    Cyclone Cafe is one of very few Darwin coffee shops that sources its own beans from around the world and roasts them on-site. So you can expect a solid flat white, long black, and cold drip here as well as some fun additions like a triple-strength “hypercino,” the “cafe de coco"—choice of coffee blended with coconut milk—and a virgin espresso martini: a cold drip coffee shaken with with ice and a shot of vanilla that’s topped in foam. The food menu is equally satisfying with a breakfast burrito and “eggs in hell” (polenta poached eggs layered with tomato ragout, spicy chorizo and bocconcini) plus a Thai beef salad and a turkey cranberry for lunch—turkey is surprisingly hard to come by in Australia.
  • North of Tbilisi, you’ll find some of Georgia’s most iconic attractions: Jvari Monastery and Svetitskhoveli Cathedral, both UNESCO World Heritage sites, located in Mtskheta, the former religious center of Georgia. Then drive along the stunningly scenic Georgian Military Highway to Stepantsminda, commonly known as Kazbegi, where neighboring Mount Kazbegi makes for great walking or biking. Stay at Rooms Hotel Kazbegi in the 6,000-mile high Kazbegi village. This improbably stylish mirage of a mountain lodge was the brainchild of a local gambling tycoon, Timur Ugulava. A minimalist Scandinavian aesthetic (and barely any closet space) dominates inside the serene 156 guestrooms, all with breathtaking views on snow-covered slopes. The public spaces are decorated with fascinating Georgian vintage film posters, old rugs, bookshelves, and leather couches that invite endless lingering. The restaurant does stylish takes on Georgian dishes; don’t miss the khachapuri (cheese pies). There’s also a cozy bar with its own fireplace and cigar menu, a sweeping sun deck, an almost Olympic-size indoor swimming pool, and mountain bikes for the guests. The building is fashioned from metal, glass, and local wood reclaimed from old buildings.

    This pub was made famous in Jeannie Gunn’s book We of the Never Never and a 1980 film of the same name. Gunn’s husband, Aeneas, is buried in the local cemetery, and the town has completely embraced the slogan “Capital of the Never Never,” even starting a Never Never Festival in honor of the story that put Mataranka on the map. The mock-up of the homestead used in filming is next to the bar’s car park. After you’ve explored the town and swam in one of its many thermal pools, cool down with a frosty beer in one of the outback’s most famous rooms.

    Kakadu’s tallest waterfall turns on in the tropical summer (book a scenic flight to see it in full force), but in the dry season, between June and November, Jim Jim Falls transforms into a deep swimming hole surrounded by boulders and 500-foot cliffs. To get here, turn east off the Kakadu Highway 43 kilometers south of the Bowali Visitor Centre. Then travel 60 kilometers down a four-wheel-drive track, which easily takes two hours each way. Several tour companies include Jim Jim in their itineraries for travelers who don’t want to drive on their own. Either way, the rewards far outweigh the trek, and the views are spectacular.
  • Benjamin Matthews, formerly known as “The Pizza Man” at various Darwin markets now runs an outdoor pop-up Italian restaurant called Cucina Sotto Le Stelle at the Nightcliff Foreshore. Follow the smell of wood-fired pizza mingling with tropical sea air to find in-the-know locals and travelers gathered at checkered communal tables eating squid-ink pasta and chewy pizzas topped with prawns and local veggies as well as salty muscles and other Northern Territory specialties. It’s the best thing that’s happened in this part of Darwin since the Mindil Beach Markets began. Cucina Sotto Le Stelle pops up every Wednesday and Friday at 5pm, but check the Facebook page for updates.

