Must Try: CATFISH BEIGNETS: Catfish dusted with cornmeal and fried crisp, served with jalapeño tartar sauce. CHORIZO-STUFFED PORK TENDERLOIN: Chorizo, Jack cheese and poblano peppers stuffed into pork tenderloin, atop a bed of sweet potato sauté, served with roasted poblano cream sauce.
