French influences turn up throughout The Islands of Tahiti, particularly in the refined flavors and elegant presentations of its cuisine. Set on a small motu off Rangiroa in the Tuamotu Atolls, Vin de Tahiti uses techniques adapted to Polynesian coral-based soil to grow, harvest, and produce three types of white wine (which they describe as “dry,” “coral,” and “soft”), as well as a rose.
