    As Phoenix heats up, many locals are desperate to escape the desert’s barren landscape and head north to Sedona. Only a two-hour drive from the city, on average, Sedona sees about 60% local valley traffic over the weekends. Route 89A, leading up to Flagstaff, provides many opportunities to veer off course and wander the many trailheads in Sedona. One particular trail is the West Fork Oak Creek Trail. Temperatures are at least 20 degrees cooler here and provides relief from the consistent 101-115 temps. You’ll find water holes and rivers and shade under the evergreens to keep cool and refreshed. Pack a picnic and spend a few hours exploring this trail as it weaves and winds through the forest and up against cliffs and the water’s edge. Hop from rock to rock crossing the stream at five different points along the trail. You won’t sweat too much here as it’s a fairly easy 3 mile stroll. You’ll know when you get to the end of the marked trail - it ventures on but I have yet to figure out how to follow it further to its 14-mile stretch. $9 entrance fee for the day. Word of advice: Get there EARLY to find parking during the weekend and summer months.

    When you hear the phrase, “summer in southern Arizona,” naturally your thoughts will tend toward heat and sunshine. Most wouldn’t think of mounds of fresh produce at a farmers’ market in the desert city of Tucson. But the arrival of the monsoon coincides with nature’s edible bounty, even here in the desert. The nearby Santa Cruz valley is actually one of the oldest continually-farmed regions in North America, with agriculture dating back four thousand years! Heirloom beans, squash, chiles, and tomatoes are still grown. The nearby higher elevation lands near Willcox are known for their orchards and even a few vineyards. Mesquite flour is made into cookies and tortillas. Prickly pear cactus is made into jams and frozen treats. All this is available throughout the week at various farmers’ markets around Tucson. The biggest one is on Sunday morning in the neo-colonial courtyards of St. Philip’s Plaza. And, if you’re curious, you’ll get language and cooking lessons, too. On a recent Sunday morning, my wife and I asked what some curious looking greens were. The answer? Purslane, or “verdolagas” in Spanish. They grow like weeds once the monsoon rains begin, and they contain more omega-3 fatty acids (think fish oil) than any other leafy plant. In a salad, or sautéed or stewed, they’re great. Who knew? Farmers’ markets are always a great place to get a vibe for a city—a cross section of people and produce. And, even in the desert, it is possible to shop and eat local.

    If you want to meet the kindest cheesemonger in Rome, visit Roberto at Antica Caciara in the ‘you-must-cross-the-Tiber’ Trastevere section of town. Stock up on Pecorino Romano (that amazing hard grating cheese used in the standard Roman fare Cacio/Pepe pasta) and sliced cured meats. And if you are still hungry, you can grab a bag of handmade pasta before Roberto kisses you ‘buonasera’.

    Uluru, or Ayer’s Rock as many know it, is one of the most recognized landmarks anywhere in the world. This strange giant rock in the middle of the Australian Outback has long kindled imaginations, going back millennia. It may be an important tourist site today, but it also holds immense cultural value for the original inhabitants of the area, something I learned all about on the very unique Anangu Tour of Uluru.
    In the Pitjantjatjara language, anangu means person or human being, and the tours are designed to teach newcomers about the native peoples. The tours are given in the Pitjantjatjara language, with interpreters translating for the guides. It’s not that the guide didn’t know English, he certainly did, it’s that they want visitors to hear the nuances of a language most of us have never before encountered.
    The walk around the rock was an enlightening experience, learning all about traditional culture and the extreme importance Uluru holds in the Tjukurpa or Dream Time. Tjukurpa is Aboriginal law, culture, history, and their worldview all bundled into one. It is expansive, impossibly ancient and much of it is shrouded in mystery, transmitted only to certain people at particular times in their lives. To be a part of that was a humbling experience.

    The Sanctuary of the Madonna di San Luca has a commanding presence in the landscape overlooking Bologna. We arrived knowing that it was connected to town by a 2.5 mile portico some say can be seen from space. We dropped our bags at the hotel, grabbed some water and headed for the hills. No map, no directions. There are signs that guide you, eventually. Get a map. The streets and neighborhoods heading up to this massive, covered staircase are wonderful to get lost in, which we easily did. Finding the entrance, we began our pilgrimage to the church at the top of the stairs. There are 15 chapels celebrating the Mysteries of the Rosary, kind of like the stations of the cross for any of the Catholics in the audience. We hike/jogged up to the top, stopping along the way to enjoy the view and the artwork. The 18th century Sanctuary at the top provides spectacular views of the Emilia/Romagna countryside and of Bologna in the valley below. It was hot and sunny on our visit, but one of the locals told us it snows up on the hill during the winter. We had a quick decent, then out to happy hour where the specialty is the appertivo bar. For the cost of a glass of wine or cocktail, many of Bologna’s restaurants invite you to graze gratis at the traditional piccoli morsi trays laid out across the bar. It’s easy to make an evening out of nibbling on a variety of meats, cheeses, pastas, pizzetes and deserts at any number of stops. After a long, inspiring walk; my kind of tradition.

