    In recent years, one restaurant has set the bar for cool in Cabo San Lucas. Bar Esquina, the Bahia Hotel & Beach House’s on-site bar and grill, features a chic casbah-like design aesthetic, a menu built on Mexican and Mediterranean flavors, and a commitment to organic, locally and responsibly sourced ingredients you taste in every bite. The menu is ever-evolving, but there are standouts you can always expect to find. The tuna tartare is a tiered, artistic creation, featuring tempura and an avocado-yuzu mousse. The Caesar is the signature Bar Esquina salad, here wrapped in a long, flat crouton and served with poached egg and prosciutto. Entrée selections include a generous filet mignon with potatoes au gratin and the short-rib pizza with blue cheese and arugula.

  • Just 45-minutes north of Belize City, Altun Ha is a complex of Mayan ruins dating back hundreds of years. Once the “treasury” for the Mayan people, Altun Ha is one of the most important Mayan sites in the country. Go on a tour of the place with Foolish Dreamzzz, a locally owned operator that will take your group at any size (and the price per person doesn’t change, whether you’re in a group of one or ten). Ask for Kendis Ferguson, the owner and a former history and social studies teacher. He and his company go above and beyond to make sure guests have all their questions answered, and he’ll even make sure you get to climb to the top of the ruins—something not a lot of tour guides in the area make the time to do. The views from there, of course, are amazing.

    There are few places where you can better learn about the beauty and complexity of desert ecology than the Desert Botanical Garden, not far from downtown Phoenix. Check out the Desert Discovery Loop Trail for a look at local flora, go for a flashlight tour or cooking class (using plants found in the region, of course), or catch one of the musical performances that are part of the garden’s concert series. Make a point to visit the Desert Terrace Garden for the best views of the surrounding buttes and desert.
  • A prime specimen of the region, Garibaldi Fjord is known for its beautiful glaciers, which rise as tall as New York skyscrapers. The glaciers extend across a series of steep mountains and valleys, but they still harbor a rich ecosystem of plants and wildlife. As your ship passes by the fjord, watch for Andean condors, sea lions, Magellanic penguins and possibly even a pod of orcas. If you’re lucky, you’ll see a glacier splinter and calve, dropping an enormous chunk of ice into the sea. Fun fact about glacial ice: It has no air in it, so if you put a piece in a drink, it will sink to the bottom rather than float. Some glacial ice has remained in a frozen state for tens of thousands of years.

The food is also revitalized with Executive Chef Andrew Garrison at the helm, and along with visionary General Manager Steve Hurst they are making a name for themselves in terms of guest care and the jewel of a restaurant here called Samphire. The name Samphire is the name of a salty tasting water plant found nearby. Chef Garrison uses it frequently to ramp up the flavors in his straight-from-the-farm, forager, cheese maker, or fisherman, in his flavorful and fresh cuisine. Tip: Samphire is so popular, book a dinner seating when you make your hotel reservation. So head out to the gorgeous Oregon Coast soon and plan to stay here. You’ll be surprised and delighted. And may not want to leave.

    A Starwood Luxury Collection hotel in the heart of historic Cuzco, Palacio del Inka occupies a former palace, built by the Incans as part of the Coricancha (the centerpiece of their empire). Since ancient times, it’s had many lives—it was seized by the Spaniards in the 16th century, served as a museum in the 1800s, and finally became a hotel in the 1970s. Today, the property features artwork and artifacts from both the Incan and colonial eras, which guests can tour each day at 5 p.m.

    Situated around a large central courtyard, the 203 rooms are decorated in a colonial motif, with carved-wood furnishings, jewel tones, and gold accents. Also on-site is a small but very nice spa with a hydrotherapy pool, dry sauna, Turkish bath, whirlpool tub, and showers with lighting effects, as well as a small gym with cardio machines and weights. While Palacio del Inka is just a few minutes to Plaza de Armas and its many eateries, guests would be remiss to not dine at least once at the hotel’s Inti Raymi Restaurant, which serves Andean and international dishes made with locally sourced ingredients. Before dinner, grab a drink at the Rumi Bar, which offers excellent cocktails and a free pisco tasting each night at 6 p.m.

Menus range from à la carte to surprise tasting options, and include such creative dishes as a rockpool of local seafood with sea vegetables, ginger, and shellfish consommé, and roasted deer loin with carrot, fresh apple, and red wine sauce.

    Many visitors are surprised to learn how many great hiking trails there are around Hong Kong. In fact, believe it or not, roughly three-quarters of Hong Kong (which, remember, comprises Hong Kong Island, Kowloon, and the New Territories) is undeveloped land. The mother of all hikes is the 62-mile MacLehose Trail, which winds across much of the New Territories from Pak Tam Chung to Long Ke. It’s considered one of the most gorgeous hikes in the world. The undulating trail snakes along gorgeous beaches, past sea caves, sea stacks, and interesting columns of volcanic rock, and in the middle, climbs to Hong Kong’s highest peak, Tai Mo Shan, at 3,140 feet. Do the whole thing or what most people do, just a part; MacLehose is divided into 10 sections ranging from three to 10 miles, with campsites set up along the way (one of the best is Stage 2; the starting point is the end of Sai Kung Man Yee Road along the High Island Reservoir). Keep your eyes peeled for rhesus monkeys, wild boar, and barking deer.
