When London chef Andrew Dargue opened his upscale vegetarian restaurant with his wife, Donna Conroy, in 2008, they set some ground rules: no gratuitous piles of lentils, no pasta bakes, no meat substitutes, and absolutely no yoga brochures in the window. The result: an experimental menu in a minimalist, banquette-lined dining room, located just off Chancery Lane in central London. Signature dishes include Ribblesdale cheese pudding with smoked potato croquette and pineapple chutney (a riff on gammon steak and pineapple, a classic British pub dish) and salted and ash-baked celeriac and kale.
