    An out-of-the-way bistro pretty much worth the flight to Italy on its own, Secondo Tradizione flips the traditional osteria on its capo. Experience paper tablecloths and chalkboard menus with gallery lighting, an exposed kitchen, and a Michelin star–worthy menu. The menu riffs off a yesteryear vibe, which is a tag team of classics (like carbonara and saltimbocca) and locavore products via haute cuisine recipes. The Dal Banco (counter) showcases specialty cured meats and cheeses, while Dalla Cucina listings are the daily creations of chefs Piero Drago and Jacopo Ricci.

    Coco Chanel famously made the Ritz Paris her home for 34 years, but the grandest hotels need a little brightening once in a while. The Ritz, which originally opened on Place Vendôme in 1898, reopened in 2016 after a four-year, $450 million renovation. Starchitect Thierry Despont wisely retained iconic features like the red entry carpet and the hotel’s signature amber scent, but he incorporated brighter fabrics to the public rooms, subtle touches like a heightened lobby ceiling and the addition of peaceful landscaped gardens, and bold statements such as a retractable glass roof on the patio. Overall, too, the number of guest rooms was reduced to 142, and the number of staff was raised to 630. Guest rooms are light and airy, with cream walls, Empire furniture, swags of floral silk fabrics, and marble fireplaces with gilt details. Some rooms have balconies, perfect for morning coffee. Down in the Ritz Club, the pool, serenely set in a columned art deco room, is long enough for laps. The Chanel au Ritz Paris is the brand’s first freestanding spa, with treatment rooms featuring (of course) Chanel skin care and beauty products.

    At the edge of the Baja Peninsula, One&Only Palmilla was originally built in 1956 as a 15-room hideaway for Don Abelardo Rodriguez, son of the then-president of Mexico. Today, it’s one of the region’s most luxurious resorts, composed of 174 oceanfront rooms and suites and two villas decorated in neutral hues and splashes of red; many have infinity pools and patios that face the Sea of Cortez.


    One&Only Palmilla has one of the area’s few swimmable beaches, plus three private rocky coves complete with floating beds, lounge chairs, and dedicated butlers. Activities include snorkeling, surfing, parasailing, and golfing the award-winning 27-hole course designed by Jack Nicklaus. The massive spa’s wellness garden features a juice bar and 13 treatment villas; several have private plunge pools, rain showers, and swinging daybeds.



    One&Only Palmilla is a member of EarthCheck, a scientific benchmarking certification program, for its sustainability efforts, which include a state-of-the-art water purification system that produces and bottles filtered water on site. The resort works with the Red Committee for the Protection of the Sea Turtle by helping with daily patrols of nearby nests, an activity guests can join.

    This all-but-plain-Jane spot—in Clavería, a neighborhood “no one” knows—is in fact among the most delightful lunches in the city, the project of architect turned chef Gerardo Vázquez Lugo, who decided to take the neighborhood restaurant his parents had run for decades to the next culinary level, yet without ever losing touch with his roots. The queen-bee hostess and waitstaff make sure every diner feels special, with plenty of talk about what’s fresh this season—and what’s so good it’s about to run out. Items on offer cover everything from refined versions of street classics to exquisite, almost exotic, wild-game preparations whose recipes come from some of Mexico’s remotest corners. Live music and an excellent mezcal cart sweeten the already delicious deal.

    Not only a star in Vienna, but on the world culinary scene, Steirereck is also breaking new ground architecturally. A few years ago, the restaurant, situated in a landmark art nouveau building amid the leafy Stadtpark, unveiled a futuristic redo. Blond wood and a white contoured ceiling now accent the new blocklike spaces which extend outward and whose reflective facade highlights the surrounding parkland. Showcasing chiefly recipes from the Styria province, fixed menus include novelties like char with beeswax, yellow carrot, pollen, and sour cream, while the cheese carts offer a selection of the more than 100 varieties available here. During the meal, a detailed menu card delivered between courses provides information about the dishes you are enjoying. The building’s lower-level Meierei im Stadtpark restaurant is a more casual dining option.
  • With almost 20 years at the helm of a dining room that’s jammed every afternoon, Gabriela Cámara at Contramar must be doing something right. For one, the seafood on offer—traditional, even homey recipes, impeccably prepared—is among the freshest available. Service is quick, yet warm and enjoyable. It brings in a well-dressed, deliberately coiffed crowd that loves table-hopping, seeing and being seen, and air-kissing; but most of all, they relish digging into house specialties like the fish carnitas, the legendary tuna tostadas, and the grilled pescado a la talla (ordered by weight, and served in a red adobo or a parsley rub). Some afternoons (especially Fridays) you can’t believe the waiters have actually squeezed one more person in, yet everyone is very glad they came. Desserts are especially recommended. Open for lunch only—which may explain the sense of urgency at the door.

