Tour the Great Hall, the lavish Royal Palace, the elegant Chapel Royal, and the Great Kitchens, then check out Argyll’s Lodging (Scotland’s finest 17th-century town house, built just beyond the castle walls for a great nobleman serving the royal court). Also worth exploring are the peaceful Queen Anne Gardens and the Stirling Heads Gallery, which features 16th-century oak medallions carved with images of royalty, Roman emperors, and characters from the Bible. When you’re done roaming the interiors, head outdoors and walk the ramparts to appreciate the castle’s commanding position above the Royal Burgh of Stirling.

    The system of canals and chinampas (cultivated artificial islands fashioned from the area’s swampy soils) that has survived in the far-south neighborhood known as Xochilmilco once stretched all the way to the Centro. These ancient landscapes now contribute to what has become one of the most singular pleasure gardens in the world, where visitors hire “gondoliers” to propel boats known as trajineras as they sail these channels in the company of floating mariachis and food vendors, partying teens, and extended families out for a picnic lunch. Since a tour is usually a four-hour-plus investment (it flies by), ask your oarsman to take you to Xochimilco’s more-rural precincts, where you’ll enjoy marvelous quiet, far from the madding crowd, in the company of cranes, curs, and picturesque cornfields.

    Coco Chanel famously made the Ritz Paris her home for 34 years, but the grandest hotels need a little brightening once in a while. The Ritz, which originally opened on Place Vendôme in 1898, reopened in 2016 after a four-year, $450 million renovation. Starchitect Thierry Despont wisely retained iconic features like the red entry carpet and the hotel’s signature amber scent, but he incorporated brighter fabrics to the public rooms, subtle touches like a heightened lobby ceiling and the addition of peaceful landscaped gardens, and bold statements such as a retractable glass roof on the patio. Overall, too, the number of guest rooms was reduced to 142, and the number of staff was raised to 630. Guest rooms are light and airy, with cream walls, Empire furniture, swags of floral silk fabrics, and marble fireplaces with gilt details. Some rooms have balconies, perfect for morning coffee. Down in the Ritz Club, the pool, serenely set in a columned art deco room, is long enough for laps. The Chanel au Ritz Paris is the brand’s first freestanding spa, with treatment rooms featuring (of course) Chanel skin care and beauty products.

Check out Manuel’s--one of the culinary highlights along the Savannah River in Hammond’s Ferry, SC. Originally from Lyon, chef/owner Manuel Verney-Caron has created a neighborhood gathering place that features local produce from literally just up the street at “Blue Clay Farm.” This community garden is one of the centerpieces of the “New Urbanism” that has built this pedestrian-friendly neighborhood near the site of a late-18th-century water crossing. Jog along the river, stroll on sidewalks within ‘conversation-distance’ of front porches, kneel down among the chickens and ducks--and make sure to end up at Manuel’s. The residents of Augusta, GA have voted Manuel’s as having the best bread in the city--you can chew on his loaves in restaurants around town and buy them at the Saturday morning Farmer’s Market at the Riverwalk. Technically, though, Manuel’s is out-of-city and out-of-state--but it’s a quick jaunt to North Augusta, SC. Go to the source, and there’s much more than bread: duck confit and croque-monsieurs are served along with burgers and pulled-pork BBQ at lunch; a more substantial taste of France can be indulged at dinner in this bouchon-inspired interior. Most visitors to Augusta come for The Master’s Golf tournament; leave the chain-restaurants around the Augusta National--the drive to SC is worth it.

    Why would a local visit a tourist attraction? Because Kualoa is a beautiful escape and a place to appreciate Hawaiian culture. Building sprees that began in the early 1900s spread across Hawaii with no concern for desecrating places of cultural significance or taro farmland, making it more remarkable that this land system running from the mountains to the sea, known as an ahupua’a, still exists. The Morgan family, descendants of Dr. Gerrit P. Judd, land-owner after King Kamehameha III, have diligently kept the integrity of the area intact while providing a financial base to preserve Kualoa’s 4000 acres on Oahu. Drive out to the ranch on your own or arrange a Waikiki pick-up, then take in a full or half-day of tours, a beach day, and dinner show. Kualoa Ranch has been a scene-stealer in many movies and a tour will drive you through some of the locations. If horseback riding is your thing, experienced wranglers can set you up on well-kept horses. While your gentle mount does all of the work, magnificent vistas will leave you breathless. For those preferring their horsepower with four tires, there are ATV rides or, a jungle expedition in a Pinzgauer up mountain trails stopping for a stunning view of Kane’ohe Bay, an 800-year-old fishpond and a tiny island called Mokoli’i. There are easy options like the garden tour and fishpond boat ride. Everyone will enjoy the authentic Hawaiian show featuring ancient dances about Kualoa while dining under the stars.

