  • Located at the luxe Six Senses Laamu, Sip Sip has an ever-changing menu made up of dishes that are the result of collaboration between the chef and resort gardeners, who tend an organic garden of 40 different herbs and vegetables. Using only fresh ingredients, the culinary team creates a different starter, salad, pizza, and dessert every day, all served poolside in a sunken bar area—more farm-to-pool than farm-to-table. Favorites include the panfried goat-cheese salad with mango compote and juicy cherry tomatoes, and the crispy Thai fish cake on a peanut-and-green-mango salad.

    Inishmaan is one of the Aran Islands of the west coast of Ireland—one of the most unspoiled spots in the country—and Inis Meáin restaurant uses the good things that come from the pure earth and sea around it. The garden and greenhouse grows salads, herbs, and vegetables, while the fish is wild caught from the Atlantic, and meat is homestead reared. The restaurant has large windows overlooking the ocean and island and seats just 16 guests for a four-course dinner. The menu changes nightly, based on what’s available and in season, and each dish prepared by chef and native son Ruairí de Blacam has just two elements, a unique dining experience indeed.     Foodies (and those simply interested in local color and a good meal) should head to San Lorenzo and its covered Mercato Centrale. Florence’s main market for edibles is housed in a 19th-century glass-and-iron building. On the ground floor, delis, stands, and butcher counters sell a fantastic array of local fruit and vegetables, cheeses, dried porcini mushrooms, baked goods, balsamic vinegars, and olive oils plus fresh fish, poultry, and meat. Upstairs, a modern food hall has opened: Stalls sell prepared foods and meals for happy and immediate consumption at a central seating area.

    “They get a little cranky if you get too close to their heads,” warned my tour guide at Crococun Zoo. I was in the reptile pen standing near—no straddling—a 6 foot, rescued croc wondering what on earth I was doing when my guide smiled and suggested I squat down and pet him. Crococun Zoo is really a rehabilitation center for exotic animals on Mexico’s Yucatan coast. If you visit, you will find monkeys, parrots, boa constrictors, lizards, deer, wild dogs, coati and more. Most of the animals can be fed or held, and I am generally fine with that. In fact, I enjoy letting 10 foot long snakes wrap their thick bodies around my neck. I love adventure. But at Crococun, you can literally walk among the crocodiles. You can step right over them. Believe me, the $28 you pay to get in the park is a small price to pay to pet the tail of a crocodile. Just make sure they are well fed.

Guests have two main options in terms of room types and price points. Luxurious rooms and suites are in the main lodge, featuring polished wood or tile floors and locally made furniture; the simpler, more budget-friendly casitas sit along the Macal River. The latter are sparsely furnished and offer few distractions. Guests of either room type have access to the property’s amenities and grounds, which include a natural history center and butterfly exhibit, a rain forest medicine trail, binoculars for bird-watching, and canoes for paddling along the river.

    Soak up the endless horizon on this 15k tramp alongside Lake Wanaka. Why is this worth your Kiwi time? The rolling and winding track that follows the lake’s edge provides an unobstructed and ridiculous view of the snowcapped mountain tops (head over in spring for sunny skies and cool winds). Park your car in one of the lakefront car parks in town and head clockwise along the lake. You’ll pass Waterfall Creek and the small Damper Bay before you reach Glendhu Bay. The only thing that is missing here are sculptures of hobbits, dwarves, and trolls (just saying).

The shelves are filled with books and board games, and large blackboards list the delicious array of food and drink on offer, from Ottolenghi-style salads to sandwiches, wraps, smoothies, and juices galore. Explore a bit further inside to find a bookstore, a housewares shop, and a jewelry shop. Lost your velvet bathrobe? Don’t worry—they sell them here. The café’s offbeat charm has proven so popular that a second location opened on Langata Road.

    A bucolic resort in the Virginia Piedmont, the Boar’s Head Resort is as deeply rooted in Virginia as its owner and neighbor, the University of Virginia. The land has hosted travelers since 1759, with the original Birdwood mansion dating to 1830. A short drive from downtown Charlottesville, Boar’s Head has plenty to keep a visitor occupied without even leaving the property, including an 18-hole golf course, a full-service spa, a fitness center with squash and tennis courts, and three swimming pools. The resort has 175 rooms spread over 573 acres; suites feature a seating area and balcony or patio, and some have fireplaces. Dining options range from healthy café fare (necessary fuel for all those tennis matches), to a grill overlooking the golf green, to an elegant meal in the restored Old Mill Room. The Blue Ridge mountains are renowned for their fall foliage, but visit in summer for fewer crowds (and UVA students) and the English-inspired grounds and gardens in full bloom. Be sure to ask for details on arranging a hot-air balloon ride over the countryside to appreciate all of historic Virginia.