    The outside of the Sky Hotel is very deceiving. It looks like any other lodge in Aspen and then when you go inside it is quite the opposite. As you walk into the lobby there are high-backed chairs that are white in front and red with white writing on the back. The carpet is a chaotic pattern of circles and bright color dots—it all seems like something out of Alice in Wonderland. This modern, hip motif is transferred to all the guest rooms.

    For contemporary, high-end Yucatecan cuisine, look no further than K’u’uk. Chef Pedro Evia has taken the spirit of regional food and given it a modern twist. He presents common Yucatecan recipes like suckling pig, then uses ingredients like star fruit and sapote to showcase subtler flavors than those found in traditional cochinita pibil. All the essences of Yucatecan delicacies can be found here, but in ways that are almost unrecognizable, such as in the atole ceviche or the dessert of Yucatán honeycomb with pollen and passion fruit. Located amid the grandeur of a colonial mansion close to the Monumento a la Patria in Mérida, K’u’uk has high ceilings, original-tile floors, and large chandeliers that set the scene for an exclusive dining experience. Guests opt for a recommended nine-course tasting menu or order from an à la carte bill of fare that changes periodically.

    Occupying what were the Maison Blanche department store and the S.H. Kress & Co. five-and-dime, this stately hotel first opened its doors in 2000 after a $250 million overhaul of the then-shuttered Beaux-Arts buildings. After Katrina, the property underwent a second renovation, which included the expansion of its spa (now a sprawling 25,000 square feet) and the addition of a private entrance for Club level guests.

    This is a Ritz-Carlton, so you can expect the same (high) level of service and luxury—think ornate furnishings, sumptuous linens, and a $3.5 million art collection—as at other properties within the brand. But the property isn’t just another Ritz. Bellmen wear seersucker, the bistro serves po’ boys, and there’s live jazz in the lounge (which also serves a mean Vesper).

    When Mike Richardson exploded onto the fairly limited Fes dining scene in 2007, he took the medina by storm. Suddenly there was someplace where locals, tourists, and a handful of resident expats could convene. They came to view exhibitions by up-and-coming young artists, to hear Sunday sunset concerts featuring the likes of Houariyat—an all-female drumming band—and to tuck into the café’s legendary camel burger. All these attractions are still going strong, but Clock has expanded and begun offering excellent traditional-cooking classes, and holds movie nights in a screening room furnished with vintage cinema seats. It now also has a sibling in Marrakech and another soon to open in Chefchaouene, and a country cousin in the Scorpion House in Moulay Idriss, which you can book for private lunches. If all this doesn’t whet your appetite at least come at brunch for the best coffee and Berber eggs in town.
  • Lardo, a sister restaurant to chef Elena Reygadas’s Rosetta and her bakery, is especially warm and buzzy on sunny days, when the Condesa restaurant’s full facade of French doors is thrown open and its handsome crowd spills out. The kitchen applies all the chef’s singular refinements to a winning mix of Tuscan recipes that put special focus on fine charcuterie. Menu items are (perhaps deceptively) simple: poached eggs, seasoned variously; a nice selection of pizzas; fresh, vinegary salads that don’t go overboard; grilled shellfish. The complexity arises from their delicacy on the palate, where each crisp taste is savored separately—and as a part of the whole. A nice wine list encourages sobremesa, the delightful Mexican custom of lingering over the table. Breads—either the ones that come with your meal or the ones you take home from the on-site bakery—might be the best in the city.

    Growing up in Indonesia, chef Ryan Simorangkir says he only craved kid’s food. But as an adult, he fell in love with the local street food of his home country and began to cook from family recipes. After attending Pasadena’s Le Cordon Bleu school, he opened Sama Sama Kitchen, co-owned with chef Tyler Peek, where he celebrates Indonesian cuisine in a warm, casual setting (the name means “you’re welcome” in Indonesian). The menu features renditions of traditional Indonesian street fare, like the signature wings, hot chicken bao, or crispy brussels sprouts. Salads are also a highlight here, including the crispy duck salad, green papaya salad, and market gado-gado. Pan-seared octopus becomes rich with leek and chili oil, as well as rendang remoulade. The black pepper tofu and broccolini may sound simple, but with garlic, scallion, ginger, and chili, it’s a dish that many return to over and over. Don’t skip dessert. Try the banana doughnut fritters or black sesame tres leches with spiced rum milk, and you’ll wonder if you should order an extra to take home.

    Australian-Vietnamese celebrity chef Luke Nguyen has put his energy into creating fresh, modern, healthy renditions of Vietnamese street food and traditional family recipes at Moi Moi, his new Hong Kong restaurant. A master at balancing sweet and sour tastes as well as spicy and bitter, Nguyen gets big raves for his food, especially the panfried rice cakes topped with tiger prawns and caramelized pork neck. Other hits include green tea–smoked duck in rice-paper rolls, citrus wild salmon, caramelized Kurobuta pork belly, a pho made with raw Wagyu beef, and slow-braised free-range chicken drumsticks with coconut juice, fish sauce, ginger, and garlic. Moi Moi has an extensive and creative cocktail menu to accompany the feast.
