Of the five restaurants, Watertable is the one not to miss, especially in the fall and winter months when it hosts its California-fied version of Sunday supper, a family-style feast that includes sumac-crusted branzino and whipped goat cheese tartlets along with innovative cocktails. The 517 rooms and suites were recently reimagined in Andalusian style, with grass cloth–covered walls, coral sculptures, and hand-painted tiles; opt for one on the ground floor to have your own private fire pit. Surf's Up at the Hyatt Regency Huntington Beach

At first glance, the Hyatt Regency Huntington Beach Resort and Spa doesn’t quite fit the beach bum stereotype of the country’s preeminent Surf City. Beyond its entrance, a sprawling fountain framed by sculpted fish sprays water in unified spurts, and tiers of palm trees shadow pathways that lead directly to the ocean. A sunny pool is close to guestrooms that stretch to private balconies and patios, which adjoin colorful spaces with flat screen televisions and oversized beds. No, this doesn’t seem like the place for a classic surfing safari. But continue to explore the resort, and the feelings a surfer would hope to experience on the waves – ease, satisfaction, and a little adventure – are open to any guest. Rent a pastel two-wheeler for a ride on the boardwalk, and later feast at upscale and casual restaurants on the property. Then, get away to the Pacific Waters Spa for a namesake massage that will soothe muscles and restore energy.
