The Westin Europa and Regina Hotel's, La Cuisina Restaurant, is another of Venice's premier cooking school experiences. Classes are led by Chef Alberto Fol and his team, and they usually are all about what's local and fresh from the fields and markets in the lagoon. It's a pretty laid back affair that usually begins with an aperitif and moves in to cooking demonstrations and class participation. Classes end with a three course meal served in La Cuisina restaurant.
Chef Fol is good about keeping lessons fresh and relevant to the seasons. Sometimes the classes are themed after what's happening in Venice; Carnival and Easter, for instance. He also celebrates the arrival of some the lagoons more famous ingredients, like artichokes and radicchio, and bases entire lessons around them.
