    Iconic chef Roy Yamaguchi helped popularize Hawaiian-fusion food a generation ago, but at Eating House 1849 he takes a delicious detour with dishes inspired by Portuguese, Spanish, and Filipino flavors. This “plantation cuisine” evokes the immigrant dishes served in the mid-1800s, when the state’s first restaurant—a Honolulu establishment called Eating House—opened (according to legend). Yamaguchi brings some serious chops to the table: He trained at the Culinary Institute of America before serving as executive chef in Los Angeles‘s La Serene and winning a James Beard Award. The menu shifts seasonally, according to what farmers, foragers, ranchers, and fishermen produce. Expect delicacies like a beef-and-wild-boar burger and pork lumpia with green papaya. Cap it all off with cinnamon-dusted malasadas (Portuguese doughnuts) with Koloa Rum sauce!

    Hull Bay Beach—on the north shore of St. Thomas, west of Magens Bay—has the wave action surfers crave. When there’s a northern swell, the beach is considered the best surf spot on the island. The rest of the time you’ll find snorkelers, local families, and fishing boats bobbing out in the bay. The beach bar is a popular island spot.

    One of the best places to feel the local side of Reykjavik life, the Kolaportid Flea Market is set in a spacious industrial warehouse close to the city’s old harbor. Open at weekends only, you can find anything from wool jumpers and vintage fashion garments to fermented fish and licorice, plus plenty of second-hand books and decorative knickknacks. Best to go early to avoid the crowds (it opens at 11 a.m.)—and best to have cash on you since many of the market’s vendors don’t accept credit cards.

    Inishmaan is one of the Aran Islands of the west coast of Ireland—one of the most unspoiled spots in the country—and Inis Meáin restaurant uses the good things that come from the pure earth and sea around it. The garden and greenhouse grows salads, herbs, and vegetables, while the fish is wild caught from the Atlantic, and meat is homestead reared. The restaurant has large windows overlooking the ocean and island and seats just 16 guests for a four-course dinner. The menu changes nightly, based on what’s available and in season, and each dish prepared by chef and native son Ruairí de Blacam has just two elements, a unique dining experience indeed. Open from April to the end of September.

Pay a few ruppees, pack a picnic lunch and guide yourself around the serene Lake Phewa.

    The most northern of the Northern Beaches, Palm Beach makes for a relaxing day or weekend trip. Here, a sandy isthmus straddles ocean waves and harbor sails, and the Barrenjoey Lighthouse stands watch a short hike up the hill. Snag a spot on the deck of the Boathouse—a Hamptons-style beach shack complete with crab traps, striped awnings, and all manner of flowers and produce on display—for a bacon and egg roll, croissant French toast, or beer-battered flathead and chips overlooking the water. After finishing that cappuccino, which started with an anchor stamped into the foam, take the ferry across the inlet to the Basin campground in Ku-ring-gai Chase National Park to swim, stand-up paddle board, and search for wallabies in the wild.

Sure, there are all the requisite beach-bar amenities—a cool cocktail list, live music, and a line of loungers facing the water. The bay itself is breathtaking with limestone rocks creating a barrier protecting it from the open ocean, meaning the shallow turquoise waters are perfect for paddleboarding. Tobacco Bay is also one of the best snorkeling spots in Bermuda.

    GoBananas on Baina Beach is India’s first and only facility offering underwater sea walking, the latest trend in aquatic adventure sports. After some brief instruction and a crash course in sign language, a boat ferries participants to Piccanye, an uninhabited island offering tame and clear waters. Walkers are set up with equipment that includes a fiberglass helmet and a four-kilogram lead waist belt before sinking three meters below the surface and effortlessly walking along the seabed, exploring coral colonies, schools of fish, and other marine life. Sessions last 20 minutes and no swimming experience is required! Note: Though considered zero-risk, underwater sea walking is not recommended for those suffering from claustrophobia.

    Kolmanskop is a ghost town that was abandoned by German miners after the 1920’s. In the 1980’s, diamond giant De Beers refurbished some of the structures and established an on-site museum. After you check in and get your permit, you’re allowed to wander freely through the small village. Piles of sand have accumulated in and taken over some of these colonial-era homes, a good indication of how hard it must have have been for the inhabitants. It’s an excursion that involves some planning beforehand, but it’s so worth the effort. Photographers love getting creative here. Kolmanskop is about 3 hours from Keetmanshoop and 5 hours from the Fish River Canyon, down the dead-end road to Luderitz on Namibia’s coastline, so you’ll want to time your excursion down this way bearing that in mind.

    Swim with large southern stingrays in the warm blue water around Gibbs Cay. This secluded seven-acre island is a short boat ride from Grand Turk and a popular day trip for many visitors. The stingrays are quite friendly after years of regular feeding and interactions with humans. Your boat guide will provide fish scraps to feed the rays as you snorkel in the shallow water. Day trips may also include time on the island and stops to snorkel and dive for conch.

The pastas—all handmade from locally milled grains—have great texture, strength, and a depth of flavor that sets the restaurant apart from stereotypical red-sauce joints. It may be a sleek, modern space, but the chipped vintage Italian sinks and classic movie posters near the restrooms show that L’Oca d’Oro is a place to feel both transported and at home.

    It took a 1920s cotton magnate and a 1980s oil heiress to create the city’s most iconic stay, the former incorporating hallmarks of European design into a 10,000-square-foot house the likes of which had never been seen in Dallas—think Italian marble columns, 19th-century Spanish cathedral doors, and a ceiling inlaid with 2,400 separate pieces of wood. The latter transformed it into the Mansion Restaurant, which remains an award-winning favorite, adding a new wing with 143 guest rooms and suites and establishing the first property in the now-global Rosewood chain.     Rumi was born in Afghanistan, spent time in Persia (Iran), then settled in Konya, Turkey when his father was invited there to be a scholar. Rumi became an Islamic scholar himself teaching peace, love, and tolerance. He built quite a following of the educated – who saw him as a wise philosopher – and uneducated – who saw him as a prophet. Rumi’s life changed when he created an intense friendship with an older, wandering mystic -- Shams of Tabriz. Shams was a brilliant outcast and Rumi was deeply drawn to a learning relationship with this man who was ultimately supposedly killed by some of Rumi’s fans due to the influence he was having on the younger Rumi. From this tragedy, Rumi found a deep well inside himself filled with an ability to channel poetry. It was about this time that he also introduced the experience of divine harmony that comes from whirling. Thus, a new form of religious ecstasy was created and the Whirling Dervishes (also known as the Mevlevi order) have been doing this annual ceremony marking Rumi’s death for almost 750 years. This is the start of the Sema (ceremony) with each Semazen (dancer) bowing upon arriving on stage and the Basi (the leader) at the “head of the class.” The mesmerizing ceremony represents man’s journey to the oneness of perfect truth – amidst separation and longing - through the power of divine love. In 2005, UNESCO proclaimed the “Mevlevi Sema Ceremony” as amongst the Masterpieces of the Oral and Intangible Heritage of Humanity.
