    In a world where coffee is ubiquitous, it’s refreshing to find an establishment that cares equally about tea. Behind the bar at the Rose Estb is a shelf of jars hosting three varieties of each kind of tea: black, green, white, herbal, rooibos, oolong, and a category for an assortment of others, maté among them. This does not, however, compromise an attention to good coffee (the Rose sources it from San Francisco’s Four Barrel Coffee), which is still what most people come for. Open for brunch and lunch, the simple café menu includes frittatas, soups, salads, and sandwiches. The Rose is located on the southwest edge of downtown in a brick building that was remodeled by the owner, Erica O’Brien, and her father, and is deliberately Wi-Fi free.

    If the Djemaa el Fna is the epicenter of Marrakech, the Rahba Lakdima—otherwise known as the Place des Épices, or Spice Traders Square—is surely the epicenter of the medina itself. Bursting with rambunctious energy and high-voltage color, the market is lined on one side by mysterious herbalists and spice traders selling everything from snakeskins to rose petals to ras el hanout (the famous Moroccan spice blend), and by carpet sellers on the other. Venture to the latter’s lair around 4 p.m. when sellers come down from the mountain villages, and you’ll be treated to the spectacle of them plying their trade with the professionals. And in the middle, heaps of woven baskets and woolen skullcaps are piled high. There’s no better place to sit and watch this daily theater unfold than at the Café des Épices, the first of several that have now opened there, but still our favorite for excellent coffee, fresh salads, sandwiches, and tagines.

There are a number of locations throughout the city and in Orange County, including Santa Monica, Melrose, and Beverly Hills. With their trendy ambience and large outdoor patios, they are the perfect place to spend a sunny afternoon, especially if you love herbal teas, organic coffee, and green-tea Americanos—and if you’re keen to spot celebrities around the metropolis. Aside from delicious drinks, they also have a wide selection of vegetarian and vegan food options.

    Orlando is known for great Asian eats, and this sweet little Thai spot in Winter Park stands apart for its stylish vibe and rainbow range of iced and hot teas and desserts. KrungThep is the Thai name for Bangkok, but much of the menu skews fusion-style, with items like pesto chicken sandwiches and satay sandwiches and toast-style desserts topped with everything from condensed milk and homemade coconut ice cream to Nutella, matcha, and organic honey. Tea-lovers are in heaven here, with herbal, black, and white loose leaf varieties galore. The black and white decor scheme is both blatantly Instagram-able and cozy and inviting. For a quiet chat with a friend or a self-care moment alone, you can’t go wrong while taking a break to recharge here.

    Opened in 2017 as the first Fairmont property in Turkey, this 209-room hotel is inside a 41-story luxury high-rise in the Mecidiyeköy business district, close to high-end shopping and dining. Gaze past the hotel’s landscaped gardens to the city and all the way to the Bosphorus from your private balcony—every room and suite has one, along with a 48-inch smart TV, pillow-top mattress, rain shower, Le Labo Rose products, and your choice of tub or traditional Turkish bath (complete with heated pedestal). More Turkish flair—and flavors—are on offer at Aila restaurant and Demlique café, while Stations serves dishes from around the world and the Marble Bar pairs small bites with an international selection of wine. While these Turkish touches can be found throughout the property—most notably at the expansive Willow Stream Spa, with its selection of herbal products and authentic hammam treatments—the hotel has a decidedly contemporary vibe and style, and feels part of today’s buzzing Istanbul. Case in point: the Ukiyo seasonal outdoor infinity pool, envisioned with Instagrammable whimsy by Dutch designer Marcel Wanders.

    On arrival to Istanbul, many tourists order the chicken şiş (chicken kebab) for a meal because it’s familiar and safe, but they’re really missing out on some of the best food in the world! I encourage anyone visiting Turkey to gastro-travel through the country’s tasty cuisine and sample the many Ottoman dishes and succulent regional kebabs on offer. My favorite place to take guests is Fuego Cafe & Restaurant in Sultanahmet. Fuego opened in early 2012 and is fast becoming one of the most reputable restaurants in the tourism precinct. The outstanding service by owner-operators Can, Ali, Mehmet and Salih has earned the restaurant accolades. Try the Ali Nazik (minced beef on yogurt, eggplant and tomato mash), Hünkar Beğendi (tender lamb on a bed of smoked eggplant puree) or pilic dolma (stuffed chicken with a rich saffron sauce) and wash it down with a glass of Turkish wine from the comprehensive wine list. The restaurant is also open late, so pop in for a nightcap or two on your way back to your hotel. If you’re a coffee drinker, ask Can, a former barista, to brew you a cappuccino, latte, espresso, French coffee, Irish coffee, or even a herbal tea. Fuego welcomes guests for breakfast, lunch, and dinner all through the year and can accommodate people with food intolerances—just ask your waiter for recommendations.

