    When Dolly Parton came up with the idea for her DreamMore Resort, she was hoping to create a “front porch” for Dollywood, a place where families could relax and share time together after a day of fun at the park. To that end, almost every detail of the property is designed with families in mind, including 11 different guest room configurations with amenities like bunk beds and adjoining doors. The resort also offers discounted passes and a free shuttle to the theme park.

    An expansive pool area features waterfalls, a splash pad, and more placid areas for adults, all within view of the stunning mountains that surround the resort. For when parents need a break, there’s also a luxurious salon and spa with treatments designed to relax and rejuvenate. The food and beverage offerings at DreamMore aren’t fancy, but they offer good value for families, including an ample buffet at Song & Hearth and grab-and-go fare at DM Pantry. After the kids have gone to bed, end your day with a nightcap in The Lounge, which serves Southern-inspired cocktails in an old-timey ambience.

    Dromoland Castle, located in Ireland’s County Clare, was built in the early 1800s and served as the ancestral home of the Irish Gaelic O’Brien clan for eight generations. For big appetites, try the “Danger Fries,” hand-cut and fried in rendered pork fat, tossed with salt, fresh garlic and chives, and smothered in a bacon blue béchamel sauce.

    Before I went to Belize, anyone I spoke with who had already been told me that I had to have a meal at Elvi’s Kitchen. What started out as a take-out burger window in 1974 eventually became a sit-down restaurant serving lovingly prepared Caribbean dishes such as conch soup and fritters, mojo de ajo, fried green plantains, and street corn. During high season you might have to wait in line to eat dinner at the restaurant, but most of the time, there isn’t much delay. Save room for dessert. Elvi’s Kitchen is open from 11 a.m. to 10 p.m., Monday through Saturday.

    Nestled on a side street off Telok Ayer in Chinatown, this unassuming 40-seat restaurant with exposed-brick walls and funky local art earned a Michelin star in 2017 for its creative and very modern Australian fare. The ethos is simple: straightforward ingredients and surprising presentation. Take the signature Duck & Waffles—confit duck smothered in a spicy caramel sauce on top of crispy waffles. The wild venison with wasabi and zucchini is something wonderfully different, and so is the cuttlefish roasted pigeon. Beets with goat cheese, barramundi with leeks, and funky desserts like coconut with laksa-leaf ice cream make an indelible impression on foodies who think (and eat) outside the box.

    Located in East End Village and painted in Anguillan flag colors, the Heritage Collection is Anguilla’s only museum. It showcases the island’s history and geology from the time of the Arawaks to the 1969 Anguillan revolution, with additional displays on the British invasion (derisively called the “Bay of Piglets” by the press) as well as on Queen Elizabeth II’s royal visit. Established in 1996, its collection includes photographs and artifacts from the island’s major eras, including the days of slavery and the phosphate trade. If you’re lucky you’ll meet Colville Petty, the museum curator and founder, and garner some of his unique insight on Anguillan history.

    The Rossio railway station was designed between 1886 and 1887 by Portuguese architect José Luís Monteiro. It makes connections with the village of Sintra, and the 2,600-meter tunnel was excavated under the city. It is considered one of 19th-century Portugal’s most important works of engineering. It has a beautiful Neo-Manueline façade, where two intertwined horseshoe portals stand at the entrance, a clock sits in a small turret, and the sculptural decoration is abundant. Inside you can now find a Starbucks, Lisbon Destination Hostel, and a souvenir shop.

    The heart of Robert the Bruce, King of the Scots, is buried somewhere here, amid the magnificent ruins of Scotland’s first Cistercian monastery. Scholars believe Melrose Abbey dates back to the 7th century, though most of what remains today is about 500 to 600 years old. Being close to the border, it suffered at English hands during the Middle Ages. It was rebuilt in the 1380s, however, and used as an abbey until the Protestant Reformation of 1590. Today, visitors can admire the graceful architecture, take in the charming sculptures (look out for the famous bagpipe-playing Melrose pig); step inside the chapter house, where Robert the Bruce’s heart is supposedly buried; and tour the Commendator’s House Museum in the abbey cloister, which houses a rich collection of medieval objects.

    This light-filled adobe space, which opened to the public in late 2017, is dedicated to encaustic art. Encaustic, which means “to burn or heat” in Greek, is the result of mixing colored pigments into heated beeswax and resin before applying to a surface with a brush or tool. Because the wax has body, it can be sculpted into shapes as well as painted and layered onto a canvas. The nonprofit gallery has over 300 encaustic works on display, most of which are for sale (70 percent of each sale goes directly to the artist).

The club still hosts academic debates on issues of national interest, and its stately, wood-paneled dining room, hung with dazzling chandeliers, frames an elegant, historical setting for trying classic Argentine fare like roast suckling pig or revuelto gramajo (scrambled eggs with potato and vegetables).

It’s one of the few restaurants in the Gatlinburg area to source local ingredients, and the kitchen’s attention to detail shows. In addition to the signature gourmet burgers, there’s also a diverse selection of entrées that range from teriyaki kebabs to shrimp and grits. It’s also the place in the area with the widest variety of beers from around Appalachia—the diversity of Local Goat’s extensive tap lineup is impressive.
