    Sticking to the motto “the only thing frozen is our fishermen,” this dockside eatery serves some of the freshest seafood on the Island of Mull. In fact, guests can sit on the outdoor terrace overlooking Tobermory Bay and watch the fish en route from Mull’s rough coastal waters to their plate. Here, the specials board changes daily depending on what the fishermen provide, but there’s always something delicious, whether its langoustines, oysters, and crabs or mussels, scallops, and squid. The kitchen knows not to mess with a good thing and serves its fish and shellfish simply, seasoned and grilled with a wedge of lemon. They also bake their own bread and desserts; stock a wide range of Scottish beers, Mull malt whisky, and fine wine; and offer cheese, beef, and biscuits to pair with your meal. Go for the house-smoked salmon, stay for the signature fish stew with haddock, queenies, mussels, and more. Just note that the restaurant is seasonal, open from mid-March through late October.

    Chef Thierry Blouet’s Café des Artistes made an immediate impression on the region when it opened inside the JW Marriott Los Cabos Beach Resort & Spa in Puerto Los Cabos. Blouet has spent more than a quarter century perfecting his Café des Artistes concept, one that blends gourmet French techniques with highly curated Mexican flavors. The results are magical: A tuna tartare is stacked delicately with pickled vegetables, avocado slices, and crispy fennel; pork belly is served with hibiscus and red wine sauce; and shrimp comes with a plum-habanero mole. The setting is equally striking: A sophisticated dining room opens to a terrace with breathtaking views of Cabo San Lucas Bay and, in the distance, city lights.

A great place to find these and many other keepsakes is the Nassau Straw Market, where around 500 vendors sell a wide variety of goods, from baskets and handbags to wood carvings, drums, and T-shirts. The food is also revitalized with Executive Chef Andrew Garrison at the helm, and along with visionary General Manager Steve Hurst they are making a name for themselves in terms of guest care and the jewel of a restaurant here called Samphire. The name Samphire is the name of a salty tasting water plant found nearby. Chef Garrison uses it frequently to ramp up the flavors in his straight-from-the-farm, forager, cheese maker, or fisherman, in his flavorful and fresh cuisine. Tip: Samphire is so popular, book a dinner seating when you make your hotel reservation. So head out to the gorgeous Oregon Coast soon and plan to stay here. You’ll be surprised and delighted. And may not want to leave.

Many hotels make it easy on couples, thanks to their convenient waterfront location, but Hapuna Beach on the Big Island and Honokahua Bay on Maui are two other pacific coves that inspire hand-holding and quiet whispers. For complete intimacy, Lumahai Beach—fitted into the bay near Hanalei on Kauai—is difficult to find, but its remote coast and soft sand have been the scene of more than one knee bent into the sand for a proposal.

    Its imposing structure now in ruins like an ancient stone temple, the sea-facing Huanchaca silver foundry was abandoned at the beginning of the 20th century only to be named a national monument in 1974. At its foot now sits the Museum of the Atacama Desert, a striking, largely underground building opened in 2009 that was designed by a leading Chilean firm and reflects the same monumental scale as the foundry. The galleries are dedicated to geology, astronomy and archaeology, while the site as a whole—the museum, the foundry ruins and a foundation that supports local artists—forms the Huanchaca Cultural Park. It has quickly become a popular stop for visitors to Antofagasta, providing an excellent introduction to this region of Chile.

    This Cuzco corner presents a notable juxtaposition between ancient Incan and Spanish colonial architecture. Since the Incas worshipped their sun god, Inti, above all others, this temple in their imperial capital was the most important of the entire realm. It was here that they brought the idols of all peoples they assimilated, to offer them representation as they demanded allegiance in Cuzco. When the Spanish arrived, they tore down much of the temple and built a monastery on top of it. However, the walls that do remain provide stunning examples of pre-Hispanic engineering, particularly the rounded outer wall that can be seen from Avenida del Sol.
  • There aren’t too many opportunities in the Caribbean to ride on horseback to a cave. In Los Haitises National Park, located three hours west of the resorts of Punta Cana, Fun Fun (pronounced “Foon Foon”) Cave is officially known as the largest cave in the Caribbean. Though the cave itself is in the National Park, access to the land goes across a private ranch and requires a guided tour. While the nearly three-hour drive from the resorts of Punta Cana is a lengthy, bumpy, journey into the interior, the scenes from the window provide an authentic glimpse into rural Dominican life. Sugar cane sways, schoolchildren wave, and mangoes drip from the trees. Upon reaching the ranch where you begin the tour you are shimmied into a jumpsuit and saddled onto your horse. A 45-minute ride through the shaded forest brings you to the edge of the National Park. From here it’s another 30 minute walk through sun-swallowing trees until you reach the entrance of Fun Fun Cave. Sliding into a harness and climbing gear, entering the cave requires a 50 ft. repel into a tiny hole which can barely fit your shoulders. Once at the bottom, it’s a one hour slog through the depths of the darkness before reaching the other exit. Inside the cave, stalactites and stalagmites pepper the areas which fall in the beam of your flashlight, and at some areas you are forced to swim through the soothing, subterranean waters. Here, a lone rope helps guide visitors through the hidden recesses of the cave.