    I didn’t even realize that the Bernina Express scenic train journey was on the UNESCO World Heritage list until I arrived at the small northern Italian town of Tirano to start the trip. There are several different routes from which travelers may chose, but that day I took a one-way trip from Tirano to the Swiss mountain town of Chur. It was the middle of winter and I was excited to see the famous snow-covered Alps in person. Images of Maria from the Sound of Music kept running through my head as the train slowly pulled out of the small station. The journey is a scenic one and the train cars have been designed to maximize the amazing views. The windows are extra large and there is more than enough room between seats to allow for even the most ardent shutterbug. Our trip took about four hours, during which time we passed through narrow valleys and swept past mountain villages that looked like they were plucked out of a model train set. The unique and stunning scenery I was lucky enough to witness proved to me why UNESCO very smartly placed this journey on their important list. Tirano is easy to reach from Milan and there are many different train routes available including trips to St. Moritz and Davos.

The 190 guest rooms, which feel like private apartments, are decorated with precious fabrics, paintings, and 18th-century antiques. The on-site attractions include a spa by Le Prairie, a teak-lined pool resembling a yacht, and a courtyard garden fragrant with jasmine. For more than a decade, chef Eric Frechon has held three Michelin stars at Epicure, where menu fixtures include the macaroni stuffed with black truffle and foie gras. Frechon’s culinary dominions are a portal into French gastronomy itself: The hotel has its own chocolate factory, cheese cellar, flour mill, and boulangerie.

    If there’s one night to slide into a booth at this casual diner inside the hip Ace Hotel & Swim Club, make it a Monday. That’s when the place is transformed by the unmissable presence of 90-year-old ex-showgirl Shirley Claire, who sings and brings a healthy dose of razzle-dazzle as she hosts Fabulous Bingo. In fact, most nights of the week have a theme—see Tuesday karaoke at the adjacent Amigo Room bar, half-off wine bottles on Wednesday, and Taco Jueves—so making reservations is a good idea, but not a must. If you wind up waiting for a table, grab an Orange You Glad To See Me—made with gin, orange, Chareau, and lime—and pop into the photo booth. With its stone wall, leather booths, and globe pendant lights, the diner (a former Denny’s) embraces the spirit of the sixties, while the menu offers a distinctly Californian twist on Southwestern and Mexican fare. Must-orders: For breakfast (served until 2 p.m.), opt for the desert classic Date Shake and Huevos Rancheros, made with California- and Coachella Valley–sourced ingredients. For dinner, try the Grilled Mahi Mahi Tacos or Desert Highway Burgers, and request the pickled jalapeños for added kick.

    After 80 some odd years as one of Houston’s most lauded and refined hotels, the historic Warwick Hotel went from Bach to rock, when new owners gave it a slick makeover and renamed it Hotel ZaZa in 2007. A bold beacon in the Museum District, the dimly lit hotel is a virtual playground for adults, with daring decor, baroque details, and an outdoor pool with private piazza-themed cabanas. While it maintains much of its original 1920s architectural elegance and details, including Baccarat chandeliers, the interior walls are splashed with modern art and iconic editorial-photo shots of beloved celebs.

    Many rooms and event spaces are themed, including the space-inspired “Houston, We Have a Problem” Suite and the Conspiracy Room, which nods to Prohibition. A recent refresh includes newly renovated 11th-floor meeting rooms, new mattresses, new carpet, spa and fitness center upgrades (including treatment room tweaks and the addition of innovative infrared saunas), and new in-room flat-screen TVs. Bottom line: even an overnight stay feels like a true escape.

