Maui’s culinary scene is having a moment, as a renewed interest in local ingredients—especially heritage ones—powers the island’s restaurants to new heights. Visitors may come for the sun and surf, but they’re lingering for the innovative food, made from ahi, coffee, coconut, kalo (taro), ulu (breadfruit), Spam, and beef raised by paniolos (Hawaiian cowboys). Forget pineapple on pizza, however delicious. Today’s best chefs are focused on Hawaii Regional Cuisine, a movement that started in 1991 to showcase the archipelago’s diversity. Expect to savor Japanese, Filipino, and Native Hawaiian flavors, often in the same dish.

A North Bondi Beach institution since 1993, Sean’s Panaroma is known for unpretentious yet delicious fare, served in a homey dining room alongside fresh-cut flowers and views of Australia’s most famous beach. The simple chalkboard menu of entrées, mains, and desserts changes weekly—sometimes daily—based on what’s growing locally and at owner Sean Moran’s farm in the Blue Mountains (which also hosts stays). The waitstaff is tried and true, with a deep knowledge of Sean’s organic ingredients and wines. On your next visit, you might be treated to burrata-stuffed squash blossoms, a comforting arrangement of steaming mussels and perfectly seared tuna, Sean’s signature free-range herb “chook” (chicken), and a biodynamic red wine from New Zealand.

Hit the trails at the Cave Creek hiking area, about 30 miles north of town in the Tonto National Forest, to see the rare crested saguaro cactus in its fantastic fan shapes. An interestingly curated museum, the Forest of Stone Steles Museum (also called the Steles Forest or Beilin Museum) focuses on displays of steles (commemorative slabs), epigraphs, and stone sculptures from throughout history. The museum’s collection of inscribed tablets offers a unique window into ancient ways of life. Located inside the Wenchang Gate of the Xian City Wall, the museum was constructed similarly to Xian’s Confucian Temple, which dates to 1087.

Right in the heart of Nairobi, the Karura Forest is a tranquil oasis with fragrant eucalyptus trees, open expanses of wild grassland, a waterfall, and hundreds of types of wildlife, including birds, monkeys, and even antelope. On weekends, Nairobians walk their dogs here, cycle the dirt tracks with their families (bike rentals are available), and walk the many trails through this 2,500-acre urban wilderness. Enter via the Limuru Road entrance for the waterfall and for access to the River Café, and via Peponi Road to enjoy a quieter side of the forest.

The Black Forest, Schwardzwald in German, is a gorgeous pine-wooded mountain range in Baden-Württemberg with a number of historic towns. If the numerous Michelin star restaurants in this area (think black forest ham and black forest cake) aren’t enough to get you there, the numerous long footpaths will. The region includes part of the E1 European long-distance footpath, which passes through neighboring countries and always has plans for expansion. Its highest peak is the Feldberg, at 4,898 ft. But this area is not just for long trekkers, a variety of short walks are possible too. Stop in towns like Freiburg and Calw, and Gengenbach. Don’t miss the All Saints and Triberg waterfalls.

A stone’s throw from downtown Split, Marjan is a hilltop park about the same size as New York City’s Central Park. Named after the great author from Hannibal, Missouri, Mark Twain National Forest sprawls for more than 1.5 million acres in the Ozark Highlands. The only national forest in Missouri, it’s a treasure trove of outdoor adventure, with 750 miles of trails for hiking, mountain biking, and horseback riding; 350 miles of perennial streams for canoeing, kayaking, and floating; several caves for exploring; and more than 35 campgrounds and picnic areas for relaxing in between activities. The Eleven Point National Scenic River is a particularly lovely area of the park, snaking through the Ozark hills along an underdeveloped, ruggedly beautiful shoreline.

While accommodations in southern Utah range from luxe lodgings and wellness resorts to glamping tents and rustic cabins, they all make use of their surroundings, pampering guests with stunning views and activities like hiking and horseback riding.

While the old city prides itself on shops that have been selling specific wares for centuries, new boutiques are popping up between the ancient ones. Alongside 200-year-old butchers and crumbling cafés, browse for stunning modern art, runway-style bridal gowns, and high-end children’s clothing.