    There’s more to the Botanical Gardens in Denver than just the pretty face of its landscaped grounds and beautiful flowers. It’s also a world-class research center with a mission to connect people with plants (especially the plants endemic to the Rocky Mountains) and to encourage understanding of the ecosystems in which they thrive. The 23-acre location on York Street has a variety of gardens (many based on typically western climates like mountains and plains), popular exhibits, and a shop; it additionally hosts a summer concert series and nighttime events. The institution’s second main location, at Chatfield Farms on the southwest edge of greater Denver, focuses on native flora and agriculture; there’s a working farm on its 700 acres. Both spots offer extensive educational opportunities as well as incredible events like York Street’s Blossoms of Light holiday show.

    Sunset Monalisa is one of the most romantic restaurants in the world. Its views of Cabo San Lucas Bay and the arch at Land’s End are spectacular any time of day but particularly at sunset, when the sky turns vibrant shades of red, yellow, and purple. Love is definitely in the air here: Servers report at least one engagement per week, and it’s a favorite wedding venue. The multitiered cliffside restaurant features a Taittinger Terrace Oyster and Champagne Bar, as well as an exceptional Mediterranean menu from chef Paolo della Corte, who trained in Michelin-starred kitchens. Navigate the à la carte options independently or opt for the prix fixe or tasting menus.

    At the end of a secluded peninsula, right on Coco Point, which is Barbuda’s southernmost tip, Coco Point Lodge is one of only a few modern hotel resorts on the island. Although not five-star fancy, this all-inclusive property, is plenty comfortable offering a mix of rooms and private cottage rentals in small buildings scattered across the grounds. Bordered by some 2.5 miles of gorgeous white sand beach and safe, reef-protected swimming in the clear turquoise waters of Cocoa Bay, it is a good choice for active types as included activities feature everything from sailing to snorkeling, waterskiing to windsurfing and sea kayaking. Deep-sea, reef or bone fishing expeditions can also be arranged, as can day trips to the Frigate Island Sanctuary for birds.

    Overlooking the Coal River Valley, Barilla Bay, and the vineyards that produce the winery’s award-winning rieslings, sauvignon blancs, and other cool-climate varietals, Frogmore Creek is also home to a restaurant you can write home about, open daily for lunch from 11:30 a.m. to 3 p.m. Here you can pair the star of the most recent wine harvest with colorful dishes such as beef tataki with horseradish gnocchi or cured yellowtail kingfish sweetened by seaweed and soy caramel, apple, and pomegranate. Edible flowers and bright sauce droplets create art on the plate. But the real masterpieces are the desserts. If “chess mate” and “lemon basil legos” are on the menu, order both. In late 2017, Frogmore Creek opened a second restaurant inside the MACq 01 building on the Hobart waterfront.

    Billed as a city resort when it opened in June 1994, this 480-room property beckons to leisure and corporate travelers, the former attracted by the property’s proximity to Universal Studios Japan, the latter by the extensive meetings facilities and incentives options. The hotel comprises two towers, one with banquet facilities, the other with guest rooms; more than 2,000 works of art are peppered around both, including in the large, showy public areas. Rooms generally have a look that hovers between corporate and leisure—not surprising given the target audience—with furnishings that are comfortable and functional. The views of Osaka Bay are fabulous.

    You’ll have to pick your jaw up off the ground before you start your alfresco breakfast or dinner on Elk Island, in the middle of Jackson Lake in Grand Teton National Park. Just one mile from Elk Island (the largest island in Wyoming—not a hotly contested title), the hulking Mount Moran explodes up 7,000 feet from the lakeshore. It’s so close you might be able to spot crevasses on one of its glaciers. In this setting, standard fare—trout, steak, and chicken at dinner, and eggs, pancakes, and hash browns at breakfast—tastes almost sublime. The cruise to and from the island is a bonus.
