    Old San Juan may look, at first glance, like a few other charming cities built during the height of Spanish colonialism—Havana or Santo Domingo, for example—but what sets it apart is the extent to which its architectural infrastructure from that era remains visible. It’s the only city that has its original colonial wall almost entirely intact, and both of its principal forts are in excellent condition, remain accessible to the public, and offer panoramic views of the Atlantic Ocean (so bring your camera). Both El Morro and Fuerte San Cristobal are run by the National Park Service; guided tours will leave you with greater knowledge about the era, as well as the forts’ construction and their role in Puerto Rican history. (There are other, smaller forts in and around the capital, next to the Caribe Hilton, and in Luís Muñoz Rivera Park, plus Fort San Juan de la Crúz in the nearby town of Cataño.)

    One of Canada’s most iconic hotels, the Fairmont Chateau Lake Louise is cradled by the Rocky Mountains, its grand, castle-like structure surrounded by towering peaks and the pristine, protected wilderness of Banff National Park. The hotel was founded in 1890 by Cornelius Van Horne, the general manager of the Canadian Pacific Railway, who envisioned creating a refuge for “the outdoor adventurer and alpinist.” What began as a one-story log cabin ended up helping to kick-start tourism in the Canadian Rockies, launch the Canadian mountaineering scene, and draw a host of notable names to the region, from Marilyn Monroe to Queen Elizabeth II.

    Today, guests arrive in a grand lobby outfitted with imposing chandeliers and sweeping staircases. Common areas are decorated with old-timey photos from the hotel’s past, while the 552 spacious rooms and suites are all about showcasing views of the stunning turquoise lake and snowcapped Victoria Glacier. There are plenty of activities to enjoy year-round, from canoeing, hiking, fishing, rafting, and horseback riding in warmer weather, to skiing, snowboarding, ice skating, and snowmobiling in the winter. In between, savor everything from European alpine dishes, authentic Italian fare, and Canadian comfort food to a large selection of bourbons and whiskeys at the seven dining outlets, or head to the spa and health club for a pampering treatment or dip in the indoor heated pool.

    Set on what was once the original campus of the University of Washington, this downtown landmark was opened in 1924, and now sits on the National Register of Historic Places. Its stately spaces have played host to generations of weddings, proms, banquets, and other opulent events, as well as a number of notable guests; John F. Kennedy stayed in the Presidential Suite during his visit to Seattle, for example.

    Following a renovation in 2016, the Fairmont Olympic Hotel now features 450 rooms and suites with sophisticated décor, comfortable furnishings, and Le Labo products. Among the dining options are the elegant Georgian, a much-lauded favorite for breakfast, lunch, and the famous Afternoon Tea; The Terrace Lounge, for great drinks and live music; and Shuckers, one of the city’s oldest (and best) oyster bars. The latter pairs fresh seafood with local microbrews, including the hotel’s signature honey ale, made using honey from the building’s rooftop hives. Other amenities include a day spa and salon, and a health club with Jacuzzi, sauna, and indoor pool.

