    Named for the overnight train that served Santa Barbara from 1910 to 1968, the Lark restaurant showcases the Central Coast’s seasonal bounty. Located in the Santa Barbara Fish Market Building, in the heart of the city’s Funk Zone, the innovative restaurant combines a farm-to-table ethos with a family-style approach. During most months, the outdoor courtyard seating is as convivial as the tables in the dining room. The menu of small plates is organized by their ingredients’ places of origin (farm, ranch, or ocean): crispy brussels sprouts include sweet medjool dates as well as spicy serrano chilies; pickled fennel and compressed Granny Smith apples accompany the grilled Kurobata pork belly; and passion-fruit vinaigrette and fried avocado enhance the flavor of Japanese hamachi collar. Larger platters are meant to be shared, and restaurant regulars often choose one or two (the Baharat spiced cauliflower and Israeli couscous is a favorite) along with several smaller plates. Pro tip: While it’s tempting to fill up on the herbed popcorn that’s delivered to your table the instant you’re seated, slow down, order a craft cocktail, and make sure you save room for the main event.

The Astor also features a wide-ranging menu that updates Brazilian classics with unusual ingredients and more ambitious presentations of standards like arroz com feijão. The entire mix translates to one of Rio’s winningest combo of bar-rail and white tablecloth venue.

Zahav is the Hebrew word for “gold,” which is reflected in the beautiful golden decor of the restaurant. Try the restaurant’s signature cocktail, the refreshing Lemonnana—Jim Beam, muddled mint, fresh lemon, and verbena—served by the glass or by the pitcher. Save room for dessert; the coffee custard is divine. The bar at Zahav is a popular weekday spot for happy hour from 5 p.m. to 7 p.m. Dinner reservations are a must.

Beyond the rooms, there is a 70-foot infinity pool to chill by as well as a lengthy list of activities that will keep the kids busy while you do so. A spa and two restaurants -- one casual, the other more formal -- complete the picture. Oh, and on Monday nights, the property’s general manager hosts a cocktail hour with free drinks, tapas, and live music for guests. Tuesday nights are dedicated to BBQs on the beach. The villa resort also works well for couples, as the suites here are beyond spacious and very private and there are a few different swimming pool options.

    The Old Imperial Bar is an old-school Tokyo bar favored by some of Japan’s political and financial elite, who come for its demure and consistent service. The popular bar snack kaki pi—spicy rice crackers and peanuts—originated here and is still being served. Soak in the nods to Frank Lloyd Wright, who designed the original hotel: the Hopi-inspired carpet design, the terra-cotta grillwork, and the polychrome and gold-leaf fresco on the wall in the back of the room. Classic cocktails reign, such as a gin and tonic made with the Kyoto-distilled gin Ki no Bi, with notes of yuzu, green tea, and ginger.

In the lively modern space—all blond wood, concrete, and industrial lighting—chef/owner Engin Onural serves a creative lineup of sushi, including the Sandfish (a spicy tuna and crab-meat roll topped with fried potato slivers) and zucchini flowers filled with tuna and cream cheese. Things get really interesting at the bar. Using all craft ingredients—house-made syrups, fresh juices, artisanal spirits, and local brews—the bartenders create inspired whiskey-centric cocktails. Try the elegantly layered Old Fashioned (made with Nikka Pure Malt, Pierre Ferrand 1840 Formula cognac, bitters, and Demerara sugar), and a play on a Spanish gin and tonic called Foraged, which features Death’s Door white whiskey infused with wild juniper berries Austin forages himself, plus fresh grapefruit, Szechuan peppercorns, rose petals, and yuzu.

    Rimrock Cafe stood by itself as Whistler’s destination dining room for years as Whistler Creekside Village matured around it. Chef Rolf Gunther’s menu doesn’t dazzle you with fads, but focuses instead on classics such as terrine of duck confit, foie gras, rack of lamb, and the Rimrock mixed grill, featuring filet mignon, lamb chop, and venison. Like the menu, Rimrock’s cocktails recall former days when every element of a dining experience was done exactly right (try the Canadian Whisky Sour). Not surprisingly with its cuisine and cocktails held at such high standards, Rimrock is known for consistently impeccable service.
