    Old San Juan may look, at first glance, like a few other charming cities built during the height of Spanish colonialism—Havana or Santo Domingo, for example—but what sets it apart is the extent to which its architectural infrastructure from that era remains visible. It’s the only city that has its original colonial wall almost entirely intact, and both of its principal forts are in excellent condition, remain accessible to the public, and offer panoramic views of the Atlantic Ocean (so bring your camera). Both El Morro and Fuerte San Cristobal are run by the National Park Service; guided tours will leave you with greater knowledge about the era, as well as the forts’ construction and their role in Puerto Rican history. (There are other, smaller forts in and around the capital, next to the Caribe Hilton, and in Luís Muñoz Rivera Park, plus Fort San Juan de la Crúz in the nearby town of Cataño.)

    Never underestimate the power of shocking pink. The intimate but lively dining room at Dulce Patria—the smash hit by celebrity chef Martha Ortiz—feels not unlike a stage set. Soon after 2 p.m., it starts to fill with high-powered ladies-who-lunch types, cooing over a menu of updated Mexican classics with extravagant, architectural presentations that are at least half the fun. That said, chef Ortiz’s flavorful sculptures really deliver: Tastes are delicate, authentic, and quite delicious. The well-balanced offering presents ample choices without overwhelming, in favorites like the corn-kernel soup, a full portfolio of quesadillas, duck mole, and an extravagant dessert list (gelatin lovers rejoice) that really does drive home the dulce part. A recent seating included telenovela stars and a former Señor Presidente. And who knew there were so many edible flowers?

    The Review
    Though the Baja Peninsula has welcomed a slew of luxury properties over the past few years, it seems the 128-room Solaz is only in competition with itself. First, there are the sophisticated stone-and-wood interiors, which balance high-tech details (remote controlled lighting) and luxe amenities (outdoor showers, private plunge pools) with locally sourced decor and wall sculptures by Mexican artist César López Negrete.

    Guests even have the option to add personal butler service, which can arrange everything from swimming with whale sharks to ordering a bottle of local wine from the property’s wine cellar. Outdoors, the landscaping features endemic desert plants like agave and cacti, with a hardly a palm tree in sight.

    Then there’s the spa, a 10,000-square-foot refuge that features the region’s only Thalasso therapy seawater treatments and a Himalayan salt igloo. Five pools (including two sleek infinity ones that overlook the Sea of Cortez), four dining outlets (a Mexican breakfast spot, a seafood restaurant, a poolside cafe, and a coffee lounge), a beachfront fitness center, and 4,000 square feet of white-sand shoreline complete the desert dream.

    The Four Seasons earns its five stars for everything from its location—smack in the middle of Seoul’s most-visited palaces and landmarks—to its detailed amenities, such as customizable mattresses. Rooms overlook Gyeongbokgung Palace, the largest and arguably most beautiful of the royal residences, or Cheonggyecheon stream, each a few minutes’ walk from the hotel. Its seven restaurants and lounges include a two-level sushi and sake bar, a Michelin-starred Cantonese restaurant, and an exotic cocktail bar hidden speakeasy-style in the basement.   • Sacsayhuaman is an impressive Inca fortress on a steep hill that overlooks all of Cusco. The ruins are humongous, but archeologists believe that the original site was as much as four times larger. What remains today are the impressive outer walls constructed in a zigzag formation across three levels. As with many Inca sites, the walls are made from massive, irregularly-shaped boulders that stick together like a jigsaw puzzle without any additional support. The stones are laid together so tightly that a sheet of paper will not fit into many of the cracks. As the night comes down, this is a perfect location to appreciate the stars.

The Cooking School: Salt chef de Cuisine, Rick Laughlin hosts a highly interactive cooking school with a small group of guests who rotate in stations while cooking their multi-course lunch.     After driving just over six hours from Denver into the northern reaches of Wyoming, I needed to crash for the night. Taking the Buffalo (population 4,585) exit off the interstate, I cruised towards downtown passing a Holiday Inn Express, a Super 8, and a Day’s Inn. Did I really have to spend the night in a modern matchbox of a room? No, in fact, I didn’t. I used one of my lifelines and called a friend, asking her to do a quick Google search. Bingo! She said, “Go to the Occidental!” almost in the same tone Horace Greeley had uttered, Go West, young man.” In the front window, a sign read: “Wireless in 1880 and still wireless. Internet in all rooms!” I opened the front door and walked directly into the 19th century – a Tiffany chandelier, an embalmed moose head, and a roaring fireplace in the lobby of this 130-year-plus historic hotel. According to the owner, the Occidental’s been witness to a parade of Western icons: Butch Cassidy, Calamity Jane, Buffalo Bill, Owen Wistler, and Teddy Roosevelt. I kind of liked the idea I’d be sleeping under the same roof, as had this gang of five. Fully restored in 2007, the names of the rooms themselves conjure up another era: The Bordello, Cowboy Bunkhouse, and Madam’s Retreat, to name a few. I happily wound up in the Cottonwood Suite, boasting a four-poster king bed, an ensuite bathroom, and dressing room. Twenty-first century comfort amidst 19th century antiques. If you’re in the area, this is the place to spend the night.

