    Another food-truck-made-good in a permanent location, Molly Moon’s now has five locations around town, but still sends out its iconic baby-blue truck for special events — just follow your nose to the heavenly scent of their freshly made waffle cones. Flavors range from classics like vanilla bean and strawberry to local specialties like Theo Chocolate or Stumptown Coffee (pro tip: get those two swirled together), with more adventurous rotating seasonal flavors (current offerings include blackberry bergamot and watermelon mint sorbet). Locally sourced, organic ingredients are the emphasis here. They also have vegan options and pints to go, as well as plenty of merchandise featuring their goofy-cute pug mascot, Parker Posey.

    Just southwest of Astoria, Fort Clatsop replicates the encampment built by Lewis and Clark’s Corps of Discovery soon after they reached the Pacific. From December 1805 to March 1806, they hunted and gathered food, distilled salt, traded with the local tribes and documented their surroundings. The center includes the log fort (staffed by costumed rangers), an exhibit hall, a gift shop and films, plus trailheads for the Fort to Sea Trail and the Netul River Trail.

    Foodies from all over flock to Mama’s Fish House for ocean-to-plate dishes in a postcard-perfect setting. At this tiki bar meets restaurant, the fish is delivered daily by local anglers and many dishes showcase regional ingredients like Maui onions, Hawaiian chili pepper, and Hana ginger. As a young couple in California, owners Floyd and Doris Christenson fell in love with Maui while on vacation. In 1960, they sailed back across the Pacific, navigating only by sun and sextant, and anchored back on their dream island, where they eventually opened Mama’s. Today, the hot spot can be crowded and pricey, but few begrudge the premium for the fresh fare and stunning panoramas. Make a reservation well in advance for an ocean-view table.

    As the first boutique hotel in Koreatown, the Line might have been able to get away with cutting a few corners while still attracting a cool clientele. It probably didn’t need to get the hottest young Korean-American chef in L.A. on board (to run one of the most comprehensive and exciting restaurant and bar networks yet seen, by the way), nor did the Sydell Group—the arbiters of cool behind the Nomad Hotel in New York—have to put their stamp on it. The hotel would have been nice enough had the concrete midcentury building not been entirely reimagined by designer Sean Knibb, known for designing half the cool spots in L.A. and more than a few celebrities’ homes. There didn’t need to be a desert greenhouse–inspired pool deck that’s become a hangout for beautiful people at all hours, nor did the famously trendy Houston Brothers (of no Vacancy and Harvard & Stone) have to throw in a midcentury-inspired cocktail bar. Nor did the typical hotel gift shop have to be reimagined as a design and lifestyle store curated by Poketo. The rooms and suites would have been just fine had they not been turned into artsy, industrial-style lofts, outfitted with original commissioned artwork, a minibar of Korean and Western snacks, and Baxter of California toiletries. Of course, all of this did happen, and now Koreatown is home to one of the hottest hotels in L.A.

Or opt for a more contemporary twist with anything from onions to avocado aioli, perhaps paired with a side of crisp kimchi cucumbers. Be forewarned: This casual spot runs on island time so don’t expect exact adherence to business hours.

The decor here feels like a minimalist version of 1920s Paris, with aged walls, mismatched light fixtures, and a mosaic entranceway. Equally charming, the eclectic bistro fare ranges from pistachio-rosewater Belgian waffles to halloumi couscous and a harissa burger, spiked with preserved lemon and tucked into a pita with baba ghanoush and two fried eggs. Don’t miss the blistered flatbread, ideally paired with the honey-black-pepper mascarpone side. And finish with a lavender latte, a house-made turmeric soda, or a superb craft cocktail. If you don’t want to wait, skirt the crowds by visiting Tuesdays or Wednesdays for lunch, or arriving at 2 p.m. (an hour before last call).
  • Just 45-minutes north of Belize City, Altun Ha is a complex of Mayan ruins dating back hundreds of years. Once the “treasury” for the Mayan people, Altun Ha is one of the most important Mayan sites in the country. Go on a tour of the place with Foolish Dreamzzz, a locally owned operator that will take your group at any size (and the price per person doesn’t change, whether you’re in a group of one or ten). Ask for Kendis Ferguson, the owner and a former history and social studies teacher. He and his company go above and beyond to make sure guests have all their questions answered, and he’ll even make sure you get to climb to the top of the ruins—something not a lot of tour guides in the area make the time to do. The views from there, of course, are amazing.

    There are few places where you can better learn about the beauty and complexity of desert ecology than the Desert Botanical Garden, not far from downtown Phoenix. Check out the Desert Discovery Loop Trail for a look at local flora, go for a flashlight tour or cooking class (using plants found in the region, of course), or catch one of the musical performances that are part of the garden’s concert series. Make a point to visit the Desert Terrace Garden for the best views of the surrounding buttes and desert.

At Tarsanas, wooden tables are lined up along the pier. The yachties know that the Kaloskami brothers have their own caïque, so the catch of the day comes straight from their boat to their grill. In addition to simple grilled fish, these guys have a thousand ways with seafood, including red mullet ceviche, sea bass sashimi, creamy fish soup, and whole bream baked in a sea salt crust.

The incredible Salishan Spa, Shops at Salishan, and golf pro shop and golf course are also steps away. Rooms are newly renovated, polished, bright and large. I stayed in the Chinook section and our private patio looked through large firs to the captivating bay across U.S. Hwy 101, perfect for sitting in the rocking chairs with a glass of wine.. The food is also revitalized with Executive Chef Andrew Garrison at the helm, and along with visionary General Manager Steve Hurst they are making a name for themselves in terms of guest care and the jewel of a restaurant here called Samphire. The name Samphire is the name of a salty tasting water plant found nearby. Chef Garrison uses it frequently to ramp up the flavors in his straight-from-the-farm, forager, cheese maker, or fisherman, in his flavorful and fresh cuisine. Tip: Samphire is so popular, book a dinner seating when you make your hotel reservation. So head out to the gorgeous Oregon Coast soon and plan to stay here. You’ll be surprised and delighted. And may not want to leave.

A permit can easily be obtained through your guesthouse or hotel, and a forest guide can be hired at the reserve. The 18,000-acre park offers various hiking trails: The Edmund Rainforest Trail is a four-hour, seven-mile strenuous hike concluding with a view of Mount Gimie. A less intense hike is the Des Cartier Rainforest Trail, on relatively flat terrain, with plenty of flora along the way. Bird-watchers will love the Millet Bird Sanctuary Trail, a two-mile loop through the habitat of over 30 species, including the St. Lucian parrot and hummingbirds.
