Tasty cuisine at The Tannery
The Tannery has become one of the southeast's destination restaurants since chef Paul Flynn opened it more than 20 years ago in the coastal town of Dungarvan, County Waterford. Local produce with a twist sees Paul serve up dishes like Helvick crab crème brûlée with spiced pickled cucumber and olive oil toast or St Tola goat’s curd with beetroot, peach, lemon and celery for starters, while tasty offerings for mains might include hake steak with honey and saffron sauce, summer greens and confit squid or slow cooked beef rib with confit tomato, aubergine and dukkha. Around the corner from the restaurant is the cosy Tannery Townouse, should you wish to stay over, and a cookery school if the food inspires you to upskill in the kitchen.
