Australia’s celebrity chef, Curtis Stone, says the Olsen Hotel in Melbourne feels like a home away from home. “My schedule is super busy when I'm back in Melbourne so I love to put my feet up after a long workday in a place that feels comfortable,” says Stone. “The hotel’s location on Chapel Street also makes it a great launching pad for going out to nearby restaurants and bars.” The hotel also rents Dutch Lekker bicycles for those who prefer to explore the area on two wheels. Stone says the Olsen has a ton of character as it boasts a great collection of artwork by revered Australian landscape artist, Dr. John Olsen. Each of the 229 suites is decorated with prints of his work. The hotel’s restaurant, Spoonbill, describes its menu as "paddock-to-plate" and is influenced by Dr. Olsen’s travels through the Mediterranean. One of the artist’s favorite dishes, paella, is a menu staple.
