Housed in a tiny, renovated castle in Fürstenau, the restaurant serves beautifully crafted dishes, dreamed up by award-winning chef Andreas Caminada. Look forward to a vast wine selection, impeccable service, and signature courses like succulent Graubünden lamb and ravioli with lemon peel.

Schauenstein Schloss Restaurant

One of three 3-Michelin starred restaurants in Switzerland is aptly located in a castle in Canton Graübunden’s scenic Domleschg Valley and worthy of a bank-breaking splurge. Its stoves are helmed by the handsome chef Andreas Caminada whose gastro creations include whimsical but hearty takes on Swiss, Italian, and German cuisine—veal tartare with kohlrabi, pickled heirloom carrots, or asparagus; red cabbage gelato with mustard mousse; langoustine tartare; truffled-potato creme brûlée; and roe deer doused in pear molasses and wrapped in cured ham sourced from a farm so close it’s within eyeshot of the dining room. Speaking of which, the rustic but elegant space has only nine tables (six of them are reserved for overnight guests) and each is laid with bespoke porcelain tableware. The room's dramatic lighting illuminates the caramelized tones of the burled-wood walls and parquet floors. A new three-rooom auxillery property in the adjacent  Meierhaus, opened in May 2017 with plush, modernist rooms designed by Patricia Urquiola. Additional developments like Caminada-Haus, a bakery, shop, and casual eatery for hikers, are expected to open in 2018. Reservations are essential.
