Blouet has spent more than a quarter century perfecting his Café des Artistes concept, one that blends gourmet French techniques with highly curated Mexican flavors. The results are magical: A tuna tartare is stacked delicately with pickled vegetables, avocado slices, and crispy fennel; pork belly is served with hibiscus and red wine sauce; and shrimp comes with a plum-habanero mole. The setting is equally striking: A sophisticated dining room opens to a terrace with breathtaking views of Cabo San Lucas Bay and, in the distance, city lights.

WAMM’s menu offers selections for vegans, vegetarians, diners with allergies, and also those in the mood for a great chicken sandwich. The coffee is out of this world, especially with a little bit of the creamy coconut milk made in the café.

    Two Florentine brothers were inspired by the history of radio communication to name their cushy bar Mayday—and outfit it with vintage radios (set on the tables and hanging from the ceiling), black-and-white photographs, and tons of other vintage memorabilia. The drinks, too, feel of another time, with their focus on handcrafted preparations, small-batch liquors, and organic and locally grown ingredients. Sample everything from unfiltered brews made from Tuscan barley and wheat, to a rare Scottish whisky or a green tea–infused cocktail. The atmosphere is one of collaboration: There are nightly lively music performances, the walls are lined with art installations and exhibits, and patrons are encouraged to leave their own vintage mementos. Classes in mixology and infusion-making are also available, and are a fun way to hone your skills while mingling with locals.

    Southside is a treat for just about anyone who ventures over to its flagship location, in Napa. The café occupies a stand-alone structure in the middle of a parking lot and has attracted quite a following since it opened in 2016. In particular, locals love the specialty coffee from Wrecking Ball Coffee Roasters, as well as the freshly made food—especially on Fridays, when chefs prepare fried-chicken buckets with a full complement of sides. Southside also does weekend brunch and boasts a comprehensive list of Napa and Sonoma wines. In 2017, Southside opened an outpost at Stewart Cellars in Yountville, and a third location in South Napa is promised soon.

    After marching within 100 miles of London to restore the Stuart monarchy to the British throne, Jacobite supporters, led by Bonnie Prince Charlie, retreated to this site near Inverness in 1746. Here at Culloden, they were slaughtered by forces loyal to King George I and the House of Hanover during one of the most harrowing battles in British history. The aftermath was equally brutal, as a massive military crackdown across the Highlands followed in order to prevent further uprisings from disaffected Scots.

    Today, travelers can tour the richly researched Culloden Visitor Centre, which features artifacts from both sides of the battle as well as interactive displays that detail the background of the conflict. You can also walk the front lines where the Jacobites made their final stand, then look inside the newly restored Leanach Cottage—the only surviving building from the battle.

    A Hawaiian fantasyland on Oahu’s more remote leeward coast, about 40 minutes from Waikiki, Aulani is so seductive—for all ages—that many guests are loath to leave the property at all. And who can blame them? The beach is an idyllic cove (albeit a man-made one) stocked with kayaks, boogie boards, and everything else little beach bums could want. Then there are the three pools, including one for adults only and one filled with tropical fish for snorkelers-in-training, two impressive waterslides, and the biggest crowd-pleaser of them all, a 900-foot-long lazy river where guests, big and small, splash around on inner tubes as they meander around a faux-rock grotto. Goofy, Minnie, Mickey, and the rest—all in their vacation outfits—make occasional cameos at the breakfast buffet or by (sometimes, in) the pool. But while Aulani is most assuredly every kid’s dream, it is not every parent’s nightmare. The resort decor is more traditionally Hawaiian than obnoxiously Magic Kingdom; the lobby is built to recall an old canoe house, on a grand scale, and is covered in murals, painted by local artists, depicting island life. Hawaiian storytellers gather around a fire pit at night, and rooms have warm woods, with a single subtle reference to the Mouse King—a wooden carving of Mickey with a surfboard and ukulele that doubles as a desk lamp. Perhaps best of all, the Aulani has an outstanding, supervised kids’ club that’s free to guests ages 3 to 12. Babysitters are available for kids as young as six weeks old.

    Upon first entering the famed blue doors of Per Se, located inside the Time Warner Center overlooking Central Park, the dining room has the air of a wake, filled stiff collars and hushed tones. But no matter the attitude, the fact is that everyone in the dining room waited at least a month for this moment. At Per Se, you can only make a reservation one month in advance (maximum), and, if you procrastinate a day or two (say 28 or days or less before your desired date) you’ve likely missed your chance. (Do take note that you cannot cancel a reservation within seven days without being charged $175 per seat reserved.) This is an experience that will last up to four hours, where you are served from five to nine courses (depending on the menu you select), with many surprises in between, including personalized menus with your name and event (if you’re celebrating anything) on each. Now, if you’re still interested and not frightened away by the potential cost, then you’re in for an amazing afternoon or evening of small plates with the most amazing tastes you’ll ever come across. Do not be deterred by the portion sizes as you will most certainly leave full. It might even be best if you arrive on the borderline of famished, as it is a crime to leave anything behind.
