    In many ways, the Fairmont Orchid is the quintessential Hawaiian luxury resort. Its big, elegant lobby is blooming with purple orchids and birds of paradise, its enormous, 24-hour swimming pool wends its way around black rock islands, and its 32 lush acres include tropical gardens and a white-sand beach that frames an aquamarine cove. The 540 guest rooms and suites, located in two six-story towers, all have lanais; half have ocean (or partial water) views, the others overlook the spotless grounds. It’s the dream Vacationland, and as such, the mood is jolly round-the-clock. Cheerful staff oversee the long list of activities—canoe excursions, petroglyph hikes, stand-up paddle-boarding, and about a zillion other options are available both on property and off (some activities are complimentary, others cost extra)—and the crowd tends to be a fun-in-the-sun bunch. On any given day, there might be a Canadian family in a heated volleyball game on the beach, or a group of Silicon Valley execs soaking in the hot tub.

    Originally built to serve the area’s fish canneries, the Historic Requa Inn, at the base of the Klamath River, is one of the few small hotels right near Redwood National and State Parks. You can come for dinner even if you’re not staying at the inn, which is run by a local family. They offer a prix fixe menu Wednesdays through Sundays from April 1 to October 31. The only seating is at 7 p.m., and what you get is a communal, family-style meal: A small group of people sits around a table and shares a selection of seasonal Californian dishes, which are all crafted using ingredients sourced from a nearby organic farm. (Think of it as having dinner with your family, just tastier.) Make a reservation ahead of time, since spots are limited. Visitors can also pick up a picnic lunch here if they order one 24 hours in advance. Although an old establishment, it’s well-kept; guests will find there is no TV or phone in their room, which provides the perfect excuse to sit outside and enjoy the water going by.

  • Just south of Bimini, tiny Gun Cay is the site of Honeymoon Harbour Beach, a remote and beautiful stretch of shore that’s accessible only by boat. Bimini Undersea offers trips to the beach, where you can lounge on the sand and snorkel in the calm, clear water. However, the highlight is the opportunity for face-to-face encounters with the local stingrays. These bottom-dwelling creatures have grown accustomed to people feeding and touching them, so there’s very little risk of a sting, as long as you’re gentle and take small steps to avoid trodding on them.
  • The famed German naturalist and explorer Alexander von Humboldt was the first to document the ocean current that explains why the adorable, nattily plumed penguins favor this part of the Chilean and Peruvian coasts—the water brings oodles of anchovies, sardines, and crustaceans along with it. From the boats bound for Punta de Choros, visitors can catch glimpses of dolphins, whales (including humpbacks and blue whales, especially in January and February), and frolicking sea lions.

This is where you’ll find premium regionally grown fruits and vegetables, ranging from gorgeous artichokes, peas, and fava beans in the spring; sweetly fragrant peaches, nectarines, and melons in the summer; and earthy sweet potatoes, great bunches of fennel, and Jerusalem artichokes going into the autumn and winter. Haunches of beef and lamb hang from butchers’ hooks, and the catch from Kenitra and Tangier lays glistening on ice-covered wooden slabs. The market is a great place to stock up on dried fruits and nuts, and souvenirs of herbs and spices, handwoven baskets, and Moroccan serving platters. After shopping, stop at one of several cafés on lively Mohammed V Boulevard for freshly squeezed orange juice or a coffee strong enough to make your nerves jangle, and watch the world wander on by.

The falcon souq is located in one corner of Souq Waqif where visitors can admire these expensive birds, photograph and sometimes even hold them under the shopkeeper’s supervision. The birds are so important here, that the souq has a falcon hospital. If you are lucky, you might find yourself attending a public falcon auction, attended usually only by males, where the prices of a falcon start at $3000.

    Tenaya is not only one of the most beautiful lakes in Yosemite, it’s one of the most accessible—when Tioga Road (the only road in the high country) is open, usually May through October. The fact that it’s easy to get to makes it one of the most popular sites in Yosemite, but because it’s located 8,150 feet about the valley floor, it’s still a lot less crowded than other attractions. The sandy swimming beach on the east end of the clear alpine lake is a favorite spot for sunbathing, with granite domes surrounding three sides. There’s also a smaller, typically less busy beach on the west end, but you’ll have to do a little wading to get there. For landlubbers, there’s an easy 2.5-mile hike around the lake.

    Famous for bringing the world the likes of Arrogant Bastard Ale, Stone Brewing is nothing if not cheeky. This is, after all, the first American craft brewer bold enough to open an outpost in Germany, a country steeped in beer-making tradition. But Stone’s audacity is hardly unfounded, as you’ll discover when you visit the company’s headquarters in Escondido—ideally, for a private tour and tasting. If you’re not already a fan of San Diego’s particularly hoppy style of IPAs, there will be at least one beer on tap that makes you a convert. But first, you’ll walk through the brew house—past mash kettles and whirlpools and fermenters—to learn all kinds of fun facts, whether it’s the surprise source of the chocolaty notes in Stone’s porters and stouts (mega-roasted malted barley) or what the upcycling options are for spent grains (cow feed and dog bones). Pro tip: After your tour, bypass the lovely indoor restaurant for the even lovelier outdoor gardens—all bamboo and koi ponds and hummingbirds. Sit back in an Adirondack chair with a beer (try one of the extra-innovative brews on offer only here) and warm pretzels with Stone Ripper Pale Ale beer cheese sauce.

