    When it comes to Kindred, you can forget your preconceived notions of vegan restaurants. The South Park spot features killer cocktails, filling food, and an edgy design, complete with a coffered ceiling, a white-marble bar, and a demon-wolf-head sculpture mounted on the wall. Pair the refreshing Place of Certainty (vodka, elderflower, Aperol, lemon, Thai basil, winter melon bitters, and cucumber) with Kindred’s take on the charcuterie board (smoked golden beets, kale pesto, and red-chili-and-orange-fennel seitan), or order something more substantial, like the beet risotto or the seared cauliflower steak with squash puree and steak sauce. The restaurant also offers an excellent weekend brunch with everything from cinnamon rolls and banana bread French toast to pancakes with bourbon butterscotch.

    The success of the TV drama Borgen has piqued international interest in the building that houses the Danish government. Christiansborg Palace (from which Borgen takes its name) is also the tallest tower in the city center, and it’s free to visit though you will have to go through airport-style security to get in. There’s a viewing platform or, better yet, go to the casual restaurant in the tower. One of the most unusual and memorable places to dine in Copenhagen, the belfry-like eatery has a Harry Potter–like charm, with casts of sculptures left over from the time the space was used as a storage room.

    One of Cancún’s oldest restaurants, La Habichuela was a 1970s original whose owner wanted a place to hang out with friends. It’s become an upscale dining room featuring local Mayan recipes alongside Mexican-Caribbean fare. The now iconic restaurant borders downtown’s Las Palapas Park, and has a charming backyard garden adorned with twinkly lights and climbing vines. Start the evening with balché, an ancestral Mayan drink made from the bark and roots of the balché tree that have been soaked in honey and water. For your entrée, try the amaranth fish bathed in flavorful tamarind and mango vinaigrettes.

    There’s a bit of the Wild West at this luxurious wine country inn. Vintner Fess Parker, of Davy Crockett and Daniel Boone TV fame, opened the inn in 1998. Today it’s still run by his family, and you can wade in the nostalgia by visiting the gallery off the lobby, which displays black-and-white images of Parker from his Hollywood days. Each of the 19 spacious rooms and suites is slightly different. Grand Garden rooms have cozy gas fireplaces and views of Los Olivos, while suites with living rooms are expansive enough to spread out and relax. At the Bear and Star restaurant, ingredients for the “refined ranch cuisine” are sourced from the Fess Parker Home Ranch, just seven miles from the inn. Wagyu specialties abound—from carpaccio to burgers, meatloaf to steaks—while the Fess Parker Winery supplies the restaurant with estate-grown rhône varietals. Lounge by the pool, or drop in at the spa for a massage or facial (a highlight: the Heaven on Earth package, which blends the Unwind massage with a customized Elemis facial). Pro tip: End the evening on a nostalgic note, borrowing a Fess Parker movie from the library for guests.

    The W Vieques Island is a luxury boutique waterfront hotel located on pristine Vieques Island, located eight miles off the southeast coast of mainland Puerto Rico. Culinary Institute of America grad Jason Williams sources most of the ingredients for his daily-changing menu from what’s in season here on Jordan’s Farm, a 122-acre land trust property operated by the third generation of Jordans. Reservations are essential to get a seat at this alfresco restaurant—there are only a few at the kitchen counter as well as a handful of picnic tables and dining gazebos around the grounds. For a small donation, pick fresh flowers for the table. Bring your own alcohol, and leave the credit card behind; this is a cash-only establishment.

    Bufalina owner Steven Dilley once lived in New York City, where he taught himself how to cook pizza in his subsequently overheated apartment. He was a good teacher and a good student. The University of Texas alumnus became one of the early movers in the Neapolitan pizza game in Austin and now operates two Bufalina locations. The igloo-shaped stoves that turn out charred and supple pizzas never would have fit in that old apartment, but they have become the centerpieces of his Austin restaurants. The menus celebrate local bounty with a couple of fresh salad options, and the daily pasta is always a must. Dilley has also put together one of the city’s most intriguing wine lists, an unexpected page-turner for restaurants the size of Bufalina.

    Right off the beach at Matira Point, Lucky House Fare Manuia Restaurant & Bar is a refreshingly casual dining spot. It serves a varied menu including seafood, pasta, meat, traditional Tahitian specialties, and some standout pizza. Cooked in a wood-fire oven right by the front door, it’s a popular choice and you’ll find locals on scooters pulling up to get a box to go. Strangely, there are also some quite tasty Chinese selections as well. Choose from tables inside or out, and after you’re done dining grab a couple of drinks and head out to terrace, where you grab a lounge chair and even take a dip in the onsite swimming pool. For budget travelers this can be a serious plus!
