboat ride from the village of Tatai. But the journey is well worth the peaceful reward. The Cardamom Mountains contain the largest and most intact evergreen rain forest in mainland Southeast Asia. For decades, the region was largely off-limits to developers because of land mines and fighting between government forces and the Khmer Rouge militia. This very isolation protected the area’s natural habitat, which is now home to scores of endangered species, including Asian elephants, hairy-nosed otters, and Siamese crocodiles.

    Mine-clearance efforts and the end of hostilities have made travel here safe for more than 10 years, but it remains a sparsely populated frontier. The area’s remoteness is remarkable in and of itself. In the afternoon, I took a boat ride to the Tatai waterfall with several other guests. Even our skipper, a young Cambodian man who leads visitors on these trips every day, was still in awe of the lush surroundings. “So quiet and beautiful,” he said, looking at the palm trees along the river’s edge. After we arrived at our destination, I spent the rest of the day sitting beneath the waterfall’s forceful but soothing cascades, letting nature’s masseuse relax my muscles.

    I returned to the lodge for dinner beneath an orange and purple sunset. On the restaurant’s uncovered patio, the only sound accompanying the clang of my utensils was the soft splash of kingfishers swooping to pluck fish from the river. I was less delicate, digging into skewers of mozzarella, watermelon, and fresh shrimp and a plate of steamed river fish topped with a basil cream sauce. In the lingering twilight, I sipped a gin and tonic on my private terrace before easing under my bedsheets. As the gently undulating waters rocked me to sleep, any illusions I had about roughing it in the wilderness drifted away. —Brendan Brady

    Caneel Bay, one of the island’s more secluded and protected bays, is home to Caneel Bay Resort, a historic luxury hotel founded by Laurance Rockefeller. After opening the resort in 1956, Rockefeller donated the land on which it lies to become the Virgin Islands National Park, which covers about 60 percent of the island. Day-trippers can easily reach Caneel Bay by taxi from Cruz Bay. The resort has no fewer than seven beaches, including Honeymoon Beach, a short hike away. Come here to relax on the main beach, book water sports at the diving and snorkeling center and have lunch at the hotel restaurant.

Built by Charles Garnier (famous for his Paris Opéra design) in collaboration with Gustave Eiffel (yes, that Eiffel), the monument has inspired film location scouts and is popular with local couples who come to take in the stunning view of the city together. The observatory is still an active science laboratory focusing on astronomy, astrophysics, and geoscience. The original 18-meter-long lens is responsible for finding 2,000 previously unrecorded double stars. There are two-hour guided tours on Wednesdays and Saturdays year-round, with a more frequent schedule during school holidays.

    What started as an outback resort known as Wrotham Park Station in far north Queensland was bought by Indigenous Business Australia, dismantled, and loaded on 18 triple road trains (each roughly the length of three semi trucks) for the journey 1,740 miles across rain forest and desert to the Northern Territory’s Mary River Wetlands, about an hour and a half from Darwin, adjacent to Kakadu National Park. Safari tents from Kenya were added to the modern “Habitats” and restaurant and bar to complete the immersive Australian wilderness retreat. Like the world’s best safari camps, Wildman Wilderness Lodge has a spacious wooden deck with an infinity pool and daybed-style lounge chairs that encircle a fire pit. This is the place to watch the sun set and look for the area’s wallabies, dingoes, water buffalo, wild pigs, native birds, and two resident saltwater crocodiles known as Big Arse and Fat Arse.

    The Mary River Wetlands are known for having the highest concentration of saltwater crocodiles in the world, and the lily-studded floodplains are prime habitat for barramundi, which the restaurant often cooks for dinner. Open March through November, the lodge treads lightly on the landscape and is culturally connected to the native Limilngan, Unwynmil, and Wulna people, who have lived in the area for thousands of years.

    Set on 12 lush, cloud-forested acres next to the Urumbamba River, this eco-resort (a member of the National Geographic Unique Lodges of the World) is practically a destination in and of itself. Here, 83 rustic-but-chic, whitewashed adobe casitas are tucked among a sanctuary of terraced hills, stone paths, and waterfalls that are home to 214 bird species and, at 372 cataloged varieties, the largest collection of native orchids in the world. Guests are encouraged to hike around the grounds (the hotel can also arrange for excursions farther afield), visit the resort’s Ecocenter, or relax in a naturally heated spring-water pool while listening to birdsong.

    The superior casitas are the simplest accommodations, but still come with plush robes, hand-crafted Andean slippers, and a separate dining area. Superior deluxe rooms feature fireplaces, while suites offer terraces with garden views. The most lavish option, the Villa Inkaterra includes an open-air shower, plunge pool, and 24-hour butler service. When not luxuriating in your room, visit the glass-walled restaurant, which has stunning views of the river, or head into Agua Calientes, which is just a few minutes away and offers several other dining options.