The first-class Spa & Salon At Graton would be enough reason for me to stay here. This full service oasis is staffed by caring professionals and caters to both men and women. The Privai Hydra Facial which combines cleansing, exfoliation and hydration is a non-laser skin resurfacing treatment. I can attest to the exceptional results. The salon has a Walkabout Foot Love service that leaves you with soft feet and beautiful toes either with or without polish. Dining options here either come from existing local hot spots or are concepts created exclusively for Graton Resort & Casino. An Italian restaurant, by San Francisco favorite Tony’s of North Beach serves delicious artisan pizza and Italian classics. Boathouse Asian Eatery serves favorites like sushi, sashimi, Steamed Whole Fish, Chinese Duck Noodle Soup, and Beef Chow Fun made with tenderloin steak and wide flat Fun noodles. For a modern take on Asian-fusion the Jalapeno Poppers with spicy crab, cream cheese, sriracha and unagi sauce are divine. The ubiquitous casino steak house has been re-imagined here as the casually elegant 630 Park Steakhouse. Go “all in” and start with the Seafood Jumbo Jackpot a multi-tiered offering of Maine lobster, shrimp, oysters, Dungeness Crab, and crab claws. Double-down with any of their tender, aged steak cuts or the Ahi Tuna Steak, just seared on the outside and sliced for you. Don’t miss the sides like Creamed Corn (this one is special) Classic Tater Tots or creamed Spinach. There is a ballrooom and event center in a separate building with state of the art sound and lighting in a space that can be configured for a small or large event. Come for a show featuring top talent like Patti LaBelle, Art Garfunkel or Kathy Griffin. The pool area is gorgeous, reminiscent of Miami with its sun lounges and private cabanas upholstered in an eye-popping orange. “Cabo lounges” sit right in the pool so all you have to do is lie down, soak up the sun and trail your hands or feet in the water. And yes there is a full-service pool bar which also makes for a romantic spot at night when the glowing fire pits are lit up under the Sonoma stars.
  • Long before there was real tourism in Uluṟu-Kata Tjuṯa National Park—indeed before the region was declared a national park—Peter Severin arrived to Curtin Springs with his young wife Dawn, a toddler and 1500 cattle. Severin must have had a hunch because the first tours to Uluru started the following year. The cattle station is still in operation today as is the pub, motel and general store that formed the first tourist outpost outside Alice Springs. What’s newer are walking tours that explore the million-acre cattle farm and wildlife corridor as well as nearby salt lakes and Mount Conner. Book a full-moon salt lake excursion and then relax with some amber fluid (beer) in the old Bough Shed that’s been sheltering travelers for decades.

    The town of Adelaide River, about an hour south of Darwin near the entrance to Kakadu National Park, has a layered history, starting with its role as a base for workers constructing the Overland Telegraph Line and continuing with its military presence during World War II and an influx of gold prospectors in the 1970s. Today, travelers mainly come to visit Charlie, the water buffalo that Mick Dundee (Paul Hogan) hypnotizes to the ground in the outback hit Crocodile Dundee. Charlie passed away in 2000, and since he was a loyal patron of the Adelaide River Inn for so long, he was stuffed and hung for all to appreciate.

    Before America had the Outback Steakhouse, Australia had The Overlanders in Alice Springs, a Northern Territory institution housed in the building that served as Alice Springs’ first town hall. Opened by Daphne Campbell (now Calder) and named after the Australian drama The Overlanders in which she co-starred, the place is part restaurant, part museum where antique leather saddles and framed playbills showcase the ranching and film history of the town. Celebrity fans should look for familiar autographs on the “windmill of fame.” Besides the decor and heritage, locals and tourists flock here for the quintessential cuisine, exemplified in The Drovers Blowout menu: a four-course meal that includes a platter of crocodile vol-au-vent, kangaroo fillets, buffalo medallions and wild camel served with plum sauce.

