One of Thailand’s most loved dishes, som tam (green papaya salad) is ubiquitous in Bangkok, with vendors across the capital pounding together the essential components of shredded fruit, garlic, fish sauce, palm sugar, and lots and lots of chili. One of the best places to sample a truly delicious version is this friendly venue tucked away in the backstreets of Silom. Besides serving their versions of som tam, a gargantuan barbecue produces beautifully smoky grilled chicken wings. While these are the stars of the show, the restaurant also does a winning line in other classics from northeast Thailand such as kor moo yang (grilled pork neck).

When it opened in 1889, the Jerome lured New York City socialites and European aristocrats with its mix of rough-and-tumble mountain swagger and “modern” amenities (plumbing and electricity). Minibars are stocked with complimentary snacks such as organic chocolate peanut butter cups, and downstairs, guests can dine in the Living Room, the signature restaurant Prospect, or the legendary J Bar, which once poured pints for 10^th Mountain Division soldiers and Hunter S. Thompson. The new Jerome proves that a hotel can step into the future while completely respecting the past. This grande dame remains the epitome of mountain town luxury.

Small and picturesque Coki Beach is a favorite for its soft white sand and calm, crystal-clear water. While there’s only limited shade here, umbrellas are available for rent, as are beach chairs, Jet Skis, diving and snorkeling equipment, and floats. Several snorkeling and dive sites nearby include a rocky reef near shore. Beachside eateries serve up picnic-table fare including burgers, sandwiches, and local dishes. Situated closer to Cambodia than Vietnam in the Gulf of Thailand, Phu Quoc has arguably the best beaches in the country. An international airport opened in 2012, raising the island’s profile and bringing in droves of visitors. Despite this, the island retains a laid-back, underdeveloped charm, and its coast is still dotted with small fishing villages with brightly painted boats. The interior of the island includes plenty of forest, while some of the land is earmarked for growing black pepper—pepper from here is famous throughout Vietnam. The best beach lies to the west of the town of Phu Quoc; it’s a 13-mile long straight stretch with golden sands, coconut palms, and clear turquoise waters. The An Thoi Islands, south of Phu Quoc but still part of its marine park, offer excellent snorkeling and diving during the dry season from December through May.

The Thompson Seattle adds a dose of style to the city’s hotel scene. The angular glass structure commands views of Puget Sound and the Olympic Mountains, and its interiors riff on Seattle’s aviation heritage with exposed steel and concrete finishes. Beaver Creek’s credo is “Not exactly roughing it,” and Beano’s Cabin—tucked up on the ski hill itself—is a fun way to do dinner in any season. In the winter, you can arrive at the restaurant courtesy of an open-air sleigh; in summertime, you can take an hour-long horseback ride, a tractor pull, or a 10-minute shuttle van. Once on-site, adults enjoy a five-course menu, and kids under 13 have the option of a simpler three course-meal, featuring Rocky Mountain classics like roasted venison and Colorado lamb. Some say that Keller’s second restaurant in Yountville is even better than his flagship, the French Laundry. The rest of us may never know. But Bouchon is open until midnight seven days a week, and you can grab a seat at the bar without a reservation and spare yourself the theatrics of the more formal dining. Champagne, oysters, and French fries are a fine first course, and the bar also makes a mean martini.

Bouchon is a Thomas Keller star (at a third the price of French Laundry). which serves unpretentious, French fare with a Keller twist. From Croque Madame to steak and roasted chicken, the kitchen puts out classical French bistro fare. Try sitting at the marble-topped bar with a Pastis in one hand and a spoon for mussels in the other. Not only is it quite affordable, but if you are lucky enough to snag an outdoor seat, you may also sit, Paris-style, all afternoon chatting with friends (and I dare you to resist walking into the Bouchon bakery two steps away to complete your meal- or grab a foie treat for your dog!).

In 1995, Scottsdale residents voted to set aside a large parcel of undeveloped city land as protected open space. Today, the roughly 30,000-acre McDowell Sonoran Preserve provides an opportunity for adventure. Hike, bike, and rock climb, or take to the trails with local guides from Arizona Outback Adventures and learn all about the desert along the way. Because most of the creatures that live in this desert habitat are more active at night, the best time to view animals is on early morning or evening hikes.
