Tipo 00Lygon Street (also known as Melbourne’s Little Italy) is fine for your standard spaghetti puttanesca, but if you’re seeking a truly perfetto plate of pasta, you can’t beat this CBD upstart. An intimate, slightly industrial take on a traditional trattoria, Tipo 00 is dominated by a large, open kitchen, where chef-owners Andreas Papadakis and Alberto Fava create simple, ingredient-driven pastas using classic techniques. The menu changes seasonally, but a few star dishes like the squid-ink tagliolini and gnocchi with braised duck are almost always available—and not to be missed. Just be sure to book well in advance, as tables are limited and highly coveted.
