Valencia’s most famous cocktail, Agua de Valencia was invented in the 1950s (confusingly, at a bar called Cafe Madrid
). Something like a souped-up mimosa, it’s a blend of orange juice, champagne, gin, and vodka, best enjoyed by the pitcher while sitting at a comfortable sidewalk table and people-watching. If you can’t make it to Spain
, it’s easy enough to whip up a batch at home; serve with salchichon, Manchego cheese, and olives for an instant tapas party.