    There’s a new coffee shop in town. Sakona, located in the center of town, has a lovely, airy storefront that just begs to be entered. Modern wood accents bring to mind artisan coffee spots in bigger capitals, and they are outfitted with all the coffee musts of the modern persuasion: aeropress, chemex, mocca masters, et cetera. However, Sakona is not just a shop; they are roasters, based about 10 miles outside of San Sebastián. Javier Garcia, the owner, is a barista who has placed in the world championships. His humble attitude and desire to spread coffee love is a far cry from the typical barista behavior, so settle in and ask all the questions you want, a café con leche in hand.
  • In the early 1800s, a small fortress was built at the strategic beachhead on the Kowloon Peninsula. When the British began to occupy Hong Kong in 1841, the fortress became vital to China’s maritime defenses and so was greatly expanded. Soon a thick stone wall and watchtowers were added, and inside, a number of military buildings and soldiers quarters enlarged the fortified city even more. Though most of the complex has been destroyed or demolished over the decades, a few sections have survived, including the foundation of a former wall, remnants of the South and East Gates, and a flagstone path. A handful of relics have been recovered—from cannons to stone lintels—and are displayed in a Qing Dynasty Jiangnan-style garden park created on the site.

    Most visitors to the Philippines will learn something about the country’s Spanish and American colonial history; fewer will learn about the people who were here before. The mountains of Luzon are still inhabited by distinct indigenous ethnic groups known collectively as the Igorot, or “people of the mountains” (though today some prefer to use alternative terms). Despite hundreds of years of colonial rule, some indigenous peoples managed to maintain—and still continue—their traditional way of life. Sagada, a town in the Mountain Province, is a good place to witness this aspect of the Philippines. Many travelers check out the hanging coffins in Echo Valley, which are nailed to a cliffside and intended to bring the dead closer to heaven. But the real value of visiting Sagada is to interact with the Igorots and listen to their stories.
  • A few stops up the metro from Windows of the World and OCT, you’ll find Chegongmiao. Get off at exit A, and walk away from the busy street (Shennan Road). Suddenly you’ll find this little oasis in Shenzhen. It’s like a small town neighborhood. There’s a big plaza in the middle where vendors sell snacks and kids chase each other. There’s coffee shops and bakeries. Walk all the way to the end of the plaza and on the left you’ll see a giraffe. That’s Zoo Cafe, which has great waffles and smoothies. A lot of Koreans live here, and so there are good Korean restaurants in Chegongmiao. Just pick the busiest one; they are all pretty tasty.

    In the early 20th century, Guilin Park was the private compound of detective-turned-gangster Huang Jinrong. Today, it’s open to the public, beckoning tourists to come relax in an otherwise-buzzing neighborhood. Strolls through the handsome carved pavilions, tree-lined stone pathways, and grottoes allow for superb people-watching: In the shade of pavilions and on benches beneath pergolas, locals play Go and mah-jong, practice opera, and show off their singing caged birds. If you’re in Xujiahui or the French Concession, it’s well worth coming here to experience a slice of Shanghai life.

    Vegetarian food has never looked better than at WUJIE, a temple to some of the world’s freshest cuisine. Dishes here are creative, beautifully plated, and a mélange of textures. The kitchen makes all of its tofu and milks (almond, rice, etc.) in-house and uses seasonal and domestic ingredients whenever possible; so those mushrooms in your radish dumplings come straight from southern Yunnan province. WUJIE shies away from mock-meat dishes, though there are a few delicious exceptions, including a tonkotsu-inspired cutlet of minced mushrooms wrapped in tofu skin and doused in crispy panko crumbs. The Taiwanese-and-Chinese-fusion restaurant has three branches, one at the border of Xujiahui and the French Concession, another on the Bund (prix fixe menu only), and a third in Lujiazui, inside the Shanghai World Financial Center.
