    Bear Mountain Lodge has had many lives since it was first built in 1928. Back then, it was a school for unruly boys from the East Coast; later it became a country club and hotel for the well-heeled; and before artist-turned-innkeeper Linda Brewer bought the property five years ago and turned it into a 10-room lodge, it was owned by the Nature Conservancy. It’s fitting, then, that nature is the main attraction at the lodge, which sits on 178 acres and has horses, cows, and chickens, plus birds and butterflies and a pond that’s home to the endangered Chiricahua Leopard Frog. The Gila National Forest—at 2.7 million acres, the largest wilderness area in the Southwest—is the lodge’s back yard. If you find yourself missing civilization, Silver City is just over three miles away, but escape is really the point here. And while there is Wi-Fi, there aren’t any televisions.

    While many area hotels offer a subtle interpretation of Southwestern design (adobe walls, kiva fireplaces, local art), there’s nothing understated about the Inn at the Five Graces. The inn is a showcase for designers Ira and Sylvia Seret’s far-flung finds: Navajo bedspreads, Uzbek and Pakistani rugs and tapestries, iron and woodwork from Mexico, Peru, and India. It’s the epitome of East-meets-West. First opened in 1996 as Serets’ 1001 Nights, the hotel is located on one of the country’s oldest inhabited streets and is comprised of 17th- and 18th-century adobe buildings connected by a maze of courtyards. In 2002, the inn was renamed to reflect Afghan and Tibetan artifacts in its collection and the eastern idea of the five graces (sight, sound, touch, smell, and taste). In 2009, it became a Relais & Chateau property.

    Po’boys are on just about every New Orleans visitor’s list of must-eats. They’re a longtime local favorite—built on long, thin-crusted bread that is satisfyingly audible on first bite. Killer Poboys embraces tradition and then adds to it, with inventive fillings that go beyond the traditional roast-beef-and-fried-oyster, like rum-glazed pork belly with lime coleslaw, or roasted sweet potato with a black-eyed-peas-and-pecan spread. Two locations are around the corner from one another in the French Quarter; one of them operates in the back of the Erin Rose bar. If it’s not too busy, order your sandwich there and enjoy it with a frozen Irish coffee.

    Every city worth its salt has at least one great pizza joint. So why go out of your way to visit this one? Three reasons: (1) the pizza, (2) the neighborhood, and (3) the pizza. The eatery started as a delivery pop-up, with thin-crust pies made in a shared kitchen, and its hours and phone number shared among Bywater residents like state secrets. The name proved as accurate as it was uncreative; demand was vast, and the place finally landed its own spot. Pizza Delicious doesn’t attempt to be cute or overly wry with toppings, but it sets itself apart with fresh ingredients and an eye to perfection. Pro tip: Get a pie to go and head over the arching footbridge at the end of the block and enjoy dinner at Crescent Park with its waterfront view.

    The city’s most famous snowbird, architect Frank Lloyd Wright, spent winters at his home and architecture school in the Sonoran Desert. Taliesin West brings the horizontal lines and organic materials of Prairie School design to the desert landscape in low, skylighted buildings. Behind-the-scenes tours visit the pop-up structures that students have designed as living spaces amid the barrel cactus and paloverde trees.

    Hiroyasu Kayama is both scientist and bartender at this bar on the ninth floor of an office building. Kayama has a collection of dried herbs, spices, and even bugs on the shelves behind the bar. The best seats are at the counter, where you can watch as Kayama creates from scratch a Campari using cochineal insects. To witness the red color come to life gets your mouth wet for the drink that awaits. The absinthe made with wormwood should also be on your radar. Best to tell Kayama what cocktails you like and let him recommend something for you.

    The bartenders at Ben Fiddich don’t complicate your experience with a menu. Tell them your mood and sit back while they craft something according to their whim. Say, a whiskey drinks filled with burnt herbs whose smoke steams your glass or a homemade Campari Negroni.

    Described by Napoleon as the “Drawing Room of Europe,” Venice’s principal public square is dominated by Saint Mark’s Basilica and the Doge’s Palace—as well as its famous pigeons. Wander the framing porticos, have coffee at Quadri or Florian’s and just take it all in. Even on the most crowded days, there’s a feeling of calm in the eddying whirls of people who gather in this impressive space.

