But the main draw is decidedly local: spectacularly fresh ingredients sourced largely from the sea right outside and served up in such specialties as lightly seared wahoo with bok choy and kimchi broth; or poached halibut with sunchokes, salsify, and truffle jus; or bread-crusted red snapper with squid and sofrito sauce. If you’re feeling ambitious, go for the gusto with a six- or seven-course tasting menu—and tack on the wine pairings.

The story is the same inside, where 76 spacious suites are decorated with ornate Corinthian columns, well-curated antiques, and a palette of soothing ochres and greens. Like other hotels in the area, the Quinta Real has a swimming pool, butler and valet services, and a business center, but it’s the international dishes at Tierra Mia restaurant that are truly worthy of the hotel’s five-star rating.

Breakfasts range from healthy, green, and juicy to the indulgent croque madame. Pair any meal with a handcrafted cocktail; the SUR Caesar is a nice play on the classic Canadian cocktail and comes with crispy rib eye tips and roasted habanero sauce. The raw bar is like a love letter to the sea. Not least of all, the kitchen turns out delightful oyster preparations, but don’t leave Cabo without trying the raw chocolata clams. Named for their color, not their flavor, these meaty mollusks are best with just a little lime and hot sauce. (Come early for stand-up paddleboarding; Cabo SUP is located on-site and offers rentals as well as lessons.)

By day, lawn games are usually underway on the grassy expanse called the Town Square, while in the evenings, a pavilion provides an unparalleled backdrop for stargazing. This is a hotel that values fresh air, as evidenced by the walls in the common areas, which retract to bring the outdoors in. There are other reasons to fall in love with Carneros—namely, the on-site restaurants. The casual Boon Fly Café is famous for breakfasts, with spicy bacon Bloody Mary drinks and tiny made-to-order doughnuts. FARM, on the other hand, is more formal, with menu items such as braised oxtail terrine and smoked Sonoma duck breast. While the hotel offers in-room massages, it will also reopen its spa after a full-scale renovation later in 2018.

    The Hotel St. Francis lays claim to being Santa Fe’s oldest hotel. Rebuilt in its current location in 1924, after a fire left its predecessor completely ravaged (save the brick chimney), the property formerly known as the De Vargas Hotel played host to elegant ladies and gentlemen in top hats, politicos, and other VIPs during its heyday. After World War II, the hotel lost some of its luster, though it was still popular with government types until the 1960s. In 1986, new owners restored the hotel to its previous grandeur, replaced the barber and beauty shops with a restaurant and bar, and gave the property its current name. Most recently, in 2008, the property was purchased by Heritage Hotels and Resorts and underwent yet another makeover. Inspired by St. Francis, the patron saint of Santa Fe and founder of the Franciscan order, the look is best described as haute-monastic. Think Frette linens and flat-screen televisions paired with neutral hues, wood furnishings crafted by local artisans, and dim, candlelit common spaces.

The restaurant offers a California spin on an old-school diner, turning out pancakes, corned beef hash, and cheese blintzes. Breakfast is available all day—at least until the restaurant closes (at 2:30 p.m. daily). Café Sarafornia is particularly fun for kids, who can order off special menus and receive crayons and activity mats when they sit down. Local historians say the restaurant dates back nearly 120 years to when Calistoga was known as a resort town.

Both the kids and us were mesmerized by the colors and music. I recommend going during the off season and on a week day. That way the lines are really short and the waiting time is not more than 10 minutes.

    In a regal redwood grove along the Big Sur coast lies a place “where nothing happens,” according to its proprietors. The highway traffic noise disappears, the filtered sunlight takes on the quality of stained glass, and the earthy smell of the forest is enough to cleanse your mind of digital and other distractions. This quiet altar of wisdom and irreverence serves as a bookstore and art hub focused on promoting the works of author Henry Miller, who lived in Big Sur between 1944 and 1962. The library hosts events throughout the year, but especially from May to October, including concerts, lectures, and book signings. The annual Big Sur International Short Film Screening Series occurs outside, in the redwood amphitheater. In the winter, the library takes on the aura of a writer’s retreat, when time stretches endlessly forward and you can spend hours browsing books, nursing a cup of coffee, and watching the light and shadows change the landscape outside the windows. Unlike a library, there’s no borrowing here, but what you walk away with may just be richer than any physical possession.

