Tres Cerveza's: The World's First Onsite Hotel Brewery“Tres Cerveza’s” which translates into “three beers” in Spanish, is the world’s first hotel brewery and sports bar.
On warm days (and those are many in Cancun), this Mayan-architecture inspired bar lined with locally-sourced parota wood, which is a deep brown color, is packed to the rafters with those taking in a sports game and icing their thirst with some truly world-class beer.
My wooden sampler, a triptych that included Witbier (citrusy, light, refreshing) with notes of orange peel and coriander, makes me realize what a fine summer beer it is. Juan Jose Garcia, my well-informed brewmaster, says that they use water without minerals to brew this beer, so that the taste is pure and clean.
The second beer, much like a Hoegaarden, is a good way to spend your afternoon, since it is almost universally-loved. Tres Cerveza’s sources its barley locally, and the hops are from the United States as well as from Mexico.
The rotation of the beers will vary according to season, but also expect to find darker beers like stouts, with notes of black pepper and vanilla –almost dessert like.
The bar also has an impressive array of salsas for your chips, including those made with Cajun spices and honey, a fresh mango and spicy habanero version, and even an Asian one with crispy tempura and wasabi.
Try the ground chilli pepper and lime grilled corn with your Witbier, a pairing that will get you closer to saasil, the Mayan word for “heaven.”
