Paris was at Eggs & Co. They do eggs any way—softly scrambled, stuffed with French ingredients in an omelet—but the best way to order them BY FAR is en cocotte. The egg whites are beaten with cream, then put into a ramekin with multiple other ingredients (I got cheese, ham, and chive). Then, they’re baked until firm-ish, and the raw egg yolk is added on top. Get a baguette and start dipping!
