    When I stepped into the grand lobby of Québec’s Le Château Montebello, I felt like I was entering Paul Bunyan’s living room. Giant timbers braced a three-story-high ceiling, and a massive fireplace in the center radiated warmth in all directions. After checking in, I joined the guests gathered around the six-sided hearth and sank into a leather club chair. I spent the rest of the day by the fire, sipping hot toddies and napping, as the comfort of the crackling flames sent me and the other fireside dozers snuggling deeper into our cushions. I had come to ski some of the 65,000 acres of wooded backcountry that neighbor the resort, but the château was so welcoming, I found it hard to leave.


    Often described as the world’s largest log cabin, the lodge and two other main buildings were constructed in 1930 from 10,000 red cedar logs and 500,000 handmade wooden shingles. The houses and the vast surrounding forests were long owned by the politically prominent Papineau family, and until 1970, the estate remained a private nature retreat for Canada’s upper class. As I walked through the château’s halls, the intricately carved banisters and exposed beams reminded me of the great western lodges in the U.S. national parks—only without any grumpy tourists demanding to know where the animals are.

    In the guest rooms, deluxe amenities such as flat-screen TVs and rain-dome showerheads upstaged anything found in Yellowstone or Yosemite. Despite the modern perks, rawhide lampshades and other rustic details helped my suite retain its frontier appeal. When I got up to pull the plaid drapes closed that night, I watched a horse-drawn sleigh pass by, glowing in the moonlight against the dark ribbon of the frozen Ottawa River.

    Without fresh snow to ski the next morning, I was left to explore the lodge’s other activities. I opted out of getting scrubbed with maple sugar at the spa or unsuccessfully flirting with French-Canadian women by the fire, and instead devoted the day to learning the inscrutable rules of curling. The château has an indoor ice rink dedicated to the sport, a national favorite that’s best described as a combination of shuffleboard and falling down a lot. My instructor was Henri, a kindly sexagenarian who, like many in Québec’s western Outaouais region, seemed more comfortable speaking French than English. As it turns out, kindly reassurance sounds the same in either language. But as my backside repeatedly hit the ice, Henri’s patient polyglot insistence that I was doing “une belle job” grew progressively less convincing.

    After my rough-and-tumble day, I dined in the white-tablecloth Aux Chantignoles restaurant. Québecois cuisine dominates the menu, and I followed a dinner of tender venison osso buco with a slice of Québec’s famously sweet and jiggly sugar pie—think pecan pie sans pecans. Snow fell just in time for me to ski through the nearby forest on my last day. I spent a long afternoon there, gliding among stands of birch, pine, and spruce in the rolling Laurentian Highlands. Now and again, I paused to admire one of the countless frozen lakes, their smooth surfaces dotted with tracks left by moose and white-tailed deer. I skied in the silent wilderness until just after sunset. As the scent of a wood fire began to tickle my nose, I grew eager to cozy up by the hearth again. I turned back toward the château’s stone chimney, its rising plume of smoke signaling for my return.

    At Maison Verot, locals get in line to stock up on all kinds of elaborate goodies. Verot has been making some of Paris’s best charcuterie since 1930, and it is still winning prestigious awards. Products vary with the season but will most likely include elaborate pâtés baked in pastry, local sausages, preserved meats called rillettes, a selection of deli salads, and a variety of products preserved in aspic. Verot’s location is convenient to the Luxembourg Gardens, so perfect for a nearly instant picnic.

    Known for the poetic hippie style of her jewelry designs, Emmanuelle Zysman works from a Paris atelier, designing pieces in hammered silver, vermeil, and gold studded with semiprecious stones, like black diamonds, garnets, and turquoise. She began her career designing leather wallets and bags, but her silver good-luck bracelets became impossible to keep in stock, so she expanded the jewelry selection to include stackable rings and stringed bracelets. This gifted designer can even give simple hoop earrings an extra sense of swag.

    A good start to your visit to Québec City is a stop at the Observatoire de la Capitale, just past the Parliament Building. The observation deck on the 31st floor of the Marie-Guyart Building stands 725 feet high and offers 360-degree views of the city. From here, the highest building in the city, you can get a sense of the lay of the land—Old Québec jutting out into the St. Lawrence River, Cap Diamant to its south, the Louise Basin marina and St. Charles River to its north. New signage added in 2016 provides cultural, economic, and historical background on the sights below. After you have surveyed the city, descend and explore it on foot.

    Hôtel du Roi Christophe is a small, relaxed boutique hotel, nestled in a lush tropical garden in the midst of humming Cap Haitien. It’s not über–luxurious, but perfectly comfortable, and it attracts travelers and business people alike. There’s a great, comfortable terrace, a good place to hang out and let the day spool past one more time, drink in hand. The central location (ten minutes to the cathedral and Place d’Armes) makes it a perfect starting point for excursions on foot. The jewelry, furniture, garments, and housewares displayed here have been created exclusively by members of a French artist collective. Season café serves drinks and treats from mugs, plates, and glasses that are conveniently available for purchase. There is a bookstore for those looking for inspiration. The indigo-dyed scarves are a très Parisien souvenir for friends and family at home, and the wooden bowls and small vases pack nicely into most luggage.

    Chef Normand Laprise’s impact on Montréal’s culinary scene starts with the dishes served at Toqué, but it extends to the many restaurants headed by young chefs who honed their skills in his kitchens. Among the most notable is Montréal Plaza, opened in 2015. Charles-Antoine Crête, who worked with Laprise for 14 years, presides over this contemporary brasserie along with Cheryl Johnson, a former sous-chef at Toqué. The choice of location—on the Plaza St-Hubert, an outdoor shopping street with 400 businesses linked by a trademark green canopy—surprised some given that it’s a high-end gourmet restaurant, but the 70-seat Montréal Plaza includes a number of small rooms that create a sense of intimacy in what could be a cavernous space. The menu consists of small plates intended to be shared, with dishes like baloney cannelloni and a Caesar salad with chicken livers embodying Crête’s approach to cooking: irreverent, fearless, and (almost) always surprisingly delicious.

