Located on the island’s unassuming south coast, down a street that doesn’t even have a name (which isn’t uncommon in Barbados) sits a little beach bar called the Carib. Wander up to the wood deck and smile at the Bajan waitress pulling double-duty behind the Mt. Gay Rum-lined bar, as she waves her hand at you, the universal sign for “just sit anywhere.” Pull up a non-luxurious plastic chair and soon you’ll find a cold Banks in your hand (the local brew - about the color of a Bud Light but with much more flavor) and a plate of steaming Bajan food on its way. The Carib, which I eat at almost daily during my time in Barbados (I’ve been to the island seven times), has the best flying fish on the island. Order yours platter or sandwich style, with sides of cou cou (a local dish about the consistency of mashed potatoes) and salad. Be sure and start your meal with a basket of pipping hot fish cakes - also the best on the island. Luckily when you’re done with lunch and ready for a nap, the beach is a few steps away. Grab a chair and an umbrella for $10 U.S. for the entire day. You probably have the beach to yourself, until school gets out when the local youth will stop by for a dip in the ocean and maybe a game of cricket.

If you are in Mount Laurel between May and December, it is worth your while to check out the produce at Cheyenne’s Road Market. This rustic locale on Church Street is open every day except Wednesdays, but visitors should call ahead (856 983-6361) to make sure. You will be rewarded with the best of what’s in season, be it Jersey Tomatoes, Bosc Pears, giant pumpkins, or their own brand of honey. During the month of December, the market is open every day until 8pm before going into hibernation mode after Christmas.

Little has changed since its opening in 1922; from the shiny soda fountains to the old-time juke box against the wall, much of the the interior has remained unaltered for nearly a century. I was a glacier virgin. I had never seen one in person before, much less set foot on one. That all changed though as the helicopter lifted off and took off towards the incredible Franz Josef Glacier on New Zealand’s South Island. Almost as soon as the Glacier Helicopters flight lifted off, Mt. Cook popped into view, a looming presence throughout the area. We skirted over the lush rainforest and before I knew it, we were on top of the glacier. It’s amazing really; the glacier looks exactly like a glacier should look. It was a vast, frozen river leading from the tops of the mountains to the valley below. We landed at the top for a little exploration and impromptu snowball fights before taking off again to zoom past the massive crevices of the ice mountain. The ride back included even more impressive views of the glacier and the flat plains below leading to the Tasman Sea. It really is strange to see the glacier adjacent to the mild valley below. There’s something surreal about it all and that makes it one of the best adventure activities in New Zealand. The Jungfrau is one of the main summits of the Bernese Alps, located between the southern canton of Bern and the northern canton of Valais, halfway between Interlaken and Fiesch. It’s the perfect place for the quintessential Swiss experience. The cows are actually moving their heads just to hear the bells ring. So many people take pictures of them, they must feel like movie stars. :)

A mineral lick for wild game and a swimming place for the Nez Perce and other Native American tribes, the Lolo Hot Springs, “discovered” by Lewis and Clark in 1805, became a health resort for dudes and wealthy Westerners in the late 1880s. Today the Lolo National Forest in west central Montana, 32 miles southwest of Missoula, is a paradise for camping, hiking, fishing, and in winter, cross-country skiing and snowmobiling. We were only in Geneva for a day, but we were told to take a unique photo with this fountain by our friends and this is what we came up with! While Geneva was overwhelmingly expensive for 2 college students backpacking, it was worth the trip to see the lake. It was a sunny day with the perfect blue sky to white cloud ratio. We picnic’d on the rocks with wine, cheese, bread, and meat with a long lost friend. I would love to go back and do some real exploring one day.