    Andalucia, Spain, is located in the southern Iberian peninsula. The vast area consists of eight provinces. Among them are Cadiz, Cordoba, Granada, and Seville. I sampled the hams, paellas, wines, and olive oils and enjoyed the tastes and smells of the Andalucian menus. The region is rich in culture and history. The flamenco and bullfights are favorite attractions here. Much of the Moorish-influenced architecture dates to the days of Muslim rule. Muslims ruled Andalucia from 711 when Tariq, an Islamic Berber, conquered the area and called it Al-Andalus. He established it as the Islamic Empire. Al-Andalus was a huge cultural center of vast beauty. In 1492, the fall of Granada put an end to Muslim rule when King Ferdinand and Queen Isabella expelled the Muslims from Spain. Andalucia was born and it has been Spanish ever since. Driving through the countryside, I saw beauty around every curve in the road like the rows of olive and oak trees, and fields of grain. I laughed when I saw the huge Osborne Sherry Company’s black bull on the hilltops. These large boards were erected all over Spain to advertise their Brandy de Jerez. I found them charming and so very Spanish. I saw this region of Spain as vast and very beautiful with its mountains, dry plains, and lush forest areas. So many different types of landscapes within the region. I recommend a good guidebook and an up-to-date Michelin map. When renting a car, do so in the States when you book your trip. Happy traveling!
  • Guavate, a section of Cayey better known as the Ruta del Lechon (“Pork Highway”), bursts into a rush of food-infused ecstasy every Friday and Saturday. People from all parts of the island come to watch someone roast a whole pig over the open fire before chopping it with a machete. Side dishes abound. I recommend sorrullos (corn sticks), bacalaitos (cod fritters), alcapurrias (fritters made of plantain dough and stuffed with meat), and rice with different types of beans. The blood sausage is not for me, but my father and boyfriend devour it every chance they get. Here in the mountains, shacks of all sizes let you pick your poison—beer, piña colada, or mojito (made from lime, mint leaves, rum, and sugar)—and drink to the beat of salsa and reggateon music. This creates the euphoric atmosphere for which Puerto Ricans are so famous. The cherry on top of the piña colada: Guavate lets you absorb the laughter, music, and food for a reasonable price. If you want the pig, but not the rambunctiousness, take your food to El Yunque National Forest and eat it by a waterfall (see my “Swimming Under a Hidden Waterfall” highlight). To find it, get on Luis A. Ferre Expressway, take the exit toward PR-184, and follow the signs for Guavate. You’ll start seeing pork soon after you take PR-184, but wait about fifteen minutes (until you’re around km 27) before you stop to get all the real action.
  • Flagstaff, AZ, AZ, USA
    As Phoenix heats up, many locals are desperate to escape the desert’s barren landscape and head north to Sedona. Only a two-hour drive from the city, on average, Sedona sees about 60% local valley traffic over the weekends. Route 89A, leading up to Flagstaff, provides many opportunities to veer off course and wander the many trailheads in Sedona. One particular trail is the West Fork Oak Creek Trail. Temperatures are at least 20 degrees cooler here and provides relief from the consistent 101-115 temps. You’ll find water holes and rivers and shade under the evergreens to keep cool and refreshed. Pack a picnic and spend a few hours exploring this trail as it weaves and winds through the forest and up against cliffs and the water’s edge. Hop from rock to rock crossing the stream at five different points along the trail. You won’t sweat too much here as it’s a fairly easy 3 mile stroll. You’ll know when you get to the end of the marked trail - it ventures on but I have yet to figure out how to follow it further to its 14-mile stretch. $9 entrance fee for the day. Word of advice: Get there EARLY to find parking during the weekend and summer months.

    Golf and sunshine are the main magnets that draw visitors to Palm Springs, but a 10-minute ride will take you up into a snowy evergreen forest. The Palm Springs Aerial Tramway climbs up to a mountain wilderness at 8,500 feet (2,590 meters). The Swiss-built tram floats over Chino Canyon and is the only rotating tram car in the Western hemisphere. From the top, look out over the irrigrated grids of Palm Springs and the other Desert Cities of the Coachella Valley, which descends to below sea level. Across to the northeast, beyond the San Andreas Fault, are the low mountains of Joshua Tree National Park. A network of hiking trails branches out from the tram chalet into the San Jacinto Mountains National Monument, which includes the highest peaks in Southern California. (Winter weekend crowds can be crazy; you’ve been warned.)

    Diani Beach is a 25km strip of pale, sugary sands backed by the cerulean Indian Ocean. As one of the more developed towns on the Kenyan coast, there’s a great variety of restaurants, cafés, bars and shops here. Also on offer are activities from horse riding to kite-surfing and tours of the ancient Kaya Forest. Popular haunts in Diani include the Forty Thieves Beach Bar - renowned for their fun beach parties and tasty pizzas, as well as Ali Barbour’s restaurant – set inside a candle-lit cave which opens out onto the starry night’s sky above. However you choose to spend your time in this idyllic costal location, one thing is for sure: as the sun sets, castling a golden glitter on the sea below, and the beach-front restaurants lay flickering lanterns on the sand, there are few other places in the world you will want to be.

    Snag a shady outdoor table overlooking the slow-moving Waikato River and enjoy excellent tapas at one of regional New Zealand‘s best restaurants. Expanding from a smaller, cozier location on nearby Hood Street, Gothenburg is popular for shared plates with a global flavor, and its menu encompasses lots of vegetarian selections. Try the potato gnocchi with Kikorangi blue cheese from New Zealand’s Kapiti Dairy, or challenge your palate with the spicy kimchi-and-pork dumplings. Gothenburg is also a big supporter of the Hamilton craft-brewing fraternity, and the beverage list often includes seasonal small-batch beers from local microbreweries like Brewaucracy and Shunters Yard.
