Set directly across from the Art Institute of Chicago, this former members-only men’s gymnasium is now the Chicago Athletic Association, which is part of Hyatt’s Unbound Collection. Enter at street level off Michigan Avenue and walk toward the back to find a staircase that leads to the old swimming pool, now a venue for parties and pop-up concepts. Take the nearby elevator to the restaurant, Cindy’s, easily the best rooftop scene in the city, with highly Instagrammable terrace views overlooking Millennium Park, the swooping Frank Gehry–designed bandshell, and Anish Kapoor’s Cloud Gate (aka the Bean).

Park yourself in the second-floor lobby and hang with locals as they tap away on their laptops and sip lattes by the two oversize fireplaces. Walk through that expansive by Roman & Williams–designed room, where light beams in through ornate stained-glass windows, and you enter a warren of table games and darts, all festive and typically open to the public. There’s also the secret six-seat bar, the Milk Room, a relic of Prohibition, and the James Beard Award–winning Cherry Circle Room—a sexy, dark restaurant with a circulating martini cart and a meat-centric menu.

Upstairs in the 1893 landmark, 240 guest rooms reflect the building’s former life, with gym horses as foot beds, working fireplaces in some rooms, plasterwork ceilings, ornate carved wood wainscotting, and a clubby vibe. When it opened in 1996, the Belmond Miraflores Park was the first hotel in Lima to take advantage of the city’s Pacific Ocean views. Every Thursday night during the months of November to June, San Jose de Cabo’s galleries stay open late for Art Walk. In 1959, the Pisani family patriarch bought the historic Villa Refalo, intending for it to be a home for him, his wife, and their six children, as well as a restaurant. When he died unexpectedly, his children took over the property, first turning it into a wedding hall, and then a luxury hotel called Corinthia Palace. Even though the Pisanis have since expanded the Corinthia brand to 14 hotels around the world, they still own and operate the Malta original, running it with all the amenities required of a five-star stay. Here, guests find five bars and restaurants, a swanky outdoor pool and garden area, tennis courts, a deluxe spa and fitness center, and friendly, attentive service. The afternoon tea, served in your choice of British or Maltese style in the Orange Grove Brasserie, is a must, while the daily breakfast spread is generous and tasty.

Ranging from superior rooms to executive suites, accommodations feature comfy beds and private balconies or terraces. All come with complimentary access to the Athenaeum Spa, but higher category options also include entry to the Executive Lounge, where guests can enjoy a daily breakfast buffet and complimentary wine, spirits, and canapés each evening. For those of us used to seeing chicken cut into parts, wrapped in plastic, and cooling in supermarket refrigerators, a trip to a local Peruvian market is fascinating and a bit daunting. At the biggest market, San Pedro, just up the street from the Plaza de Armas, you’ll find fruits, vegetables, alpaca charqui (the Quechua source of our word jerky), pig’s heads, herbs, fruit juices, weavings, and much, much more. You’ll see a fair number of foreigners wandering here as well, so for an experience that feels more authentic, try San Blas Market or Rosaspata, both off the tourist track.