    If you visit in the autumn, watch out for the falling apples on the outdoor terrace of this old fondue chalet in the center of the medieval village of Gruyères. Salads are fresh heaps of greens, bouillon is served with or without egg, and platters of AOP-protected (Appellation d’Origine Protégée, or Protected Designation of Origin) dried meats arrive on cutting boards. But since Gruyères is home to Switzerland’s first luxury product, Gruyère cheese, opt for heavy stuff like croûte au fromage (an open-faced grilled-cheese sandwich), gooey raclette served with boiled potatoes, Alpine macaroni and cheese, quiche gruyèrien, and moitié-moitié fondue, made with pungent vacherin and Gruyère cheeses and best washed down with Swiss wines like chasselas. In the winter, don’t miss the fondue vacherin, served melted in its original tree-bark packaging, or the chestnut vermicelles atop a bed of meringue and Gruyère double crème.

    With its leafy side streets, must-browse boutiques, and burgeoning food scene, Gueliz is quickly resembling pockets of Paris, particularly as more and more bistro-inspired places open their doors. Le Petit Cornichon is like a breath of spring with its splashy Majorelle blue and daffodil yellow color palette, floor-to-ceiling windows that look out onto the street, and animated atmosphere. Toward the end of the week, you’ll find half of Marrakech here indulging in a laid-back lunch before heading down to the beach at Essaouira for the weekend, but it’s a lovely place for a prix fixe lunch any old time and a good value to boot: two courses for $17, three for $21. Settle in to peruse an excellent wine list before tucking into dishes such as sea bass ceviche with grapefruit and pink peppercorns, tarragon chicken, and a sliver of wickedly rich chocolate tart.

    The choice of whether to build a church following a Gothic Revival or neoclassical design involved more than just aesthetics in 19th-century Québec. The former tended to be associated with Protestantism, and so the construction of the Catholic Basilica of Notre-Dame in that style raised eyebrows. When the St-Jacques Cathedral was destroyed by fire in 1852, the architects who designed a new church for the site, the Mary Queen of the World Cathedral, opted for the neoclassical style that was more typical of Catholic buildings. Constructed from 1874 to 1895, it is a quarter-scale version of St. Peter’s in Rome, complete with coffered vaults and twisting columns in imitation of those of Lorenzo Bernini’s baldachin in the Eternal City. The building’s green copper dome makes a statement, too, looming as it does over the largely Protestant neighborhood. The stucco crucifix by sculptor Philippe Hébert is one of most important works of art in the church.

    Located in Old Québec, not far from the St. Lawrence River, the Musée de la Civilisation (Museum of Civilization) is an enormous (for Québec City, at least) museum with lofty ambitions. Exhibits cover just about every culture imaginable—at any given time you might find Greek sculptures displayed alongside totem poles, or an inquiry into Egyptian ideas of the afterlife juxtaposed with Australian Aboriginal artworks. Most of the time you can count on at least one exhibition focusing on some aspect of Québecois or Canadian culture, from the history of trapping to spotlights on individual Québecois artists and designers. Many of the exhibits, like a recent one focused on cats and dogs, are designed with kids in mind, with engaging, interactive installations. Even if you’ve been here before, every visit to the museum is, by design, a new experience.

    It’s as powerful an artistic representation of a country and its people as I’ve ever come across anywhere – Le Negre Marron, or in Creole, Neg Mawon. Translated into English, it’s The Black Maroon. In any language, it’s simply amazing. Commissioned by the Duvalier government to commemorate the landmark slave revolt against France that won Haiti her freedom in 1804, the statue was produced by Haitian sculptor/artist Albert Mangones in the late-1960’s. It’s an extremely moving piece – the left leg extended with a broken shackle at the ankle denoting the hard-fought freedom, a machete in the right hand showing the strength to fight, and the conch shell at the lips harkening to the old and oft-used method of alerting the masses. What makes the statue even more significant today is the fact that it survived the devastating earthquake of January 2010 completely intact. Even as major buildings like the National Palace crumbled all around it, Le Neg Mawon stood firm, resilient in the face of tragedy much like the people of Haiti have for hundreds of years. Le Neg Mawon is located in downtown Port-au-Prince, just a few short blocks from the Marriott Port-au-Prince, the country’s newest and most modern hotel.

    A maze of narrow medieval streets wind up and down this village perched along the Grande Corniche. The ruins of a château are now an exotic garden, and the 18th-century neoclassical Notre Dame of the Assumption church is a national monument. Spectacular views inspire artists and artisans, and their galleries fill the village. Exceptional restaurants like the Château Eza are happy to welcome guests for a drink or a Michelin-starred meal as they relax and savor the scenery.

    Who would have expected that an ancient order of nuns would be generating buzz in Québec City’s restaurant scene? The Augustinian Sisters have been present in the city since the 17th century, devoted to caring for the poor and suffering. But as their numbers declined the nuns chose to venture in a new direction, and in 2015 they opened a wellness hotel and a restaurant. The menu is limited—soup, a salad bar loaded with grains and roasted vegetables, and a choice of a chicken, fish or vegetarian entrée. On a recent visit, a dish of chicken and wild rice in green curry sauce proved to be one of the most memorable meals in a city of excellent restaurants. The money raised by the hotel and restaurant helps support the nuns’ outreach programs—which makes eating well feel even better.
