La Feria was the first deep house club in Santiago, open for over 15 years. After undergoing a renovation in 2012, it is back on the radars of hipsters and lovers of electronica in the capital. Opening Thursday, Friday, and Saturday nights, the club brings in well known local and international DJs who have Santiaguinos dancing till the break of dawn. Every day 2,000 empanadas are freshly made at this historic food landmark on the corner of Bandera and Huérfanos in El Centro. Santiaguinos pop in for a gooey fried cheese empanada slathered in hot chili sauce, piping hot. Stand in at the counter and order a “Pap” soda, flavored with Chilean papaya like the locals. One of the capital’s most popular bars (which becomes a nightclub in the wee hours), Bar Constitución feels like the inside of a factory warehouse. The walls are graffitied, and it’s got a refreshing mix of people from Santiago hipsters to foreign expats and university students. Chileans love “completos,” hot dogs with the works. Hogs took this concept and made it gourmet. Think hot dogs made with venison, lamb, pure frank, even rabbit. Nobody, not even its biggest fans, would claim that Do Son was Vietnam’s most attractive stretch of coastline. Nevertheless, this rambunctious town near the city of Haiphong is probably the closest (and certainly the busiest) beach to Hanoi. Bourbon and Branch is a traditional speakeasy. Their 8 house rules—hushed voices and no cell phones among them—encourage neighborly conversation in a very relaxed setting. It’s a great way to meet people if you’re traveling alone as well. This white tablecloth restaurant on the second floor above the Zocalo is more upscale than other options around the plaza. It opened in 2013, and the floor to ceiling open windows allow all diners to enjoy the views; though from farther back you mostly just see treetops, it’s still a lovely view. Part of the recent local boom in artisanal and craft liquors, Oola Distillery describes itself as a “micro-distillery” in the heart of Seattle’s Capitol Hill neighborhood. They create small batches of gin, vodka, flavored vodkas (including rosemary, chili pepper, and citrus — no marshmallow-whipped-cream-cupcake vodka here), and bourbon whiskey on-site. Stop in and sample their award-winning spirits in the tasting room Fridays and Saturdays from 2 to 10 p.m. Tours are offered on Saturdays at 3 p.m.; reserve online or by phone.

Just a block away from the Palacio de la Moneda, the Chilean Government Palace, this culinary oasis offers tasty treats and killer coffee in a downtown setting. Known for its breakfasts, burgers, tea time, and heady java, you can rub elbows with local politicians fueling during the work week. Among the sleek high-rise buildings of El Golf, right off the Plaza Peru, is Tiramisú (aka Santiago‘s best pizza). If you are yearning for an authentic, Italian pizza with thin crust, buffalo mozzarella, and primo ingredients pull up a chair. Always buzzing with a long wait for tables at lunch and dinner, this family-run establishment starting 12 years ago with only a dozen or so tables--and is now over 132. White Rabbit has caused a clamor among Santiago foodies for its stripped-down approach to good, wholesome food. Using all organic ingredients on a short but sweet menu, this is the kind of food that your soul craves. Mac n’ cheese with black truffle oil and a touch of smoked pancetta. Classic steak tartare. In 1998, former Chilean dictator Augusto Pinochet was arrested in England at The London Clinic. A month later, satirical, left-leaning newspaper The Clinic was born. The newspaper’s namesake bar in the Lastarria area, housed in a gorgeous Baroque building, is constantly sporting zingers directed at many Chilean public figures. The Clinic is THE spot in Lastarria to toss back some cocktails or beers among hipsters. Every night it’s slammed. “Straight ahead for 42 Miles” said the automated, slightly pitchy, woman’s voice. My road trip buddy and I looked at each other as if to check what we’d just heard. Sure enough though, the GPS was right. Straight as a die, but much, much more interesting with stops on the way to check out a coyote crossing the road, a sign marking a public phone that wasn’t there, and the remnants of some poor animal carcass that didn’t quite beat the vehicles before us.