From above, the beautifully engineered order of the buildings, parks and thoroughfares below is revealed—and at sunset, the colors reflecting off the glass towers look magical. There are actually two observation decks to choose from: one on the 86th floor, which is grand enough for most; and another more vertiginous option, on the 102nd floor.
  • Pok-Ta–Pok is an ancient Mayan ball game, that was played thousands of years ago as part of a sacred, sacrificial ceremony, pitting good against evil. The general belief is that the ball, five pounds of solid rubber, could only be hit with forearms and thighs. The goal of the game was to maneuver the ball through a stone hoop extending from a wall. The winner (yes, winner!) of the game was sacrificed, which was then the highest honor bestowed on a Mayan player. Pok-Ta-Pok ball courts, which must have been inspiration for Harry Potter’s Quidditch, can still be found at Mayan archeological sites, such as Chichen Itza, and Uxmal. Friday nights the ancient sport is reenacted in front of Merida Cathedral–luckily though, sans sacrifice. It’s fun to watch and it gets pretty crazy towards the end, when the ball is literally ON FIRE, prompting faster passes, for sure. Get there a little early to grab close-up seats, or a position close to the rails.   • Merida has a handful of restaurants that focus on authentic, old-school Yucatean food; cooking that is influenced by Mayan, Caribbean, Spanish, African, and Middle Eastern cultures. I was lucky to eat at one of the best: Chef David Cetina’s ‘La Tradición’. David Cetina is passionate, energetic and charming. He’s also a bit of a local celebrity and a spokesperson for the preservation of the traditional dishes of the Yucatan. His food preparations are authentic and unpretentious. Although he’s bit shy to speak English, he loves to share his knowledge and works with a translator when he takes people to the market, or when he conducts his cooking classes. Spending time with David is fun and educational. The restaurant may feel a bit old-fashioned, but don’t let that get in the way. The food that you’ll experience here explodes with flavors and will blow your mind. There’s also a refreshing, delicious and ‘healthy’ alcoholic drink (shocker, I know!)–the Cocktail de Chaya, a must-have when you’re at La Tradición. Touring the Mercado Lucas de Galvéz, and lunch at La Tradición, can be organized for $100/ per person (minimum 2 people). Lunch can be interactive cooking in a–please note–commercial, and very hot (!!) kitchen, or–my choice, a seated experience.     There are no guarantees the Northern Lights will start dancing on the night you look skyward, but it’s so worth taking the chance. One of the great rewards for hanging out in Alaska once the dark and cold settle over the state, the Northern Lights (or if you want to be scientific about it, aurora borealis) serve up a light show that is equal parts science, magic, and art. Your best bet for catching the light show is to head away from city lights. That’s one of many reasons it’s worth making the trip to Denali National Park, open year-round. When the park’s summer crowds disappear, visitors feel as though the massive national park is an intimate personal space.

    An instant Amsterdam hotspot when it opened on Rozengracht in spring 2015, Salmuera blends flavors from many Latin countries, fusing Mexican and South American favorites as its predecessor did with Asian fare. Set in the historic building that was the original Bols Distillery, most recently occupied by Chow, the lively bistro offers lunch, dinner and Sunday brunch, all featuring grilled meats and seafood, ceviches, empanadas and other specialties of Mexico, Argentina and Peru. Named after the tangy brine that flavors and tenderizes meats in Argentina, Salmuera boasts a rustic charcoal asado grill, open kitchen, and upper and lower level dining areas. Whole suckling pigs roasting over an open charcoal fire, lots of dark wood, a bar with counter seating, and flickering candles add a gezellig vibe. When the weather cooperates, the restaurant’s vine-laced terrace is a great spot for al fresco dining and watching the passing scene on Rozengracht in the trendy Jordaan. Come for a romantic dinner or cocktails and “bites” like delectable Latin cheese fingers stuffed with melted Tres Leches cheese made with cow, goat and sheep’s milk; meat empanadas; Argentinean charcuterie and a street food platter featuring spicy chicken wings marinated in coffee and chipotle, Argentinean sausage roll, Peruvian potato tart, guacamole and an array of dipping sauces.
  • Kiyomizu-dera on Mount Otowa is one of the most famous temples in Japan, a place that appears in every sequence of Japanese travel photos. The landscape is all cherry trees and forest; it is among Kyoto‘s loveliest spots. The current structure dates to 1633 and is one of 33 temples on a pilgrimage circuit in the Kansai region dedicated to Kannon, the Buddhist goddess of mercy. The circuit runs from the south of Wakayama north to the Sea of Japan. You’ll see pilgrims carrying nokyo-cho—books stamped to record the visit—and monks busily inscribing in calligraphy. The temple, set against a steep hill and constructed on huge pilings, is a UNESCO World Heritage site.