    Set directly above rocky low cliffs of Negril and lit at night by torches and candles, Rockhouse Restaurant provides the setting for an elegant and romantic evening. (The setting’s pretty great during the day, too—breakfast, lunch, and dinner are served in this open-sided palapa and patio.) The New Jamaican cuisine means a refined and more health-conscious preparation of classic island recipes, with as many ingredients as possible from the hotel’s small organic garden across the road. Among the notable dinner offerings are the blackened mahimahi with mango chutney, snapper steamed in a banana leaf, and coconut shrimp.

    Chef Pedro de Artagão went from fresh-faced promoter to celebrity chef at Irajá, where instead of trying to take things more haute, he gathered traditional—maybe even disdained—Brazilian ingredients and transformed them into something spectacular. The restaurant’s mansion setting requires guests to squeeze past the kitchen to the dining room, on a high-ceilinged loggia, framed by a vertical garden. Locals marvel at what Artagão does with once-lowly cassava, now stylishly presented as high-toned aipim (whole fried), farofa (fried meal), mash, or tapioca. Regulars and out-of-towners alike enjoy sampling ingredients from the Amazon, such as tucupi (manioc juice), jambu (a Brazilian guava), and tacacá (a spicy seafood, pepper, and jambu stew).

    When temperatures soar, the best thing you can do for yourself, and anyone you are with, is to buy a pass to one of the hotel pools. The Riad Alkantara is situated at the heart of the medina and offers a long, deep, aquamarine-colored pool surrounded by a small but lush garden busy with butterflies and warbling songbirds. It’s usually very tranquil, but it’s worth arriving around 11 a.m. to be sure of a sun bed in high summer. Note also that service is painfully slow, so if you want to order a simple lunch (sandwiches, salads) be sure to order at least an hour and a half before you actually want to eat.

    In the Ville Nouvelle, the Marriott is another good option and a better bet if you have kids in tow, as it has a shallow pool for children as well as a large pool for adults. Plentiful sun beds, not to mention a decent Italian restaurant that serves cold beers and chilled Moroccan wines as well as child-friendly pizza and pasta, add to the perfection. The Hôtel Les Mérinides is situated high on a ridge above the medina and it has a medium-size pool surrounded by a dining terrace with expansive views. It’s more exposed than the other two, but rounding off the day up here with a gin and tonic as the sun goes down over the ancient city is arguably one of the most magical summertime experiences you can have.

    Finally, if time and budget allow, it’s worth booking transport to ferry you out to Dar El Mandar, less than an hour’s drive away from the city center, near the Middle Atlas town of Imouzzer (pass price includes lunch). Perched on a hillside overlooking the Saiss Plains, you can spend a delightful day lolling poolside amid terraced gardens dotted with cushion-strewn Berber tents for those all-important afternoon siestas.

    Smack dab in the center of the bustling financial district, these parallel lanes are lined with shops with a row of stalls running down the middle of each street. The twin shopping strips are packed with discounted clothes of all kinds, plus shoes, bags, and costume jewelry. The colorful, frenetic scene is part of the shopping experience, and unlike other cheap and cheerful street markets in Hong Kong, this one is centrally located. No schlepping to the far corners of the island to satisfy retail impulses. Pick up silk, leather, watches, Chinese outfits for kids, and all manner of souvenirs.

    Hôtel du Roi Christophe is a small, relaxed boutique hotel, nestled in a lush tropical garden in the midst of humming Cap Haitien. It’s not über–luxurious, but perfectly comfortable, and it attracts travelers and business people alike. There’s a great, comfortable terrace, a good place to hang out and let the day spool past one more time, drink in hand. The central location (ten minutes to the cathedral and Place d’Armes) makes it a perfect starting point for excursions on foot.     At this unique formation, Navajo sandstone in shades of deep red to white was first eroded by water and then primarily by wind to create smooth, rolling terrain that resembles ocean waves. The differing densities of stone have caused the structure to erode at varying speeds, resulting in undulating fins of rock along the entire surface. Made up of two separate U-shaped troughs, the Wave is as narrow as seven feet, as wide as 60 feet, and more than 100 feet long. To preserve its serene nature, the Bureau of Land Management only issues 20 permits per day to visitors. If you’re lucky enough to secure one, you must then hike nearly three miles across the open desert from the trailhead closest to the site to reach it.
