The flavor and Spanish Colonial charm of San Miguel de Allende come to life at Los Sombreros, where the atmosphere is as enchanting as the satiny mole Poblano sauce. If you travel with a friend, try the 10-course tasting menu. For $75, it serves two and includes dishes like pozole soup, fig and panela cheese salad, and chile relleno. Los Sombreros also has more than a dozen margaritas to choose from as well as specialty drinks like the Tijuana Donkey with tequila, ginger beer and fresh lime.

Patti and Giuseppe greet guests at the door with their dogs, welcoming them into the old farmhouse’s stone corridor. The limestone is pale but the walls and corners contain clever splashes of colorful art and furniture. The sunlight filters through the open-air corridor, leading to public spaces and guest rooms filled with surprising luxury and style. Donkey quarters or places to tie animals and store feed have been tranformed by the couple’s creative vision and hard work into a gorgeously designed living room and office. Every corridor is lined by plants and sculptures, every room incandescent with art; the hotel iss vibrant, colorful, worldly.

This kind of shop has almost everything, and it’s where I go when I need something and don’t know where to look for it. Also, the service is quite personalized. They sell things like beauty items, cleaning products for the house, strong detergents, and the famous WD-40. Also you can find nice gifts for men; if they still shave in the old way, you can get a very nice shaving brush. For women, the wonderful Portuguese soaps are wrapped in pretty packages. Some of the soaps are less expensive here, as this is not a tourist shop. Speaking of soaps, I like one called Mariposa, it comes in a very nice package—a good gift. Don’t be surprised if you see soaps from donkey milk or sulphur!

An oasis so idyllic, you might first think it’s a mirage, Hotel Fellah is an eight-acre retreat that fuses Moroccan culture with a hipster design aesthetic and a farm-to-table ethos. Locals, artists in residence, and guests mingle in the art center and library, and at the educational farm, kids groom donkeys, milk goats or collect eggs that are sold in neighboring villages. The small café opposite the swimming pool is run by Touco, a resident of nearby Tassoultante village. Don’t miss his tagine, or—even better—pick ingredients from the garden and ask him to show you how to make it.

An easy day trip from Amman, Shaumari Wildlife Reserve sits at the gateway to Jordan’s eastern deserts, where a pioneering conservation project is under way. The Arabian oryx, with its extraordinary, unicorn-like horns, was hunted to near extinction in the 20th century, but a captive breeding program overseen by the Royal Society for the Conservation of Nature is attempting to bring them back, reintroducing the dazzling white antelopes on Shaumari’s grounds. Visitors to the park can see several oryx, as well as other desert animals like ostriches, gazelles, and wild donkeys, during safari rides through the park. Tours take place in actual safari vehicles and are led by expert guides, who provide commentary on the park, its animals, and its ongoing conservation work.

The terraced organic garden that steps down the hillside in front of the Stanford Inn (above Mendocino Bay) provides some of the vegetables and herbs for the innovative cuisine in the hotel’s Ravens’ Restaurant. A stroll through the farm, with a visit to the donkeys and horses and llamas, helps work up an appetite for the vegetable-based whole-food meals that raise the bar on all-vegan fine dining. Innkeeper Jeff Stanford puts his ethics on the plate: Vegan for both health and philosophical reasons, Stanford collaborates with certified nutrition consultant Sid Hillman and the Ravens’ chefs to create dazzling meals, including one of the most innovative and tempting brunch menus I’ve ever encountered. The Inn, a large boutique hotel with panoramic ocean views, an organic farm, luxury amenities, and a bookstore and wine shop, gains additional points for being dog-friendly--even in a special dining area.

The natural fresh-water springs at Hierve el Agua were incredible (and cold!). The water is very high in calcium carbonate, and the minerals have formed these natural pools and crazy waterfall-like rock formations. The dusty road was somewhat harrowing, we had to make way for quite a few donkeys packing some serious loads. (And the formerly white rental car came out of the experience with a light yellow coating.) But the view over the valley of Oaxaca was unbelievable, and the meal we had at one of the stands was delicious. We were there in December; it was clear and warm and perfect.

At Sewall’s Point in the Harbour Bay Plaza on S.E. Ocean Blvd. (3720 ), you can dine in an authentic Italian restaurant on fresh, tasty fare. Renato’s has been in this location for 18 years pleasing their regular customers and many newcomers each year. This is a family owned restaurant that is run by Renato & Josephine Maira whose roots are Sicilian. Josephine makes sure to stop by each table and chat with the diners. She is friendly and cheerful. The staff is helpful and professional. The restaurant’s decor is all Italian from the authentic Sicilian hand painted donkey cart to the murals of different cities and towns in Italy. Family recipes from grandparents and parents are successfully used in Renato’s. The food is well prepared and tasty. Try the Antipasto Misto, Chicken Scarparello, or Linguine Vongole. Don’t forget expresso and desert. The wine list is excellent and extensive. There is outdoor patio seating as well as the indoor dining rooms. On Friday and Saturday evenings, Zoltan Racz entertains with international accordion music. Try Renato’s Italian Ristorante & Grill. You won’t be disappointed if you like authentic Italian food. Tayrona National Natural Park has become such a popular destination during typical vacation periods that authorities have had to limit admission. But an off-season visit offers singular luxuries like miles of all-but-solitary beaches, jungle trails, and a unique way to observe a variety of monkeys and tropical birds in every brilliant hue. Tayrona can be experienced as a day trip from Santa Marta or as a several-night stay at one of the park’s accommodations. From the main entrance at Cañaveral (El Zaíno), visitors can take a leisurely hike to the ocean while a donkey handles the luggage; horses are also available for those who prefer not to walk. This same park entrance also leads directly to high-roofed, native-wood cabins known as ecohabs, a slightly fancier option for staying in the park.
