    Carne SA is unapologetically about meat, meat, and more meat! Every cut of beef, lamb, or venison will be paraded in front of you with pride before it’s cooked to perfection. Most of the meat comes from the Nieu Bethesda farm of owner/chef Giorgio Nava (whose Italian background accounts for the Milanese touch in many of the dishes). Even though there are now three spots in the city , the original, on the Keerom Street cul-de-sac remains a favorite.

But make no mistake—this 21-and-up property is an upscale, high-style destination. Built in 1951, the 28 rooms and communal spaces were originally designed by pioneering architect Herbert W. Burns, one of the major forces behind Palm Springs modernism. A 2017 update by lauded interior designer Mark D. Sikes reinvented the hotel, giving fresh life to its clean lines with curated artwork and a cobalt, white, and warm wood palette (even the bicycles match). Accommodations are organized as Good, Better, and Best—and the latter is well worth it for the soaking tub and outdoor shower. The pool scene is laid-back and refined—waiters serve rosé flights between guests’ dips in the water—while an honor-system pantry is stocked with such desert “essentials” as sparkling water, straw hats, and potted succulents. Pro tip: Make a reservation in advance for the al fresco Friday night fried chicken dinner, which draws a crowd for its locally sourced chicken, delivered fresh that day and served with comfort-food sides.

    Located in Old Québec, not far from the St. Lawrence River, the Musée de la Civilisation (Museum of Civilization) is an enormous (for Québec City, at least) museum with lofty ambitions. Exhibits cover just about every culture imaginable—at any given time you might find Greek sculptures displayed alongside totem poles, or an inquiry into Egyptian ideas of the afterlife juxtaposed with Australian Aboriginal artworks. Most of the time you can count on at least one exhibition focusing on some aspect of Québecois or Canadian culture, from the history of trapping to spotlights on individual Québecois artists and designers. Many of the exhibits, like a recent one focused on cats and dogs, are designed with kids in mind, with engaging, interactive installations. Even if you’ve been here before, every visit to the museum is, by design, a new experience.

A wide-ranging wine list and tempting dessert menu help round out the evening.

    With the smallest room a sprawling 400 square feet, and suites and public spaces filled with original 18th- and 19th-century art and antiques, the George V, flagship of the Four Seasons chain, lives up to its billing as a palace, an official tourism category introduced in 2010 requiring establishments to “embody French standards of excellence and contribute to enhancing the image of France throughout the world.” Set in a 1928 art deco building, the Four Seasons Hotel George V boasts a regular clientele of bona fide royals, including Saudi princes who rent entire floors for six weeks at a stretch. The staff includes a team of flower designers led by an art director who worked on Chelsea Clinton’s wedding. There’s also a dedicated concierge for children ordering up pint-sized bathrobes and private pastry-making lessons in the Michelin-starred kitchen.

Pungent spices are displayed in black glass jars with custom labels, hand-thrown serving wear is stacked in elegant totems on the wood shelves, and a fat-bellied AGA stove stands against a wall of spotless subway tile. If you aren’t a home cook, you will vow to become one after a visit to March. The proprietor, the perpetually chic Sam Hamilton, came from New York and a career in fashion before finding her way here. She even interned with Alice Waters for a spell at Chez Panisse, which helps explain Hamilton’s knack for curating items—like handwoven tortillero baskets, Parigi stemware, and fishmongering knives by Pallares Solsona—that aren’t just beautiful but also useful to cooks who actually put their kitchens to work.

    Surrounded by 40 pristine sand- and grass-topped acres, endless water views, and the sound of crashing waves, Bekal Fort—the largest fort in Kerala—feels like it rose up from the sea. In fact, it was built some three centuries ago as a defense post, lingering evidence of which includes the old ammunition storage areas and the cannon windows lining the outer walls. Today, visitors can wander around the complex, climbing up the observation tower, strolling around parts of the original walls, venturing out to the waterside walkways, and picnicking on the main lawns. (Along with the history and scenic beauty, the filming of some hit movies here has made the fort even more popular with domestic tourists.) After exploring the site, head down to the beach for some sea air and views of the fort from a different vantage point.

For one, the seafood on offer—traditional, even homey recipes, impeccably prepared—is among the freshest available. Service is quick, yet warm and enjoyable. It brings in a well-dressed, deliberately coiffed crowd that loves table-hopping, seeing and being seen, and air-kissing; but most of all, they relish digging into house specialties like the fish carnitas, the legendary tuna tostadas, and the grilled pescado a la talla (ordered by weight, and served in a red adobo or a parsley rub). Some afternoons (especially Fridays) you can’t believe the waiters have actually squeezed one more person in, yet everyone is very glad they came. Desserts are especially recommended. Open for lunch only—which may explain the sense of urgency at the door.

    Who would have expected that an ancient order of nuns would be generating buzz in Québec City’s restaurant scene? The Augustinian Sisters have been present in the city since the 17th century, devoted to caring for the poor and suffering. But as their numbers declined the nuns chose to venture in a new direction, and in 2015 they opened a wellness hotel and a restaurant. The menu is limited—soup, a salad bar loaded with grains and roasted vegetables, and a choice of a chicken, fish or vegetarian entrée. On a recent visit, a dish of chicken and wild rice in green curry sauce proved to be one of the most memorable meals in a city of excellent restaurants. The money raised by the hotel and restaurant helps support the nuns’ outreach programs—which makes eating well feel even better.

    The charm is simple—and highly photogenic—at this 1947 property, where old western actors like Roy Rogers used to get away between takes. When new owners bought the ranch in 2016, they began renovating bit by bit, outfitting the rooms with vintage-inspired Smeg refrigerators, turntables, Coleman lanterns, and Pendleton wool blankets. The accommodations vary wildly, ranging from four original knotty pine–paneled cabins to midcentury-modern rooms in the lodge to a glass-and–corrugated metal duplex called the Hatch House, which Lloyd Russell designed in 2008. There’s even an option to stay in a remodeled 1960s Airstream, which features a live-edge wood bar with copper inlays. True to its original intent, the 11-acre ranch is laid-back and without pretense, the kind of retreat where hikes in neighboring Joshua Tree National Park stand in for a spa day, and guests make their own meals in the antique kitchens and at the outdoor grills. The real magic happens at sunset on the observation deck, and is best enjoyed with a BYO cocktail.

In contrast to the expensive antiques sold along the parallel Hollywood Road, colorful Cat Street is a fun jumble of the quirky: snuff bottles, silk slippers, embroidered things, vintage jewelry and clothes, old propaganda posters, and Chairman Mao–themed everything. The bustling-market vibe appeals even to nonshoppers. (Wondering about the name? Back in the 1920s the area was known for markets that sold secondhand and sometimes stolen goods; the people who bought the hot property were called cats, and so a nickname was born.)

Built by a Portuguese family in 1894—when Rio still evinced the splendor of a former imperial capital—its art nouveau–inspired refinements like huge mirrors, imported from Europe, wood furnishings, immense chandeliers, and stained-glass transoms welcome patrons. Colombo is all so terribly majestic you could be at one of the Continent’s grand salons or even the Tortoni in Buenos Aires. Perfect for afternoons over a pastelzinho de Belém, Lisbon’s traditional sweet egg tart.
