Spannocchia, an organic working farm, is one of my favorite places in Tuscany. Vacation rentals in rustic Tuscan farmhouses or in the main Castello are available on a weekly basis. We stayed in Palazze Torre which we were convinced was haunted – who left the water on?? Regardless, staying at Spannocchia is a magical journey into rural Italian farm life. You can eat dinner at communal tables with interns, staff and other visitors to learn more about the workings of the farm. The interns help prepare the food and it is DELICIOUS! Working with the local community Spannocchia was instrumental in bringing the Cinta Senese pig back from extinction. Sign up for a pig tour and salumi tasting – very informative, tasty and fun. The tour includes a walk to see the pigs in their habitat, a glimpse into the seasoning/curing room, and finishes with a guided tasting of salumi products such as salame, prosciutto, capocollo and lardo. YUM.