    Situated at the base of the Park City slopes, this Autograph Collection Hotel (part of Marriott International) exudes an old-world ski-resort vibe, with a grand lobby featuring soaring ceilings, exposed-wood beams, and a stone fireplace surrounded by leather club chairs. The same rustic elegance extends to the 100 suites, each of which comes with its own fireplace, jetted tub, and private balcony or patio for enjoying a glass of wine alongside views of the Wasatch Mountains or 18-hole Park City Golf Course. Start the day with some laps at the outdoor heated pool or hit the slopes, then experience après-ski bliss in the 10,000-square-foot spa, which includes herbal-infused steam rooms, a dry cedar sauna, and recovery treatments like a therapeutic mineral soak and reflexology foot massage. There are also two on-site restaurants—Ruth’s Chris Steak House and the more casual Bandannas Bar & Grill, where you can pair quinoa burgers with local brews.

    Chef Jorge Vallejo spent time in the kitchen at Pujol before he and wife Alejandra Flores opened Quintonil, giving the former boss a run for his money. Their place, too, has become a fixture on best-restaurants lists, and is changing how people understand Mexican food. Taking its name from a weed that not long ago “decent” Mexicans wouldn’t dream of eating, Quintonil seeks to rescue and preserve discarded Mexican ingredients—particularly heirloom vegetable and herbal varieties—as part of the progressive and sustainable eating program it so elegantly advocates. Menus change seasonally, but a recent bill of fare included an avocado tartare with ant eggs and quelite-herb chips; chilacayote squash in mole with basil; and a rich chocolate-and-pinole-flour parfait. A tasting menu of Neronian proportions is also available.

    A private-island resort six minutes by boat off the coast of Antigua, Jumby Bay is one of the Caribbean’s top luxury, all-inclusive stays, and one of its most environmentally aware. A $28 million renovation in 2010, which included the addition of 28 suites and a first-ever spa, gave it all the digital-age essentials: 42-inch flat-screen TVs, iPod docking stations, Bose sound systems, free Wi-Fi. Yet its underlying spirit of environmental responsibility, highlighted by its hawksbill sea turtle preservation program and its banishment of wheeled vehicles except for golf carts and bicycles (every room comes with two bikes), continues to reign. Rosewood manages the resort, but it belongs to an association of island homeowners, some offering their properties for rent. So if, say, a 1,346-square-foot beach-view pool suite isn’t big enough, it is possible to do as celebs such as Hillary Swank, Jim Carey, and Paul McCartney have done and plop down up to $20,000 per night for a private villa or estate home. Couples can be perfectly content here, but it is especially attractive to families, who appreciate programs like the Rose Buds kids’ club.

    Union Market is the perfect D.C. destination if you’re searching for a weekend brunch spot, craving a snack on your way to visit the Capitol, or, you know, hungry. Oyster bar, bakery, taqueria, soda shop, sandwich shop, Korean taco grill—all of the food is here waiting for you. The 47,000-square-foot space is a throwback to the original Union Terminal Market, which opened in 1931 with more than 700 produce, meat, fish, and dairy vendors in airy indoor stalls. The market moved to a warehouse in the 1960s and closed in the 1980s before reopening in 2012. When you’re finished stuffing your face, you can shop for home goods and vintage finds at shops like Little Leaf and Salt & Sundry.

    Marrakesh’s spice shops know how to attract custom – colourful pyramids of spices and herbs are proudly displayed outside to entice the shopper. If you want to take home a taste of Morocco, these are the places to come to. Ask for ras el hanout (‘top of the shop’, a special blend of up to several dozen spices) that gives Moroccan cuisine its distinctive twist. Every shop and kitchen has its own particular blend, but cumin, cinnamon, allspice and cloves are all essential ingredients. Moroccan saffron is also an excellent buy. Many spice shops double up as apothecaries. Herbs, bark, mineral and infusions are all offered to cure anything from headaches and skin complaints to impotency – a truly spicy offering.

    Set in a gorgeous space with high ceilings and a relaxed colonial vibe, Cookhouse operates under the guidance of renowned chef Jean-Georges Vongerichten. The focus is on intense flavors and textures from vegetable juices, herbal vinaigrettes, and broths, with lots of fish and veggies on the extensive menu. Much of the wide-ranging Continental fare has an Asian twist, from the lightly fried calamari with a citrus dipping sauce to black-truffle-and-fontina-cheese pizza; roasted cod with spicy herbal coconut broth; and kale salad with lemon, mint, and green chili. Cookhouse occupies one of the huge old buildings of the former Tanglin Barracks, a base built in the 1860s for Singapore-based British soldiers that in the past decade has become an upscale dining hub.