    A year ago I had dinner at the Clifton, then under the supervision of Tucker Yoder. Mr. Yoder was elsewhere that evening, but I spent several hours at the “chef’s counter” in the kitchen, watching executive sous-chef Jarad Adams work his own delicious magic. Naturally Mr. Adams was meticulous with his food prep, but he was also surprisingly generous with his time for me. Imagine my delight when I returned this year to find Mr. Adams had been promoted to Executive Chef. On this visit, Mr. Adams’s tasting menu showed the same attention to detail as I remembered, but with a greater sense of adventure — even whimsy. From the amuse bouche (a spoonful of polenta topped with pork belly, apple, and a sprig of fennel) all the way through to the sticky toffee pudding with candied pecans, dates, and caramel ice cream for dessert, I was enchanted. The tasting menu consists of four courses and varies by the season. My first course was a toss-up between the butternut squash and apple soup and the shaved winter vegetable salad with hazelnuts, black cocoa, and a buttermilk dressing. I had no regrets about my choice of the salad, especially as butternut squash was the foundation of my next course: the most perfectly seared sea scallop I can remember. From there it was onto monkfish with beluga lentils, with Brussels sprout leaves dancing on top. Mr. Adams knows what he’s doing in the kitchen, and the Clifton — and Charlottesville — is lucky to have him.

    As the name suggests, this soaring 44-story hotel from the Ritz-Carlton brand is peppered with high-end artwork, mainly by renowned Spanish and Catalan artists such as Eduardo Chillida, Albert Rafols-Casamada, Perico Pastor, and Luis Feito. But there’s much more to the hotel than paintings and sculptures—such as the peaceful terraced gardens, an outdoor swimming pool that overlooks a large Frank Gehry fish sculpture, a luxury spa offering panoramic views, and several excellent restaurants. The hotel overlooks Barcelona and the Mediterranean from its prime location on the Olympic Port. And, perhaps best of all, the beach is right at the doorstep.

    The rooms are a delight, too, with dark-wood furnishings and flooring, flat-screen TVs, and sleek, spacious bathrooms that come with separate bathtubs and Asprey toiletries. The hotel’s penthouses are even more swish; guests who book one of these will not only get their own private elevator and fully equipped kitchen (where the hotel’s chefs will happily prepare meals en suite) but can also book a dedicated butler service.

    “I’ve never seen so much red – except at a French brothel,” a fellow guest said to me as we rode the elevator together. She was right. From the moment you enter the lobby, the Rouge lives up to its colorful name with its red quartz tile, red lamps, and the Red Hot Room (for meetings). You’ll find crimson headboards and velvet drapes in each room -- although there’s plenty of zebra print, too. One of eight Kimpton hotels in Washington, DC, Rouge is certainly the rosiest. Stylish and eclectic in that Kimpton fashion, my street-facing room was both comfy and oversized – and convenient. It’s just three blocks to DuPont Circle and then only a bit further to Rock Creek Park (great for jogging, biking, or just walking). The White House is five blocks away and Whole Foods Market just two. For the athletically minded (like me), the good news is that each room has a yoga mat in the closet and nearly all are large enough to do a complete Vinyasa flow. The less good news: the small fitness room in the basement is dreary (but for $5 you can get a pass to the local “Y,” which has every amenity, including a 25-meter pool). The Rouge’s guests are as idiosyncratic as its décor. Families, business warriors, and hipsters seem to be the main human food groups –converging for the hotel’s wine hour from 5 p.m. to 6 p.m. and at then, again, breakfast. If eclectic’s your thing, the Rouge is your place. Leave the rose-colored glasses at home – you won’t need them here.

    The UAE is one of the most multicultural countries in the world and its largest city Dubai the most cosmopolitan. Indians make up one of the largest population groups and have a long history in Dubai dating to its early years as a tiny trading port when most Indians arrived as merchants. My Indian friends in the UAE always swore Dubai had the most authentic Indian food outside India and after 8 years eating it there I can assure you they weren’t exaggerating. It was my go-to for take-away, the food being so good and so cheap there was no reason to cook it at home. My favorite Indian eateries weren’t in hotels but on gritty backstreets in my old Bur Dubai neighborhood -- an area few tourists explore after they’ve done the sights and shopped the souqs. Farida Ahmed, sister of Arva Ahmed, who started Frying Pan Adventures, Dubai’s first culinary walking tours, runs a mouthwatering foodie tour of the Meena Bazaar area, Dubai’s Little India. During the four-hour foodie walk, which will take you through the bustling area, bursting with Bollywood CD and DVD shops, cheap electronics stores, textile shops, and an abundance of simple family-owned eateries, you’ll try everything from fried street food snacks, such as samosas, and piping hot Indian naan breads to Dubai’s best chicken tikka and spice-infused drinks. As with Arva’s Middle Eastern food tour, during the balmy winter months Farida leads you on foot and during the sultrier period uses an air-conditioned car. A must.

