    Visitors looking to tour Casa Herradura—the distillery that’s been making Tequila Herradura for more than 145 years—should hop aboard the new Tequila Herradura Express. The train leaves from Guadalajara and travels through Jalisco’s agave fields, stopping in Amatitán (the official birthplace of tequila) before arriving at Casa Herradura. Once at the distillery, guests enjoy tastings, lunch, and live music, then get back on the train, where they’re treated to bar service and entertainment all the way back to Guadalajara.

    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.

    Superlatives reign at this massive Palm Beach resort. Among the outsize offerings? The biggest casino in Aruba, with more than 500 slot machines and 26 gaming tables, as well as the island’s largest spa. Its 414 accommodations aren’t lacking for space either: Each room has a walk-in closet, double-sink bathroom, and private balcony; the highest-end suites are so palatial their balconies alone measure up to a sprawling 500 square feet—with ocean views to sweeten the deal. When you’re not playing roulette or indulging in a moisturizing coconut-milk wrap, kick back in one of the beachside palapas, or practice your breaststroke in the free-form pool, complete with cascading waterfalls and a volleyball net (a serene adults-only pool features a swim-up bar if that’s more your speed). In keeping with the more-is-more theme, guests are spoiled for choice with seven on-site restaurants, bars, and cafés, including a Ruth’s Chris Steak House, where the 500-degree plates ensure another best—the hottest meal in town.

    For comida típica (home-style food) in Guadalajara, you can’t beat La Chata, an old-school, diner-style restaurant that’s been around since 1942. Generations-old recipes for enchiladas, flautas, and the platillo jalisciense (fried chicken and five sides) along with hefty portions and low prices keep locals lined up around the block. However, the line moves fast and the food comes out faster, so you won’t be waiting for long.

    La Casa de Don Juan knows how to do breakfast. An instant hit when it opened, the restaurant initially focused entirely on the most important meal of the day with dishes like pancakes, huevos divorciados (two fried eggs, separated on the plate by refried beans), chilaquiles (eggs, scrambled or fried with crisp strips of tortilla and topped with salsa), and several other Mexican favorites. Its café de olla—a traditional cinnamon-sugar coffee—might be the best in all Los Cabos. Everything tastes like the most incredible home cooking, and the space itself more resembles a two-story residence than a traditional restaurant. The menu and hours have now extended to include lunch. Opt for the prix fixe menu or à la carte on taquitos (rolled tacos), cochinita pibil (slow-roasted pork), or chile relleno (a poblano chile stuffed with cheese and then batter fried).

Don’t rush the bartenders, who mix drinks with great attention and will happily tell you about spirits and the burgeoning Mexico City cocktail scene.

    In 1929, the man who would become Latin America’s most celebrated architect, Luis Barragán, built two houses for Sr. Ildefenso Franco to rent. Many years later, an architecture aficionado purchased and restored one of the houses, preserving its original tiling, floors, and finishes while adding contemporary furniture and local artisan textiles. The house, which features five private rooms, now operates as an Airbnb, giving guests the chance to stay in one of Barragán’s earliest works.

    If you choose to stay here, be sure to check out the hidden room above the garage. Working during an era when the Mexican government endeavored to suppress the Catholic Church, Barragán—himself a devout Catholic—built the secret room as a place where priests could lead mass in the old-fashioned manner, by turning their backs to the attendants. The space eventually became the servants’ quarters and fell into disrepair, but has since been restored to its former glory, along with its lovely terrace.

    When famed chef and restaurateur José Andrés opened this Mexico City restaurant in 2015, it was his first franchise outside of the U.S. and Puerto Rico. J by José Andrés is located inside the W Hotel in the upscale neighborhood of Polanco, and the interior design would be a satisfying experience even if the food wasn’t absolutely fantastic. All reds and yellows and just short of over-the-top elements (e.g. dozens of tassels) evoke Spain and bullfighting, but in a way that’s totally contemporary and delightfully playful—much like Andrés himself. (If you really want to play, there’s a foosball table in one of the rooms in the restaurant.) Thankfully, the food is fantastic, too. Like the decor, the menu evokes Spain, with classic recipes like ham croquettes alongside dishes that incorporate Mexican elements. Think traditional paella, but garnished with squash blossoms.

    Choco–Story is located just 5 mins from the archeological site of Uxmal, so we decided to check it out on our way back to Merida. It looks a bit touristy (disney-ish) from the outside, but it turned out to be a well-executed, interactive museum, that is built around the Mayan culture and history of chocolate. A self-guided tour took us through various smaller huts chronicling the history of chocolate within the Mayan culture, and the best part? A delicious hot chocolate tasting at the end of it! Of course you can taste and buy hot chocolate powder and chocolate bars afterwards at their pretty gift store. My personal highlight though was a powerful demonstration of a Mayan rain ceremony in the forest, in honor of the god Chaac. It began with distinctive, booming sounds, alternating from different directions, from deep within the trees. It slowly traveled closer, until we saw 3 men walking towards the altar in front of us, while they continued to blow into conch shells. It was moving and allowed us a small glimpse into the mystical and majestic Mayan culture. There is also a small wildlife refuge there, with rescued Jaguars, deers, and spider monkeys, that can be fed through the chain link enclosure.     A Porfirian-era mansion provides the setting for Blanco Colima: a concept- and genre-defying project that features multiple spaces for eating, each with a different name and type of food. The main area, Blanco Colima, serves breakfast, lunch, and cocktails. It’s designed to be a welcoming home away from home. Other options include Belafonte—an oyster bar run by Chef Hiroshi Kawahito—and Lázaro, a fine dining area that features fresh local ingredients. Beyond the exceptional food, Blanco Colima is also a cultural center of sorts. The space screens films, exhibits the work of emerging artists, and hosts live music performances. Once you’re seated, you might find it hard to leave!

    Housed across a 1940s mansion and modernist tower, Casa Fayette is a stylish boutique lodging inspired by Guadalajara hometown hero Luis Barragán. With the architect in mind, Milanese interiors firm Dimore Studio designed the hotel’s 37 rooms in a Mexican palette of artichoke, salmon, and burgundy, adding a mix of custom and European furnishings by the likes of Pierre Frey and Michael Thonet. Downstairs, public spaces take on a global-chic aesthetic informed by the surrounding Lafayette neighborhood. Graphic cement tiles line the pool and spa area, while a glam brass-and-wood bar complements tropical-palm-patterned seating in the restaurant.

While this was certainly fine and enjoyable, the since-developed EdgeWalk experience has ramped up the Tower’s bucket-list potential. Thrill-seekers can now do a hands-free, breezy circumnavigation of the tower’s roof, up at 1,168 feet. And, yes, they do perform sky-high weddings complete with elasticized rings and special attire for the big day.