    In what is considered one of the earth’s greatest spectacles, over a million wildebeest make their way from Tanzania’s Serengeti to Kenya in search of lusher grasslands. The great migration is a very good reason to visit the diamond in Kenya’s crown of national parks, the Masai Mara. The most dramatic scenes take place at the river crossings, where the wildebeest slip and crash down the steep embankments of the Mara River into crocodile- and hippo-infested waters and, if they get through that, still have to gallop past the Mara’s high density of lions awaiting them on the other side. The best time to see the migration here is between the months of July and September. Porini Lion Camp is an excellent accommodation choice, with knowledgeable guides and a responsible approach to protecting the delicate Mara ecosystem.

    Visitors flock to southern Arizona for sun and saguaros... ...but for a hole in the ground? Other than the ones on golf courses? From the 1960’s to the 1980’s, Tucson was ringed by eighteen steel-and-concrete-reinforced holes in the ground--highly secure shafts in the desert that housed intercontinental ballistic missiles tipped with multi-megaton nuclear bombs. “Peace through Deterrance” was the idea, as the propaganda-phrase goes... Of the 54 Titan Missile complexes that were scattered around the country, only this one, about 45 minutes south of Tucson, has been preserved and opened to the public. It’s a startling reminder of how thin the line was that separated the “Cold War” from “M.A.D."--"mutual assured destruction.” It would only have taken 30 minutes from its desert launch for this missile to deliver unimaginable destruction--via a 9 megaton nuclear warhead--up to 6300 miles (10,000km) away... On a lighter note, some of the filming of one of the Star Trek films took place here. You can visit the subterranean control bunker and staff living quarters, access corridors, and the missile silo itself. Tours are offered on the hour year-round, with additional tours offered every thirty minutes from January through April. Closed Christmas and Thanksgiving. Whether you’re coming from the left or from the right, politically, the sobering reality of this fusion of human nature and technology is worth going underground for if you’re driving down I-19.

    Yes, New Mexico actually has an official “state question"--since 1996, referring to the ubiquitous chile sauce, it’s “red or green?” Fortunately you don’t have to choose just one; the local way to say ‘can I have both’ is just one word: “Christmas.” If you’re driving through New Mexico on the way to Arizona and points beyond, the only town of any size on I-40 between Albuquerque and Flagstaff is Gallup. For road-trip food here, get away from the Interstate and its humdrum chain restaurants. Seek out Jerry’s--a block off old Route 66. You can’t miss the retro neon sign, and there’s often a line out the door for its New Mexico-style fare. Gallup is surrounded by Navajo, Hopi, and Zuni lands--you might well be one of the few non-Native-Americans eating here at breakfast or lunch. The restaurant allows local vendors to come in and show their wares--usually jewelry and bracelets--while you eat. (You can request a ‘do not disturb’ sign for your booth if you want.) “Hole in the wall” gets overused, but Jerry’s definitely fits that description. Nothing pretentious here--but the flavor of the chile sauce is as good as you’ll find in Albuquerque or Santa Fe. A recommendation: the flat cheese-and-onion-enchiladas, topped “Christmas” style with a fried egg on top. And don’t forget to sop up the sauce with the sopaipillas, saving some of the frybread to top with honey as a dessert afterwards...

    College-town hiking aficionados usually know where to eat, so when the guys up the street at Babbitts Backcountry Outfitters told me this was one of the best places in town for weekend brunch, I went. A lunch-and-dinner place during the week, Criollo Latin Kitchen opens up on weekend mornings with offerings from blue corn pancakes to pork belly tacos, with poblano cheddar grits, sweet ancho chili sausage gravy, and Haitian ‘ti-malice'-inspired relish to go with eggs over easy. And along with the artists’ paintings that change monthly, the food is “local” as well—the menu and the chalkboard on the wall will let you know the ranches and farms in Arizona and Colorado that are the sources for Criollo’s organic ingredients. On this particular morning, I had the “huevos motuleños,” the Yucatán’s version of “huevos rancheros.” And get some bacon—it’s hearty, comes from Black Mesa Ranch in the White Mountains, and will make you want to bring the word “toothsome” back into popular usage. Even if you’re just passing through Flagstaff on your way to the Grand Canyon, or driving from Albuquerque to Los Angeles, Criollo is worth a stop. It’s just a block north of historic old Route 66 downtown. (Criollo is owned by the same folks who opened the nationally-renown “Brix” just up the street—Flagstaff is becoming a restaurant mecca—and its newest sister restaurant is “Proper,” way down the road in Tucson. “Taco Tuesday” evenings with inexpensive margaritas can be crowded.)

