There are few finer ways to spend the evening than under the intricately carved wooden latticework on the rooftop of the Emerson Spice hotel. This 19th-century town house, once home to the last Swahili ruler of Zanzibar, is located in Stone Town's casbah. The Tea House serves a nightly five-course meal made from fresh local ingredients. Diners are encouraged to arrive at 6 p.m. to enjoy cocktails during the best of the sunset, and to hear the calls to prayer echoing over the rooftops from the mosques all the way to the ocean.