    I’m not one to skip breakfast, especially in Italy, where thoughts of cappuccino, pastries, and local ham tend to rouse me early from slumber. But on my first morning at the Hotel Sant’Angelo, in the old quarter of Matera, I was having a hard time dragging myself from the creature comforts of my cave. Staying in a cave, it turns out, can be surprisingly pleasant. There was just one small window high overhead, but the room and adjoining bath were in no way dank—a testament to the natural ventilation that keeps the caves cool and comfortable. The wavy contours of the white tufa-rock walls conjured a feeling of being enveloped in some primordial womb. Yet there were modern amenities: luxurious linens, Internet service, a telephone. Fred Flintstone never had it this good. I might have snoozed until noon, were it not for an impatient mate eager to see the sights. We had arrived in the village the previous night after a long drive across the treeless plains of the Basilicata region, located at the instep of Italy’s boot. Matera is an enchanted world of Stone Age splendor. Known as the sassi (Italian for stones), the bisque-colored hilltop cave homes comprise one of the oldest continuously inhabited places on earth, according to UNESCO. The caves have provided shelter for more than 7,000 years. A millennium ago, shepherds inhabited them and carved churches into the rock; during the Renaissance, the area prospered and elaborate buildings were carved out, the excess tufa sculpted into ornate facades. By the early 1900s, the sassi had fallen into neglect. Families and their animals crowded into the caves for warmth, and disease was rampant. When writer Carlo Levi brought this tragic state of affairs to light with his 1945 book Christ Stopped At Eboli, the Italian authorities moved residents en masse to modern housing—leaving the sassi abandoned, save for the occasional crew brought by film makers (Pier Paolo Pasolini and Mel Gibson among them) in search of a biblical-looking backdrop. It was only in the 1990s that the Italian government encouraged people to move back. Residents revamped the cave dwellings as homes, restaurants, and inns. When the Sant’Angelo opened in 2004, it was the area’s first luxury hotel. The 19 cave rooms are sparsely but tastefully appointed with rustic wooden furniture. Some carved decorations—crosses, hearts, an owl—date back hundreds of years. Fossilized shells embedded in the walls reveal that the region once lay underwater. Eventually, my fiancé and I did emerge from our cave to wander the town’s ancient alleys. A local guide named Dora Cappiello took us into some of the 150 chiese rupestri (rock churches), where she pointed out wine troughs and frescoes of San Nicola, the patron saint of local shepherds. We also visited a cave dwelling that had been restored to resemble its state when the caves were equal parts manger and living space.
    Simple, delicious meals punctuated our explorations. The curvy walls of Baccanti, a cave restaurant, created a private nook where we feasted on silky pappardelle pasta with a cinghiale (wild boar) ragu, accompanied by a dry, fruity red aglianico from the nearby Vulture wine region. Tired and sated after a full day, we headed back to our cave—on moonless nights, a flashlight or trail of bread crumbs is advised for the stumble back to the hotel—where the promise of a deep, sound night’s sleep awaited. —Amy Cortese Hotel Sant’Angelo, 39/0835-314010, from $211 for a double.     The Mountain Room Restaurant at the Yosemite Valley Lodge isn’t open for breakfast or lunch, so make your dinner reservation before dark to catch the star attraction: drop-dead views of the 2,400-foot Yosemite Falls from almost every seat in the dining room. Alternatively, you can stop by for Sunday brunch, which includes nearly as many offerings as the one at the Majestic Yosemite but for about half the price. In warm weather, diners can sit on the outdoor patio and enjoy such dishes as seafood risotto, several cuts of steak, and grilled pork chop with stone fruit, arugula, and smoked pecans. There’s also a lounge with a limited yet tasty menu (ceviche, charcuterie plates, sandwiches), which is popular with climbers and those who enjoy watching a game on the TV or cuddling next to the Swedish fireplace. Note: This restaurant is open year-round.

    Fifteen minutes from Avenue of the Giants is the home of Eel River, America’s first certified organic brewery. (Although Eel River moved its main brewing facility to nearby Scotia in 2007, the company continues to make small batches at its Fortuna brewpub.) Eel River’s beers are well-known regionally and have won numerous awards. The brewpub also serves food, much of it crafted from local ingredients; its menu ranges from salads to barbecue to an Oreo truffle. The pub is actually on the site of the historic Clay Brown Redwood lumber mill, and much of the bar was fashioned from reclaimed wood. You can still see parts of the old mill as you sit in the beer garden.

The luxury property has no communal spaces, beyond the decks, beaches, a riverside yoga pavilion, and the Zing Zing restaurant. Instead, guests retreat to six elegant villas and bungalows, fully stocked with their choice of goodies. Conceptualized by Venezuelan architect Fruto Vivas, villas fuse high design, local craftsmanship, and sustainably sourced materials like Guyanese hardwood. Guests can look forward to plunge pools, gourmet kitchens, pillow hammocks, and furniture carved from red cedar, along with high-tech touches like Apple TVs and Sonos Bluetooth speakers.

    Committed to sustainability, owner Gregor Nassief helped site Secret Bay’s villas to preserve the rainforest and oversaw construction of the entire resort without any heavy machinery. The property also plants vetiver to strengthen its cliff location and has applied to create a marine reserve in the waters below, where parrotfish flit among the coral. Explore them with the complimentary kayaks, stand-up paddleboards, snorkeling gear, dry bags, and GoPros on offer, or head to the treehouse-style spa, which gazes down on the cove and offers treatments like massages with custom-blended local oils. Guests can also opt to create their own culinary masterpieces or have the chef’s choice delivered by their attendant, who also serves as their housekeeper and adventure concierge.

    Over the next few years, Secret Bay will slowly expand to 50 villas, hidden among the neighboring 27-acre valley and ridge. In the meantime, swim to the resort’s waterline cave or paddle a kayak to the soft, golden Secret Bay beach. Though open to the public, like all Dominica’s coast, the beach sees very few visitors, meaning you might very well be the only one there.
