Visitors to Japan can’t get over how good (and authentic) the Italian food is. The Pizza Bar on the 38th floor of the hotel is a prime example. With eight seats and a brick oven, your meal quickly becomes a cozy affair as you chat with master pizzaiolo Luca Otsu. The pizza dough is made with Italian organic flour using just one gram of yeast and 80% water for a 48-hour fermentation to create the very lightest and digestible crust. The pizzino sandwich with mascarpone, black olives and truffle essence is surprisingly light and a must try.