    This is my favorite Scottsdale resort because it gets Southwestern style down without being kitschy or over-done. There are no cheesy dream catchers or Kokopelli statues here – just a color palette as bright and breathtaking as a desert sunset. Four Seasons Resort Scottsdale is perched in the city’s northern half, and surrounded by miles of Saguaro cacti and rugged rocks. Its location adjacent to Pinnacle Peak Park is perfect for hikers and if you crave more of an adrenaline rush, check out the high-octane tours from Arizona Outback Adventures. At Proof, the resort’s American canteen, dinner is practically a cross-country road trip with home-style comfort food inspired by, and sourced from, the 50 states. Plus, there’s a hearty list of wine, microbrews, and small batch and craft distilled American spirits. The Spa at Four Seasons also celebrates the resort’s sense of place with treatments like the Sonoran Honey Body Polish and Jojoba and Prickly Pear Polish.

    The Review:
    Open from early April to mid-November, this resort pitches luxurious, cabin-style tents on the striking pink-and-scarlet desert. Even the basic Safari tents feature king-size beds and wood-burning stoves, though guests who opt for these accommodations must use the communal bathhouse for hot showers and flushing toilets. Suites up the ante with en suite bathrooms and private decks, while Stargazer options include king-size beds under arched viewing windows.

    While Under Canvas goes light on brick-and-mortar amenities, it delivers plenty in the way of rustic charm and modern conveniences. Expect daily housekeeping, organic bath products, and USB battery packs in your tent, plus complimentary camp activities and a fire pit with nightly s’mores. The adventure concierges can also arrange hiking, mountain-biking, horseback-riding, and white-water rafting excursions as well as canyon helicopter tours and Jeep safaris in the Kaibab National Forest, during which guests can spot elk and turkey while exploring native petroglyphs, old stagecoach trails, and the area’s spectacular geology. When hunger strikes, head to the on-site restaurant for everything from breakfast burritos and boxed lunches to pan-roasted trout and grass-fed burgers.

    It’s about a ten-mile round-trip, but a summer hike up to Goat Lake in the Central Cascades will reward you with a glacially-colored mirror of snow-clad crags and distant waterfalls. An easy day-hike from Seattle (if you get up early), it’s also just low enough in elevation so that the trail is usually snow-free by late spring. The day I went, my friend and I had the trail almost to ourselves...Switchbacking up through the dark woods, the roar of McIntosh falls lets you know you’re almost at the top...and then you emerge from the woods into the lake-filled clearing--ethereally colored by the glacially-ground rock particles in the water... We met a couple of guys who’d spent the previous night camping above the alpine lake. Then a crew of Forest Service summer workers arrived, with good spirits, ready advice, and machetes for trail-maintenance. It’s about a 1hr45min drive to the trailhead from Seattle.

    My wife, Robin, and I have been camping, fishing, and hiking in the Lakes Basin area, near Sierra City, since we met. These days, our usual home base is a tiny log cabin at the edge of Packer Lake, pictured here. From trailheads around Packer you can hike to many other lakes--Saxonia, Deer, Lower and Upper Tamarack, Young America, Upper and Lower Sardine. Most of the hikes are relatively easy, and on some trails you’ll rarely encounter other hikers. In early October 2007, a brief, unseasonable storm passed through and carpeted the area with an inch or two of snow, which made for an especially invigorating walk along the Pacific Crest Trail to the lookout at the top of the Sierra Buttes.
