A calçotada is a Catalan tradition of roasting calçots, which are similar to leeks, over fire until they are charred on the outside and practically melted on the inside. Served with romesco to dip, they are definitely my favorite vegetable. I made them on my roof the other day for my roommate and some friends and they couldn't believe how sweet they got after all that roasting.
