Don’t let Portland’s low-key, outdoorsy-hipster vibe fool you: the Heathman Hotel is as grown-up and refined as they come. Opened in 1927 as an expansion of one of the city’s grande dame hotels, the Heathman continues to set the standard for classic luxury in the City of Roses. Rather than rest on its laurels, though, the hotel has consistently upped the ante, collecting a museum-worthy array of modern art (including a handful of Warhols alongside works by acclaimed local artists), boasting one of the most impressive collections of autographed books in the world, and offering guests a choice of mattress in the sumptuous rooms. Indeed, so famously decadent and romantic is the Heathman, with its award-winning restaurant and almost-nightly live jazz in the bar, that it was used as the setting for several of the rendezvous in E.L. James’ infamous Fifty Shades of Grey—although, for most guests, the original crystal chandeliers and marble fireplaces inspire magic enough.

If you’ve never been to the Marin Headlands, you MUST go! The views are stellar, but make sure you get there early (well, early enough to get there before all the tourists!) Ht up the headlands for a nice hike and view and then drive to Bar Bocci in Sausalito for lunch or dinner. You won’t be disappointed.

Vancouver’s most famous urban space, the thousand-acre Stanley Park, epitomizes everything that locals here love about the outdoors, and visitors have many ways to explore the expansive grounds. Hiking trails weave around totem poles and hemlock trees, while at the beaches, you can swim, people-watch and picnic. Rent a bike or a pair of in-line skates for a scenic ride along the Seawall, or wander through the many gardens where rhododendrons, azaleas and roses bloom.

Brunch lasts nearly all day at Crema in Pacific Grove, and you need that time to explore the array of separate quarters in the restaurant’s converted Victorian mansion. Investigate the historic photos, antique furniture, and artistic decor in the downstairs espresso café and wine bar; grab a spot with friends in the garden courtyard or in the dining room upstairs; or keep to yourself in the studious Peacock Room. Once you’ve found your favorite nook, enjoy fizzy and floaty drinks, rich egg dishes, golden waffles, or house favorites like the bacon cheddar biscuits that are football-size and accompanied by honey butter. As the day progresses, Crema is a favorite stop for friends to get together, often over games of Jenga, Battleship, Scrabble, and Yahtzee—all available to borrow from the espresso bar. Pro tip: The goblets of fruity sangria and the Micheladas served with a slice of country bacon are as good in the morning as they are in the afternoon.

The small “motu” islets surrounding many of the islands are the perfect spots to enjoy an al fresco island feast. These miniature, palm-covered paradises offer a get-away from the big island and you’ll get a taste for paradise in the buff. You won’t find roads, cars, markets or restaurants, just secluded atmosphere, pristine surroundings and a romantic ambience. Plus you get a unique view perspective of the Pacific Ocean and the lush mountains of mainland Tahiti. Motu Martin (Motu Au’) is the only private island in the North East Coast of Tahiti. At the beginning of the 20th century, a physics professor in Massachusetts inherited a ton of money. He promptly headed for the South Pacific, settling there and founding what’s now the Harrison Smith Botanical Garden. Maybe Smith had a slight Noah complex: He brought in plants from around the world, which means an African flower might sit next to a South American fern. The problem is that he inadvertently killed off the native plants with his imports. Still, the garden is a lovely spot to wander around, a sampler box of world botany.

The Grape de Vine is one of the spa’s four signature 80-minute treatments, and it begins with a exfoliation using a grape-seed body scrub, followed by a full body massage with rose and lavender essential oils. Spend the day using the sauna, steam room, or pool, or zone out the upper level relaxaton room. Special treatments for teens are also available.

L&L, in Tumon Bay, offers the Pacific’s most popular dish: Spam. Order a classic Hawaiian plate lunch (macaroni salad, rice, a meat) with Spam musubi (grilled Spam atop rice and wrapped with nori seaweed), kalua pork and more. The food’s cheap and filling at this local favorite.

In Panama you really can buy cheap and cheerful, even when it comes to exclusive boutiques and high-end labels, because of low import duties. In truth it seems as if there were a new mall opening every day, like so many mushrooms after a rain. Albrook Mall is the widest-ranging, and out-of-towners love it. Multiplaza Pacific is swankier, with prices to match, though there are perennially great sales, too. Finally there’s Metromall, the saving grace of shopaholics who have only a few hours between planes (it’s near the airport, and there is a free shuttle service there and back).

Located four miles south of Carmel on a coastal stretch known as the Gateway to Big Sur, the Hyatt Carmel Highlands feels like a true retreat, one that’s in easy reach of both civilization and wilderness. The 48 rooms (including 11 suites) all have wood-burning fireplaces and views of either the property’s gardens or the craggy coastline. Known since its beginnings in 1917 as the Highlands Inn, the boutique hideaway has been a repeat destination for generations of Californians, as well as legendary celebrities like Ansel Adams, Elizabeth Taylor, Marlon Brando, Julia Child, and Robert Redford. California Market at Pacific’s Edge sits overlooking the ocean (locals prefer the outdoor seating for lunch, especially after a hike at nearby Point Lobos), and its local, seasonal ingredients are featured in dishes like ceviche, fish tacos, and Dungeness crab cakes. Take one of the complimentary mountain bikes on a local adventure or relax at the heated outdoor swimming pool. In-room spa services and a fitness center keep wellness top of mind, although a workout may be the furthest thing from your mind when you’re enjoying a cocktail at the Sunset Lounge as the sun sinks into the Pacific Ocean.

The Marine Room faces the Pacific Ocean and is the only place in San Diego where you can eat great food in a cozy atmosphere while the surf pounds the glass. Don’t even bother coming here unless it’s during high tide. When you visit San Diego- just check the tide charts and then call the Marine Room to reserve your breakfast spot during high tide. They do an elaborate buffet and I was actually impressed at the quality of food. There’s something for everyone. The set up is buffet style, but the food is definitely not! From wild caught salmon to pastries to breakfast meats- there’s something for everyone. Recommended: Definitely check the restaurant website before reserving your seat. And definitely reserve a seat!

Surprisingly enough, you can round the point at Point Dume and discover your own hidden nooks to spend the day. With cliffs at your back and a private beach with decent size waves in front of you, it’s not a bad place for a picnic.

This five-star beachfront hotel toes the line between being a hub of activity and a luxurious, only-in-Southern-California hideaway. For restoration, head to the sprawling spa for a customized wellness-oriented treatment or a meditation class. Mind cleared, make your way to the on-site outfitter Compass Sports—where staff will coordinate local mountain biking, paddleboarding, hiking, and surfing expeditions—or to the palm tree–lined, mosaic-tiled pool. Big ocean views and a light, airy design define the 250 rooms; for guests seeking extra solitude and space, there are bungalow suites, which are essentially private beach houses. At the hotel’s three eateries, it’s all seasonal all the time, from the fresh morning juices to evening cocktails. That ethos peaks at the fine-dining restaurant Studio, where executive chef Craig Strong creates elegantly plated French-meets-California dishes using locally sourced fish and meat, along with vegetables picked from the hotel’s 1,000-square-foot garden. Pro tip: In a setting this transporting, you almost want to break into song. Good news—the hotel will rent out mini guitars to guests for the duration of their stay.
