This celebrated restaurant in the city center offers an unexpected twist: The cuisine at Wanchako is Peruvian, but with a Japanese influence. (First-time visitors might not realize that Brazil has many ethnic Japanese.) Diners sit on natural-fiber chairs around glossy black-granite tables. Start with a round of pisco sours, of course, and some fresh ceviche, which appears on the menu in many styles.