    The Daly Waters is everything an outback pub should be: kitschy but “fair dinkum” (genuine) and in the middle of Woop Woop (the Aussie term for “the Boonies”) but still offering revitalizing grub and grog. Oh and there must be beds, considering the next one could be a few hundred miles away. This ancient watering hole, established in 1893 and named after this small town along the Explorers Way between Alice Springs and Darwin, ticks all the boxes and then some. The tap beer is delightfully cold (kept at a degree below freezing), and food offerings range from kangaroo loin and crocodile sliders to chicken shnitzel. The decor is the best part; everywhere you look there are hilarious mementos left by patrons. Are those bras over there? Yup. An Irish hurling stick? Yeeeaah. Why is that weird?
  • You’ll need to hire your own boat to get here, so it’s not the sort of pub you can simply stop into for a drink. But adventurous travelers seeking an offbeat drop and stay should look no further than this charming speck of an island in the middle of the Adelaide River. Yep, that’s the same Adelaide River that’s famous for jumping crocodiles. Kai Hansen (you’ll quickly understand why he’s been nicknamed “Happy”) is the sole inhabitant of Goat Island, unless you count his pet: an 11-foot, 770-pound saltwater crocodile named Casey. The bar is named after the joint’s toothy friend and serves burgers, hot dogs, fresh-caught barramundi, local crayfish and Kai’s famous croc balls. Don’t tell Casey what they’re made of. The place has long been a haunt of local fishermen, but the word got out. Call Jim at Arafura Boat Hire (+61 8-8988-1265) and tell him Happy sent you.

    My first visit to The Lazy Fish was for a wedding and I simply wish I could have stayed longer. This is not your usual guesthouse; for a start you can only access it by boat and at the end of the private jetty where you disembark is an old style telephone box - that actually works! The Lazy Fish is secluded in the Marlborough Sounds at the top of the South Island. Perfect for a real ‘getaway’ the serenity is amplified by the native birdlife and the gentle washing of water on the pebbled shore. There is a beautiful native garden you can walk through, complete with large palms, and on those rare occasions where the weather isn’t the best you can simply pick up a book and relax inside on one of the most comfortable chairs in the world!

    Much of Santa Fe’s architecture feels lifted from (or, at any rate, inspired by) historic pueblos, but the Inn on the Alameda takes the impression several steps further, set as it is on two lush, riverside acres just on the edge of downtown. Rooms are arranged around serene courtyards whose stucco walls feature flowering vines, and communal areas like the well-stocked library—with its roaring fireplace for those chilly desert nights—and romantically candlelit lounge patio make it feel more like an old (if, admittedly, luxurious) family compound than the intimate boutique hotel it is. All areas are outfitted with rustically refined Southwestern decor—Native American textiles, Mission-style wood furniture, and local artwork—that blend modern and traditional worlds, a philosophy also embodied in the inn’s dedication to understatedly superlative service, which includes free breakfast, wine and cheese each evening, and a free shuttle around town. Oh, and an extra perk that makes guests feel even more like locals? The inn is the closest hotel to the gallery-lined Canyon Road.

    In 1923, the artist Jacques Majorelle acquired a four-acre plot of land just outside the center of Marrakech. Inspired by numerous travels around the country to paint scenes of village life, and funded by painting more illustrious portraits such as that of Pasha Thami el Glaoui, Majorelle was able to build a small studio and house, with enough land to indulge his other passion: ethnobotany. As his career grew, he added a splendid villa, and the garden took on a life of its own, featuring innumerable exotic species from around the world; he added pools and fountains, and, of course, the now iconic, eye-popping Majorelle blue that was lavished on the architecture. The property became so expensive to maintain that the artist was forced to open it to the public until his death in Paris in 1962. The garden gradually fell into a state of disrepair and was slated for development by a hotel chain until French designer Yves Saint Laurent and his partner Pierre Bergé happened upon it during one of their many trips to the Red City. In 1980, they decided to buy it and restore it to its former glory, adding irrigation and doubling the number of plants and gardeners to look after it. They moved into the villa and set about transforming other buildings into what is now the legendary Berber Museum and a boutique. The latter is especially noteworthy for creative director Stephen di Renza’s commitment to reflecting Majorelle’s lesser-known passion for the decorative arts (which is manifest in the exquisite artisanal pieces, leather goods, and jewelry) and Saint Laurent’s inspired use of traditional Moroccan dress, such as the kaftan and djellaba, in haute couture fashion.