    This sprawling, 165-room mansion may be known as Hearst Castle, but officially, it’s called La Cuesta Encantada (“The Enchanted Hill”), former owner William Randolph Hearst’s affectionate name for the property. Designed by legendary California architect Julia Morgan to the newspaper magnate’s specifications, Hearst Castle was considered completed in 1947, even though it was still unfinished. Now a national historic landmark and museum dedicated to art and excess, it’s filled with Egyptian, Greek, and Roman antiquities, along with Old Master European artwork, Chinese and Near Eastern art, and art deco items—25,000 artifacts in all. There’s always something blooming in the 127 acres of gardens, whether it’s sweet-smelling hyacinth, walls of magenta bougainvillea, fragrant star jasmine, or orange California poppies (the state flower). Don’t get overwhelmed by the numbers during a visit here. Most tours of the estate focus on certain areas, instead of the entire grounds. Pro tip: The Hearst Castle private tour, a four-hour, in-depth exploration of the lavish grounds and mansion, is well worth it. The customized route can access any areas of the estate that are available to the public, but since it’s limited to a maximum of six guests, you can cover a lot of ground with your private guide and get information that shorter tours can only touch upon.

    Once known as Casa Cohen, Dôce 18’s eighteenth-century structure has been painstakingly restored and is now the city’s chicest forum for fashion, design, art, hotel-going and fine dining. Shopaholics go nuts, especially for the delicate, enigmatic bijoux at Sangre de Mi Sangre; fair-trade fashion at Amor y Rosas or the fabulous artisanal tablewares at Estanzuela. The on-site hostelry, L’Ôtel, is a claque of just ten impeccable habitats, exquisitely furnished, complete with rooftop pool. Restaurant Jacinto 1930 by Oaxacan chef Israel Loyola is the top table at this writing. Or kick the evening off with a tequila—we’re talking the good stuff—in the sleek Casa Dragones tasting room.

    One of Mexico City’s most historic neighborhoods—a once-independent city-state politically joined to the Aztec capital of Tenochtitlan—Tlatelolco is a fascinating side trip few tourists make. At its center lies the district’s so-called Square of the Three Cultures, where a colossal public housing development (of revitalized interest to architecture buffs) surrounds a 17th-century Spanish church (notably embellished with stained-glass windows by 20th-century artist and architect Mathias Goeritz) as well as the ruins of pre-Hispanic Tlatelolco pyramids and other structures. In addition to being the exact spot on which the Aztec empire fell, the square was also the site where Mexican armed forces perpetrated a bloody 1968 massacre of university students and political activists. Tragedy aside, the area is still home to thousands of hardworking average Joes, and the community garden, known as the huerto, is pure down-home bucolic charm; it’s well worth a pop-in.
  • A few years ago, Bósforo was a nondescript bar in the capital’s Centro Histórico (Historic Center) neighborhood. Its decor was nothing to write home about; in fact, it was so dark it was hard to make out whether there was any decor to speak of. Fast forward to today, and the dark, dull interior hasn’t changed. Nor has the bar’s focus: mezcal. The smokier cousin of tequila is an agave-based spirit that has grown exponentially in popularity over the past several years. Most of the bar’s offerings are small-batch mezcals in bottles with handwritten labels. What you try today may not be available at all the next time you visit. What has changed in the past year or two is Bósforo’s visibility. Once a bar that was really only for locals in the know, Bósforo is now visited by mezcal lovers from all over the world. If you’re a fan of the spirit—or you haven’t yet tried it and would like to—Bósforo is worth a night out in the Centro.

    The renowned Meadowood Resort mixes the grandeur of a chalet with the amenities of a five-star resort—located in a private canyon within minutes of downtown St. Helena. The shaded, secluded property revolves around 99 rooms, most of which have high and exposed ceilings, private patios or balconies, wainscoted walls, and beds so comfortable you may never want to get up. Other amenities make Meadowood distinctive, too: Many rooms have heated bathroom floors; some also have deep soaking tubs. Elsewhere on the 250-acre property, all guests have access to the on-site spa, which was renovated in 2017; an on-site fitness center; hiking trails; tennis courts; and a daily wine reception. There’s even a croquet lawn—feel free to grab a mallet and hit some balls or sign up to take lessons with the Napa Valley’s only croquet pro. Of course the on-site restaurant, The Restaurant at Meadowood, is another big draw. More casual meals can be ordered from The Grill. Guests are entitled to a complimentary house car for transport into St. Helena or Yountville.

    Set behind a thick yellow facade with climbing green plants, Kinich offers mostly alfresco dining, with tables beneath palapa-style roofs. This popular restaurant has a fresh, elegant, not-too-touristy feel, and gets its share of locals. Yucatecan favorites make up the menu; the food is homemade, flavorful, and high-quality. Women in traditional dress grill tortillas as diners look on. The poc chuc (citrus-marinated pork) is delicious, especially when accompanied by a beverage made from a local plant, chaya, considered a superfood.

    This ice-cream-and-sorbet parlor has been a favorite among locals for over a hundred years. It’s a great place to try sweet and refreshing frozen treats made from various stars of the Yucatán’s exotic-produce bonanza, such as sapote, mamey, and tamarind. At night, families fill the tables. Champolas—beverages crafted from milk and ice cream or sorbet—are also a favorite. A signature version includes sorbet made from soursop (guanábana), a fruit that abounds in the Yucatán.