    I don’t know whether it was the early morning fog, the rolling hills surrounding the vineyard, or the grapes themselves that made me do a double-take: Was I really in Chile’s Colchagua Valley, or was I back in California’s Sonoma Valley? With its intoxicating location and old world charm, Casa Silva (the colonial-style inn that sits in the midst of the family vineyard) has the best of both. It’s a place to relax, tour the surrounding vineyards, and – naturally -- drink their own varietals (especially the Sauvignon Gris, Sauvignon Blanc, and Petit Verdot). With only seven rooms, Casa Silva sits somewhere between a B&B and a guest house, with shabby chic rooms that are a throwback to Chile’s colonial era. We snagged room no. 4, with high ceilings and a comfy four-poster bed as well as an oversized bathroom. While the inn itself is special, the restaurant is worth a visit on its own. It has a clubhouse feel, overlooking the family polo field, but with unique and breathtaking views of the Andes. Hotel guests can take a leisurely 20-minute walk through the vineyard to the restaurant, which features Chilean specialties like conger eel, queso fresco, and tuna ceviche in one of the most dramatic settings I’ve ever enjoyed. (And don’t pass up the mote con huesillos, aka “wheat berry peach dessert.”) Finally, not to be missed: the tour of Vina Casa Silva, which houses one of Chile’s most up-to-date wine facilities and the family’s collection of perfectly restored antique cars.

    Every afternoon about 5:30 PM, islanders and connoisseurs of sunsets arrange themselves at their favorite beach side vantage point on the west and south shores of Oahu for a chance to see the legendary “green flash”. In all of my years of living in Hawaii, I have only seen it twice, but sometimes I think it was a result of a very strong Mai Tai and staring at the sun too long. If you’d like to try for a glimpse of this phenomenon, you might as well be sitting in a comfortable spot with a great drink in hand. SWIM is a poolside bar with views over the statue of Duke Kahanamoku out to Waikiki beach. On an upper deck of The Hyatt Regency Waikiki, you are above street level so nice treetop and beach views are yours. I recommend the Lychee Martini ( pictured). The pupus are really good here too and if you plan it right, might serve as dinner. If not, hop over to SHOR American Seafood Grill. Visible across the pool with indoor or outdoor seating, start with amazing Baby Kona Abalone with garlic herbed butter, the tremendous seafood tower or the catch of the day you pair with a sauce you select from the list like Pineapple Shiso Relish, Hamakua Mushroom, Soy Radish etc. Insider Tip : Valet your car gratis with purchase – so get your ticket stamped and tip your valet.

    Cheeca Lodge manages to be upscale and relaxed at the same time. This duality is perhaps best embodied in Cheeca’s flagship restaurant Atlantic’s Edge, which offers a refreshed take on island cuisine (like the roasted red snapper with dragon fruit or the hibiscus swordfish) in an elegant but breezy oceanfront setting. The 27-acre luxury resort on Islamorada Key—one of the sport-fishing capitals of the world—was renovated following damage from Hurricane Irma in 2017. The revamped lobby, fully rebuilt fishing pier, 214 redesigned guest rooms, and new Italian restaurant have made Cheeca even better than before. Airy suites feature curated artwork, hand-tufted rugs, and rattan accents, and each suite opens to a private lanai with a partially enclosed open-air jacuzzi. A new point of pride is the refreshed 5,700-square-foot spa, which now has seven treatment rooms, a wet room with Vichy shower, hydrotherapy facilities with a steam room, and a fully equipped fitness center. Still to come in early 2019 is a brand new oceanfront pool (bringing the resort’s total to three, including a saltwater lagoon) and tiki bar, 25 South. If you must leave, book a fishing excursion, sunset cruise, or round of golf at the 9-hole Jack Nicklaus-designed course—and enroll the kids in the eco-focused Camp Cheeca.

    Scandinave Spa, at the edge of the forest beside Lost Lake, is a Nordic–inspired spa that recommends alternating dips in the hot and cold pools, steam rooms, and brisk waterfall rinses. There are myriad ways to stitch together a rejuvenation regimen: Breathe deeply in the eucalyptus steam bath, then follow up with a series of hot baths before a shocking plunge under a chilly cascade, followed by a series of cold, colder, and almost freezing baths, or go the other direction. You can finish the treatments in around 90 minutes, but some choose to make a day out of a visit to Scandinave, tossing in a massage or facial, hanging out in the solarium to read or snooze, or even napping in one of the hammocks strung around the large property. The spa’s café, an open timber-paneled space with floor-to-ceiling windows, serves freshly prepared soups, sandwiches, salads, and smoothies.