That’s Hotel Zetta. The dynamic property, which re-opened as Hotel Zetta in 2013, couldn’t be more, well, San Francisco.

    In the lobby, there’s a chandelier fashioned from recycled sunglass lenses, a front desk made from reclaimed wood, and a two-story Plinko board (an interactive art piece) that descends from the Playroom. About that: The Playroom caters to the work-hard, play-hard set. A shuffle board, a pool table, and video games (both current and retro) spark friendly competition. A classic London telephone booth lets guests order room service or video chat. Modern amenities continue in the rooms. Desks built from kitchen butcher blocks encourage standing while working. A G-Link docking station facilitates wireless streaming from tablets and smartphones to flat-screen Samsung Smart TVs, which come pre-loaded with complimentary Internet service, apps and HD channels.

    The art? A blend of analog and digital. Art in the guestrooms include work by Nick Gentry. He made an original work as a compilation of floppy disks. Then, the work was photographed and screenprinted as a giclee on a canvas for the rooms. Downstairs, two new ventures from famed Bay Area restaurateurs Anna Weinberg, James Nicholas and Chef Jennifer Puccio (of Marlowe and Park Tavern) ensure the young and hungry are adequately fueled.

    Simply put, Ramiro is the best seafood restaurant Lisbon. It is a 100% local customer based and long established “Cervejaria” (literally translated to place where beer is dispensed), with an buzzing ambience and above all, very high quality cooked on the spot seafood. What I love more about this place is its unpretentiousness and the “no fuss” approach to seafood. Eating with your hand is more than recommended and don’t be scared to dunk the freshly bake buns in the fresh crab meat which comes in the shell or in the velvet buttery sauce of the “bulhão pato” clams. Green wine is the eternal companion of seafood in Portugal, and don’t forget to ask for Palacio da Brejoeira for a taste of crisp slightly bubbly 11º white wine. Desert as a special meaning in this place, and it comes in the shape of a charcoal grilled fillet steak in a bun. Yes, you are in Portugal and after a seafood meal you can further indulge your umami taste buds with some animal protein. Although it is open from 12h00 to 24h00, it becomes extremely busy at the end of the week evenings, and the over 1h wait for a seat can be a turnoff. I would always recommend my clients at the Palacio Belmonte, to either go before 19h00 or after 22h00 to avoid the queues. In the case there is a slight waiting period, you can always go for a very Portuguese “at the counter nibble” of some “black pork aged ham” and a cold draft beer, to pass the time. You cannot leave Lisbon without trying this place!

    New York is definitely one of the food meccas of the world, every restaurant, a living proof of the fusion of cultures that make up this amazing city. One thing you will find here is that some of the best restaurants are not obvious to the eye. Many have hidden entrances or disguised doors. While La Esquina is also an evident fast food restaurant, the real treasure lays hidden in the basement underneath. Behind a door labeled “employees only” a set of stairs takes you down to much larger room with rustic decoration and attractive murals that evoke the Aztec theme and welcome you to your next best meal! The food is a testament of the fusion of flavors of Mexico... the tostadas (bite size crisp tortillas) de pollo and cangrejo with the spicy mango relish or the taquitos are a great way to start! Then go for the juicy marinated Carne Asada with a hint of garlic and the classic mojo or the Camarones a la Plancha and pair them with the green beans and the rice for a meal to remember!!! and please... leave room for dessert, the Crema Cocida, a velvety panna cotta with a mexican twist, or the Torrejas Brulee, a moist bread pudding with bits of pinnaple, give you the perfect level of sweetness to end a superb meal! If you go with large group (>9) they will require you to do a family style menu for a fair value, which I highly recommend!! Trust me, there will be plenty of food and I promise, it will be a feast you will never forget!

    Mantova may sound familiar. It’s where Romeo was exiled from fair Verona in Shakespeare’s Romeo and Juliet. It may not sound like an obvious choice as an artistic hidden gem, but when Shakespeare wrote his play Mantua was a swamp land. The Palazzo del Te was built in 1526, commissioned by Duke Frederigo II Gonzaga and designed by Giulio Romano. The Palazzo itself is an embodiment of Gonzaga’s desire for love and struggle for power. It was built in two phases: The first phase of the Palazzo is rife with frescos of passion, love, and a whole lot of naked gods and goddesses. It was in these rooms where he would probably make believe he was as well endowed as Zeus and play out the sexual scenes with mistresses, of which he had many. The second phase was built in 1530 and in those 4 years Duke Gonzaga got his priorities in order. This time he meant business and aligned himself politically with Charles V—Holy Roman Emperor, aka Charles I King of Spain. Aside from its history, what makes the Palazzo del Te “quality travel” is its location off the beaten track, away from the crowds of tourists blocking your view of the Sistine Chapel or the colosseum. You get an intimate experience with a work of art, or in this case an entire building without being shoveled out (which was my experience at the Sistine Chapel). Give the small towns of Italy a chance, and help preserve lesser-known works of art that deserve it as much as the famous sights in Rome, Florence, and Venice.

Afterward, hit one of the eateries like the self-service Lupins or The Observatory, which serves upscale West Coast cuisine.
