As part of the renovation, the Ventana also built an on-site gallery to showcase paintings, sculptures, jewelry, ceramics, and photography by Big Sur’s most renowned artists. And the new Sur House restaurant—helmed by executive chef Paul Corsentino, who worked in New York and Chicago before heading west—houses a 10,000-bottle wine cellar that highlights small-production central coast wineries. Guests eager to embrace the region’s back-to-nature philosophy might appreciate a soak in the heated, clothing-optional Mountain Pool, undoubtedly more pleasant to ease into than the roiling, frigid Pacific Ocean just down the hill. You’ll essentially have a golf course for a backyard—specifically, La Jolla’s fabled Torrey Pines Golf Course, where you’ll get priority tee times.     Growing up in Indonesia, chef Ryan Simorangkir says he only craved kid’s food. But as an adult, he fell in love with the local street food of his home country and began to cook from family recipes. After attending Pasadena’s Le Cordon Bleu school, he opened Sama Sama Kitchen, co-owned with chef Tyler Peek, where he celebrates Indonesian cuisine in a warm, casual setting (the name means “you’re welcome” in Indonesian). The menu features renditions of traditional Indonesian street fare, like the signature wings, hot chicken bao, or crispy brussels sprouts. Salads are also a highlight here, including the crispy duck salad, green papaya salad, and market gado-gado. Pan-seared octopus becomes rich with leek and chili oil, as well as rendang remoulade. The black pepper tofu and broccolini may sound simple, but with garlic, scallion, ginger, and chili, it’s a dish that many return to over and over. Don’t skip dessert. Try the banana doughnut fritters or black sesame tres leches with spiced rum milk, and you’ll wonder if you should order an extra to take home.

    Narrow, deep, and steep, the Royal Gorge—also known as the Grand Canyon of the Arkansas River—is one of the biggest tourist attractions in Colorado. This 10-mile canyon near Cañon City, about an hour from Colorado Springs, is one of the deepest in the state, dropping 1,200 feet from the rim to the river below. The Royal Gorge Bridge and Park draws families and thrill-seekers alike. Built in 1929, the 1,260-foot-long bridge is the highest in the country, stretching 955 feet above the river—and it’s extremely popular with tourists, who walk across it to take in the fantastic views. It’s also the centerpiece of the city-run amusement park, where those looking for a bigger thrill can strap into the Royal Rush Skycoaster for a 50 mph free fall into the depths of the canyon or glide across it on a gondola or zip line. And if you’d like to experience the gorge from the bottom, the Royal Gorge Train departs from Cañon City, offering several classes of trains and service, with open-air and bar cars.

After shopping, stop at one of several cafés on lively Mohammed V Boulevard for freshly squeezed orange juice or a coffee strong enough to make your nerves jangle, and watch the world wander on by.

    Australian-Vietnamese celebrity chef Luke Nguyen has put his energy into creating fresh, modern, healthy renditions of Vietnamese street food and traditional family recipes at Moi Moi, his new Hong Kong restaurant. A master at balancing sweet and sour tastes as well as spicy and bitter, Nguyen gets big raves for his food, especially the panfried rice cakes topped with tiger prawns and caramelized pork neck. Other hits include green tea–smoked duck in rice-paper rolls, citrus wild salmon, caramelized Kurobuta pork belly, a pho made with raw Wagyu beef, and slow-braised free-range chicken drumsticks with coconut juice, fish sauce, ginger, and garlic. Moi Moi has an extensive and creative cocktail menu to accompany the feast.

    It seems criminal that what many consider the best barbecue in Charleston comes from a Texas pit-master, but such is the nature of a global food scene in a thriving culinary city. John Lewis arrived in town with focus and intention, constructing an array of smokers that slow-cook hundreds of pounds of brisket, pork, and “hot guts” (sausage) each day. His expansive, counter-serve joint accommodates grab-and-go meals as well as extended feasts, for at least as long as diners can fend off the meat sweats. If you’re indecisive—which is natural at Lewis Barbecue—opt for the Sancho Loco, a mountain of a sandwich that piles guts, pickled red onions, pulled pork, and chopped beef between two slices that do their best to accommodate the onslaught of sauce and smoky flavor. Regulars know not to miss the green chili corn pudding—it’s a taste of Texas that’s more than welcome in the Lowcountry.

The presentation is almost so pretty you don’t want to disturb it, but let that moment pass and dig in. Pair your meal with any of the limited-run, small-keg draft beers; the rotating new beers in the beer fridge; wine from the bottle shop—or surrender to the experts and let them do the pairing for you. Whether you sit indoors or outside, the California spirit blends with Singh’s and Parr’s beloved India, making the restaurant what the owners call a “good-time place.”
